Apricot pie with kefir is a simple and delicious pastry to contrast your homemade tea party. In the summer, such a pie can be prepared with the freshest apricots, and in the winter, we are helped out by the preparations that we lovingly prepared in the summer for our own loved ones. And now I opened the pantry to take another jar of preparations, and my gaze fell on a jar of apricots. I decided that I definitely needed to make a pie with them. No sooner said than done, an hour later we were already drinking tea and coffee with this delicious pie, and eating the remaining apricots from the jar with spoons.
To make apricot pie with kefir, we will prepare all the necessary products from the list. My apricots are canned in halves in syrup, so before making the pie they need to be placed in a sieve to drain off excess syrup.
Break the eggs into a bowl, shake a little and add sugar, then beat with a whisk.
Add salt and vegetable oil, stir the mixture again.
Pour soda into a drink at room temperature and stir well, then add this mixture to the egg-butter mixture and stir again.
Sift flour into the dough and add vanillin. Mix the dough with a spoon. It should turn out thick.
My mold is 22 cm in diameter, cover it with parchment and pour out the dough.
Place apricots on top in random order. On thick dough they will not sink and will remain on the surface.
Preheat the oven to 190 degrees and bake the apricot pie with kefir for 40-45 minutes. Then remove it from the mold and cool on a wire rack.
Sprinkle the cooled pie with sweet powder, cut into portions and serve.

- In a plate, mix the drink, eggs and sweet sand and beat with a broom until the sugar dissolves. Add ghee to the mixture and mix.
- Now add flour, sifting it through a sieve and stirring constantly, baking powder and vanillin. And just mix the whole mass with a mixer. The dough will turn out like thick sour cream.
- Wipe the mold with oil as needed. Divide the dough into two or three parts. We lay out the first part and put apricots in it, cover it with a second layer of dough and lay out the remaining apricots, pressing in a little.

I would like to share with you a recipe for baking a pie that turns out simply indescribable, very tender, fluffy and very tasty. Apricots have such a great smell and just a crazy taste. You can prepare this wonderful, delicious pie with apricots and kefir in the oven for any holiday. My detailed recipe with step-by-step photos will tell you how to create this.
Ingredients:
- apricots – 400 gr,
- flour - 3 cups,
- sugar - 1 glass,
- eggs - 2 pieces,
- vanillin,
- oil - 100 g,
- drink - 500 ml,
- salt,
- vinegar - 1 tbsp,
- soda – 1 tsp.

Step-by-step production:
Step 1. Drive 2 eggs into a deep bowl and start beating at low speed, add salt and increase the speed.
Step 2. Add a glass of sugar evenly. On average, whipping takes 10 minutes. It is better to beat until the sugar is completely dissolved.
Step 3. I used frozen apricots, so while I was whisking the egg mixture, I put the apricots in the microwave to defrost. Separate thawed apricots from seeds.
Step 4. Add the heated drink to the whipped mass. You can also use sour milk, yogurt, fermented baked milk, yogurt to warm it up.
Step 5. Heat the butter in the microwave or in a water bath and add to the dough. Mix everything well.
Step 6. Next, quench the soda with vinegar and carefully add it into the dough.
Due to slaking, our mass will be saturated with oxygen, the dough will fit and the pie will be fluffy. Instead of baking soda, you can use baking powder. You will need to add 1 teaspoon of baking powder to the dough.
