  1. If the inside is a bit dry, add 2 tbsp. l. sour cream or 33% cream and grated cheese. Before serving, place the pancakes in the oven for 10 minutes. The dish will be softer, juicier, fattier. This option is also called pancakes with julienne.
  2. Add a little mascarpone cheese directly to the finished filling. I assure you, you will be delighted with the result!
  3. Stuffed pancakes can be served without frying, but it is better to fry them in butter or bake them in the oven for 10 minutes.
  4. Designate separate cutting boards for fish, meats and vegetables. This is necessary so that bacteria from raw meat does not get on the vegetables.

  • Milk - 1 l
  • Chicken egg (You can do it without eggs, but with them the pancakes are the most elastic) - 1 pc.
  • Wheat flour / Flour - 1.5 cups.
  • Yeast (I use SAF-moment fast-acting) - 11 g
  • Vegetable oil (For frying and add a couple of spoons to the dough) - 0.5 cup.

  • Mushrooms (You can use fresh champignons or any frozen mushrooms) - 300 g

Let's prepare the products. For the inside, I used frozen mushrooms from ozari and chicken breast. If you take the freshest champignons, it’s quite easy to wash and cut them; if, like me, they’re frozen, just defrost them. The beauty of the recipe is that it doesn’t require a lot of effort and energy from us.

I'm used to starting from the inside. Cut the breast into fine cubes and heat the frying pan. When it heats up, send the meat to fry

When the chicken turns white, add finely chopped onion. When the onion is almost ready, add the mushrooms. Mine were previously boiled, so I add them almost at the very end. When we take the freshest champignons, we send them along with onions

Now let's take on the dough. My grandmother taught me how to create thin, rosy pancakes without lumps. Pour one and a half glasses of milk into a saucepan, heat it on the stove so that it is not very hot, but a little warmer than skin temperature. Add a couple of tablespoons of sugar, a teaspoon of salt, a packet of yeast and a couple of tablespoons of flour, wait a couple of minutes. The yeast will begin to work and bubble. Now add the rest of the flour, the dough should turn out like pancakes, you can take it with a spoon. You can place the frying pan on the stove; it must heat up perfectly so that the pancakes do not stick and brown moderately.

Now add milk little by little to the dough until it becomes watery and pancake-like. It is convenient to pour it into a frying pan with a ladle

Add grated cheese to the now slightly cooled filling and mix

Wrap the filling in a pancake envelope. Place the filling with a spoon on the third part below the middle of the pancake, fold it in from the bottom, then from the edges

In order for our pancakes to be fattier and more filling, you can fry them in oil on both sides, then they will have a wonderful crispy crust, matching the Maslenitsa mood!

From the listed ingredients I got 12 pancakes stuffed with mushrooms and still had some empty ones left. For them I prepared a sweet filling - chocolate spread and beloved bananas
