Marinated mussels at home

How to marinate mussels at home

To this day, mussels are perceived as a kind of delicacy, and despite the fact that there is already a complete abundance of them on our shelves, they still do not belong to the daily shopping list.
It’s another matter if you caught a couple of kilos of shells with a mask and snorkel. Then you can marinate the mussels right on the wild beach near the fire, the main thing is to have other ingredients with you. In stores, mussels can be found frozen or canned with oil.
The second option, naturally, is tempting - the product is already ready, it can be used in a salad or on a sandwich. But home-cooked marinated mussels are very different in taste from store-bought canned ones - heaven and earth! The marinade is moderately sour, fragrant, oily, and does not overpower at all, but on the contrary, emphasizes the taste of seafood. And if you really want to amaze your guests, cook mussels according to this recipe! By the way, you can marinate both squid and shrimp in this way. Marinated mussels in oil can be placed on the table when receiving guests, placing them in a small salad bowl or bowl. Or you can prepare a salad by adding the same mussels to the mix of new chopped vegetables. It will be very tasty!

Ingredients:

  • 300 g frozen mussels;
  • 2 tbsp. water;
  • 0.5 tbsp. vinegar 9%;
  • 0.5 tbsp. salt;
  • 1.5 tbsp. sweet sand;
  • 1 bay leaf;
  • 10 coriander peas;
  • 1 tbsp vegetable oil without aroma.

Recipe for marinated mussels at home

1. If we use freshly caught mussels, cook until all the shells open. They must be immersed in boiling water and cooked over high heat so that the shells open, but the meat does not have time to become hard due to the high protein content. Then we separate each shell and clean off the meat using the second half.

This is interesting! In the Land of the Rising Sun, mussels are considered an emblem of love. Due to the high temperature, the shells open up and resemble a heart in shape, while the 2 halves are fastened very firmly, which reminds them of a couple in love. And not a single wedding in the Land of the Rising Sun is complete without the usual mussel soup.

2. If you use peeled and frozen mussels, just defrost them at room temperature. We carefully clean it from aquatic plants, from the remains of the shell, and carefully rinse it under running water. The hardest part is the leg, which attaches the mollusk to the shell; it can also be removed if desired.

3. Then pour boiling water over the mussels so that they are completely covered with water and leave for 10 minutes. You will need about 1 cup of boiling water.

4. Drain all the liquid and begin preparing the marinade. Add sugar, salt and spices to the bottom of the saucepan.

5. Pour in water and put on fire. Bring the marinade to a boil.

6. After a minute, remove the pan from the heat, add vinegar and vegetable oil.

7. Select a vessel for marinating; it is most convenient to use an ordinary glass jar. But to prevent the glass from cracking due to a sudden temperature change, just in case, we wash it with warm water. Then we transfer the mussels into a jar and pour the hot marinade over them. Marinate until completely cool. Store the jar of cooled mussels in the refrigerator.

Marinated mussels at home are ready! This recipe will yield good marinated squid, large shrimp, and scallops. And for seafood lovers, I would like to offer another very tasty recipe for marinated shrimp. Marinated seafood makes very tasty vegetable salads, and the marinade will serve as a good salad dressing, as it contains vegetable oil, vinegar, salt, and spices. Bon appetit!

Recipe for “Marinated mussels “You’ll lick your fingers””:

Prepare the necessary ingredients.

Pour soy sauce, vinegar, and vegetable oil into the saucepan where we will prepare the marinade. Add aromatic pepper, bay leaf, salt, sugar.

Add mussels. They are already ready, I don’t defrost them, so they keep their shape better.

Add boiling water and put on fire.
Boil. Boil for less than a minute. You can divide the mussels into two parts and boil each part separately in one marinade. And later connect everything. Thus, 250 ml of marinade will be enough for a larger number of mussels.

Chop the greens and garlic. Greens can be used no matter what you like: basil, dill, parsley. There's only dill here.

Add lemon, garlic and herbs to the mussels marinade.
When the mussels have cooled, you can serve.

Cooking a seafood delicacy at home

This recipe will not only help you save money decently, but will also immerse you in a real extravaganza of tastes and smells. In the future, such a preparation is often used to make various salads. Seafood can be served as a cool appetizer, or small canapés can be prepared with mussels.

Ingredients needed

  • 300 g fresh frozen mussels
  • 3 cloves garlic
  • 0.5 chili pepper
  • 1 tsp. Sahara
  • 0.5 tsp each paprika and Italian herbs
  • a pinch of salt and dark ground pepper
  • 75 ml olive oil
  • 1 tbsp. l. lemon juice
  • 1 tbsp. l. rice vinegar
  • 1-2 sprigs of parsley

Manufacturing stages

Thaw the seafood ahead of time at room temperature. Then put the cleaned mussels in boiling water and boil them for 1-2 minutes. Place the blanched seafood in a sieve.

Peel the garlic cloves and cut into thin slices. Cut the chili pepper into thin rings. If you want the appetizer to be moderately spicy, remove the seeds from the chili pepper.

Place the chopped garlic and chili pepper in a frying pan with heated olive oil. Stirring, fry the ingredients until light golden brown.

Then add sugar, salt and ground spices to the garlic and chili. Heat the resulting mixture in a frying pan so that the spices release their own aroma.

Add rice vinegar, lemon juice and water to the marinade. Stirring, bring the marinade to a boil.

How to cook in a frying pan

Carefully transfer the blanched mussels into the bubbling marinade.

Reducing the heat on the stove to a minimum, boil the mussels in the fragrant marinade for 2 minutes. Add finely chopped parsley to the seafood and leave the mussels to cool to room temperature.

Place the finished snack in a glass bowl, cover with a lid and store in the refrigerator. After 3-4 hours, the mussels will be ready to eat.

Step-by-step recipe with photos

I was born in Crimea and have been partial to mussels since my youth. I remember how many mussels we collected on Tarkhankut, where we usually went with our family for a number of days. They made barbecue, soups, and fish soup from mussels, but we didn’t know marinated mussels in those days. I am sharing a delicious recipe for marinated mussels with soy sauce. This appetizer can be served as a separate dish, or mussels can be added as a special ingredient to salads.

The list of ingredients shows which products are needed. My mussels are frozen from the market, the ones that are sold in bags. There is no need to defrost them specifically, just wash them in cool water. Just look through them, they may be poorly cleaned.

Pour vegetable oil, vinegar and soy sauce into a small saucepan. And add all the bulk ingredients: bay leaf, salt, sugar and aromatic pepper. If you like it more spicy, then add reddish hot pepper.

Pour in a glass of hot water, bring to a boil and add the mussels. Cook the mussels for no more than 2 minutes. Advice, don’t make a lot of marinade; it’s better to boil several batches of mussels in one marinade.

Garlic and herbs need to be chopped. I didn’t have parsley, so I only cooked with dill.

Pour everything into the marinade for the mussels, add sliced lemon and wait for this yummy to cool down so you can put it in the refrigerator. Please do not eat all the mussels at once, then you will not understand or know what they should taste like after 12 hours in the marinade.

Believe me, in the morning you will say: let the whole world wait!

It’s easy to create this appetizer well in advance of the holidays - it’s delicious, everyone likes it. Bon appetit!
