Fragrant, fluffy, tender and very tasty kefir pancakes without yeast. You will literally love and need this simple recipe, because it is from the “even a beginner can do it” group. Banana pancakes for breakfast - simple, quick and delicious? Easier than usual!

To make banana pancakes, you can use both premium and first grade wheat flour. Instead of kefir, other fermented milk products are also suitable - natural drinking yogurt, sour milk, fermented baked milk (with it it comes out especially fragrant). Bananas are perfect for pancakes - ripe, sweet, aromatic, often with black skin.

Ingredients:

Making a dish step by step:

To make banana pancakes, we need the following ingredients: wheat flour, drink, bananas, chicken eggs, refined vegetable oil (I use sunflower oil), sugar, baking soda and salt. All products must be at room temperature, and the drink must be a little warm. I take everything I need out of the refrigerator in the evening and leave it on the kitchen table until the morning.

In a separate bowl, combine 300 grams of wheat flour with half a teaspoon of baking soda and a pinch of salt.

Mix everything thoroughly so that the baking soda and salt are moderately distributed throughout the flour.

Place peeled bananas in a bowl for making dough. 200 grams is the weight of bananas without peel. I have 3 small fruits, but maybe you will have one huge one.

Using a fork, mash the banana pulp, not into a puree, but so that pieces remain. By the way, only a fork is useful for kneading the dough.

Add 2 chicken eggs and 1.5 tablespoons (heaped spoon) of sugar. By the way, if bananas are very sweet, you don’t need to add sugar.

Mix and pour 250 ml of kefir of any fat content (I took 2%). Mix again.

Sift the flour mixture into a bowl through a sieve.

Mix quickly so that there are no flour lumps left, and immediately begin making banana pancakes. When mixed, this dough comes out quite thick, viscous and does not spill. If yours is runny, add more flour.

We take a wide frying pan (mine is 28 cm in diameter), pour some oil into it, heat it and use a tablespoon to spread the dough. Turn the heat to below medium and cook the pancakes covered for almost a few minutes.

As soon as the banana pancakes increase in volume and become covered with holes, you can twist them.

We bring the second side to readiness and an appetizing ruddy color, also under the lid. Just don’t rush and don’t turn up the heat, otherwise the crust will quickly brown and the inside of the pancakes won’t cook well. In other words, at first they will be puffy, and then they will immediately deflate and become flat.

Remove the finished banana pancakes from the frying pan, add more oil and add another portion of dough. We prepare all the pancakes this way - I get exactly 20 pieces.

Serve either warm or completely cooled – it’s delicious either way. For me, bananas go perfectly with strawberries, so I served the pancakes with berry sauce. Elenochka, thank you so much for this wonderful order. Cook for your health and bon appetit, friends!
