Having visited Bulgaria at least once, you will probably bring Shopska salad home in your memoirs. And not only in memoirs. The vast majority of citizens carefully scribble the Shopska salad recipe onto the cover of their favorite cookbook with a chemical pencil. Fortunately, everything you need to prepare an excellent Bulgarian pepper salad is available.

The first time I tried Bulgarian salad was in the summer of 1997. We arrived almost at night. The hostess settled us, took pity on the poor and gave us 50 thousand leva for small expenses (this was theirs even before the denomination). In the afternoon we went to have breakfast at the charming restaurant “Gerana” on the square.

Not knowing a word of the local language, we chatted very quickly in Ukrainian. A completely unfamiliar kitchen. They began the interrogation with the passion of the waitress. What to eat for breakfast? Maria froze slightly and, perplexed, gave out - Shopska salad, of course!

This moment became iconic!

Over so many years we have met many very worthy and fascinating people there. What is it worth just colliding nose to nose with Demis Roussos?

The locals told a very fascinating story about Demis Roussos. He settled in the “trump” hotel “Laguna” - 4****. Swimming pool, restaurant, maid, breakfast in the room. Well, everything is as it should be. In the morning I ordered breakfast. And he added - local food at your discretion.

The great Greek tried the Bulgarian appetizer and... the next morning the order was: “Shopska salad. Three"

The Shopi are a people with South Slavic roots, living compactly in Bulgaria and Macedonia. They are super-rational and there are legends and funny stories about them.

So what is Shopska salad? Well, firstly, this is a salad made from new vegetables. Secondly, this is almost always a snack. Literally and figuratively. For breakfast, salad is just food, because drinking and snacking in the morning is not customary there. Before lunch or dinner, you need to drink a glass of rakia and eat a salad to warm up your appetite. Salad in Shop style, of course!

Every housewife, every cook has her own salad. But the base is always the same. You can combine anything, but tomato, cucumber and cheese are sacred!

Ingredients for Shopska salad

  • Cheese cheese 150 g
  • Ripe tomatoes 3-4 pcs.
  • Cucumbers 2-3 pcs
  • Greenish pepper 1 piece
  • Parsley 3-4 sprigs
  • Dark olives 2 pcs
  • Olive oil to taste

How to prepare Shopska salad

  1. Next, arm yourself with a sharp knife, a cutting board and chop everything approximately identically - into 2x2 cm cubes. Either more or less and exactly as you like.

Only tomatoes, cucumbers, peppers and cheese

Cut tomatoes into cubes

Cucumbers – dice and place on top of tomatoes

Peel the pepper and cut into small slices. Place on top of cucumbers

Finely chop the parsley and sprinkle over the vegetables

Grate the cheese on a medium grater and sprinkle on the salad to create a snow-white top.

  • Maria: Greek and Shopska salad are different. No olives are added to Shopska. In Shopsko there are tomatoes, bell peppers and cucumbers. All! Plus Bulgarian cheese. This is not feta at all. It is beautiful: compacted and with a pronounced taste.. It can be grated or broken into pieces + vegetable oil.

Shopska salad

Shopska salad rightfully remains the most popular dish of Mediterranean cuisine; it is easy to repeat at home. The most basic version should include popular Bulgarian products: peppers, tomatoes, cucumber, onions and feta cheese. And for dressing - usually the best olive oil.

Products
Tomatoes – 180 g
Bell pepper (reddish) – 70 g
Cucumbers – 100 g
Cheese cheese (lightly salted) – 60 g
Onion (reddish, sweet) – 30 g
Parsley – 20 g
Thyme – 10 g
Basil – 5 g
Olives (whole) – 40 g
Olive oil (Virgin) – 70 ml
Lemon juice – 35 ml
Peppercorns (assorted) – 5 pcs.
Salt (sea) – 5 g

For the famous Balkan salad, the freshest ingredients are used.

How to prepare Shopska salad:

Let's start with processing the vegetables and herbs: wash them and dry them in a colander.

Cut cucumbers and tomatoes into triangles. Chop the bell pepper into strips, first removing the seeds and stem (you can also use pickled or baked peppers).

Cut the reddish onion thinly into half rings.

Chop the greens finely, all at once: parsley, basil, thyme. It is better to cut off the hard trunks; they will not be useful.

In a separate bowl, use a mortar to crush various peppercorns (dark, snow-white, aromatic, reddish), coarsely. Pour in olive oil, lemon juice - mix, add salt and mix again.

Marinate the chopped herbs and onions in the resulting dressing for several minutes.

Place chopped vegetables in a salad bowl.

Add olives (can be replaced with olives) completely, with or without pits - as desired.

Crumble the cheese with your hands.

Add the dressing with herbs and onions, mix gently, lifting the vegetables from below.
Shopska salad is ready!

We will add spices and olive oil to the Shopska salad so that anyone can season the appetizer to their own taste.

Shopska salad

“Shopski” comes from the name of the cheese (“Shopski cheese”, or siren ) which plays a role in composing the taste of this dish.

Shopska salad is a classic. Like “Greek” and “Caesar,” the salad crossed the borders of its country of origin (Bulgaria) and became first an Eastern European and then a world celebrity. You can now try Shopska salad in almost all restaurants.

The name “shopski” comes from the name of the cheese (“shopski cheese”, or siren ), which plays a role in composing the taste of the dish. Nowadays, Feta or Bulgarian cheese, which is quite salty and expressive, is used more often.

Shopska salad has two individualities: firstly, the cheese practically “falls asleep” on the mound with which the salad is laid out, and it gives a solemn, “snowy”, “New Year’s” look. Secondly, Shopska salad certainly includes sweet peppers in various forms: baked, pickled or fresh.

Ingredients and preparation of Shopska salad

What you will need:
3-4 tomatoes, 6 sweet bell peppers, 1 small cucumber, 6-7 olives, 150 g feta cheese, 1 onion, a bunch of parsley, vegetable oil, vinegar or lemon juice, freshly ground pepper, salt.

Take a salad bowl and fill it one at a time.

1 . BELL PEPPER. First, we bake it on the stove directly in the skin (this is easy if you have an electric stove or a grid “with holes”)) or in the oven on the grill (be sure to place a container so as not to dirty the oven).
Now we remove this skin, peel it, and chop it. I don’t understand how to explain it, but in this salad, baked peppers taste better than fresh ones.

2. TOMATOES AND CUCUMBERS. We peel the tomatoes too: to do this, we scald them, then the skin will be easy to remove. Cut the cucumbers. We turn tomatoes and cucumbers into small cubes.

3. BOW . Chop into small narrow strips and add salt. The onion should not be felt very much in the salad, but to achieve a slight emphasis we remember it with our hands.

4. GREENS . Parsley is used in Shopska salad. Finely chop and place in a salad bowl.

5. OLIVES . What exactly you include in the recipe - olives or black olives - is not important. In a traditional Shopska salad, these “berries” are not cut; they are used to serve the entire taste and salad, including as a final “cherry.”

6. REFUELING . Making the salad dressing: mix 4-5 tbsp. l. olive oil, 1 tbsp. l. apple or wine vinegar, salt and pepper to taste. I prefer virgin olive (cold pressed), it goes well here. If we don’t want any aftertaste, we use refined.

7. SHOPSKAYA “HILL” . We check for salt again, but remember that there is cheese ahead. Mix and place in a nice mound in a salad bowl. Or immediately form a portioned serving into plates.

7. BRYNZA . All that remains is to crumble or grate the cheese and wish everyone a bon appetit.

8. OLIVE . An extremely catchy touch. It is not so much for taste, but for mood and good metabolism. We place it on top of the salad in Shop style.
