Now we have the usual, but very tasty second course. I will show and tell you how to cook delicious beef liver in a frying pan. But not just fried liver, but with juicy and fragrant apple slices accompanied by golden onion rings. You will like it!
I have to say that I prefer to cook with either beef or chicken liver. I don’t buy pork and I don’t like it. Calf liver is quite a delicacy, but it is very rare to get hold of it. Chicken liver is a very tender product that is perfect for this recipe. True, you need to work with it even faster in order to maintain its juiciness.
Probably young cooks feel insecure, and sometimes even afraid, to deal with liver. A lot of questions arise... How to quickly and easily remove the film from the liver? How and for how long to fry the liver in a frying pan so as not to dry it out? I will try to answer all these questions in as much detail as possible for you, friends, in this recipe. Making a dish step by step:
To make this ordinary, but very tasty second course, we will need the following ingredients: beef liver, sweet and sour apples, onions, refined vegetable oil (I took sunflower), wheat flour (highest or first grade), also salt and a little ground dark pepper
Let's deal with the apples first. Take a couple of medium-sized fruits: wash, dry and cut into small slices, removing the seed boxes. There is no need to remove the skin. It is important to choose dense and elastic fruits so that they retain their shape during heat treatment.
Pour part (say, a couple of tablespoons) of vegetable oil into a wide and deep frying pan and heat it. Place the apple slices into hot oil and cook them over the highest heat, first on one side, then on the other. We only need to lightly brown the apples so that at the same time they remain elastic and dense inside. We take out the apples and put them on a separate plate.
Meanwhile, we have already managed to peel the onions. Take 2-3 pieces and chop them into thin rings. You can use a shredder, or you can just use a knife.
Place the chopped onion in the still hot oil and fry it over medium heat until soft and appetizingly golden brown. Tip: If necessary, add a little more oil to the pan when frying. We transfer the finished fried onion to the apples, and simply wipe the frying pan with cardboard towels and pour in the remaining (about 60-70 ml) oil. Heat it over moderate heat while we work on the main ingredient.
Let's move on to beef liver (500 grams). First you need to remove the film: to do this, quickly pour boiling water over a piece of beef liver. The film will turn white and simply peel off. If you're lucky, buy a piece that actually doesn't have any film on it - then just cut it off when chopping the liver. Cut the beef liver into small portions about 1-1.5 cm wide.
Salt and pepper the liver. For this amount we need half a teaspoon of salt and a generous pinch of pepper. Stir until the seasonings coat the pieces moderately.
All that remains is to bread the liver slices in wheat flour - 2 tablespoons should be enough. Dip the liver in flour and shake off the excess so that it does not burn when frying.
Place the liver in a flour coat in hot vegetable oil and fry on one side until golden brown over high heat. To form a crust on the bottom, I fry the liver for about 2 minutes.
Then turn the pieces over and fry for about two more minutes. Why is there not enough time? If you overcook the liver in a frying pan. it comes out dry and hard. But we want juicy and tender, right?
Even if you have a large frying pan (mine is 28 cm across), I advise you to fry the beef liver in batches. In this case, the pieces will be covered with a golden brown crust on all sides, and will not be stewed if there is a lot of liver in the pan.
Without removing the frying pan from the stove, turn the heat to low and place apple slices and a rosy onion on top of the fried liver. Cover the pan with a lid and simmer for 5-7 minutes on low heat.
And later we immediately serve fried beef liver with apples and onions - it tastes best in the heat. A significant amount of oil remains on the bottom of the frying pan, so it is better to add the finished dish with a slotted spoon (a spoon with holes). Cook for your health and bon appetit, friends!

In my family, and almost everyone I know, this dish is incredibly popular: savory liver with apples and onions.
It cannot be compared in any way with all other methods of manufacturing this product: therefore, the result is always “unsurpassed”. Believe me, you have never tasted the most juicy, tender and fragrant liver. The taste cannot be expressed in words: the combination of fruit and offal gives an indescribable result. By the way, everything will take you about 20 minutes: a good idea for those who want to quickly get rid of household chores and relax after work. It can be served for dinner as a separate dish or with any side dish. I recommend!
Required ingredients:
- 500 g liver;
- three sweet and sour apples;
- three heads of onions;
- half a teaspoon of salt;
- half a teaspoon of sweet paprika;
- a third of a teaspoon of turmeric;
- hot seasoning - to taste;
- dark ground pepper - to taste;
- vegetable oil - for frying;
- Wheat flour.
Savory liver with apples and onions: how to cook
- To make it, you can take any kind of liver, but I have beef liver right now. Cut it into small slices, approximately 0.5 cm wide. Transfer to a cutting board and cover with cling film.
- Then beat the sides with a hammer and roll in flour.
- Cut the peeled onion heads into thin rings.
- We wash the apples, remove the core, do not peel them. Then we cut any fruit in half lengthwise, cut it into circles: approximately 2-3 mm wide.
- Pour vegetable oil into a frying pan and heat it well. Later, lay out the liver, fry on each side for 1 minute (no more).
- Don't forget to salt it on each side and add dark ground pepper to taste.
- Strain the remaining oil and fry the apple slices on it, on both sides, until soft. Try not to overdo it: the slices should keep their shape.
- Take the apples into a plate, and fry the onions in this oil until translucent. After that, salt it, pepper it, add reddish paprika, turmeric, hot spices (to your taste).
- Mix everything and continue to fry the onion over medium heat until tender.
- Place apples and liver on a suitable baking sheet and cover with onions. Place in an oven preheated to 180 degrees for 15 minutes.
- Advice. It is possible to do without an oven: combine everything in a frying pan and heat for 3-4 minutes.

Ingredients:
- Chicken liver – 300 g
- Onion (large) – 1 pc.
- Apple (not huge) – 2 pcs.
- Milk – 100 g
- Salt – 0.5 teaspoon
- Ground pepper – 1 pinch
- Vegetable oil - for frying
How to cook chicken liver with apples
1. To prevent the liver from becoming bitter, it must be soaked in milk for several hours in advance. Despite the fact that this technique is usually used for pork or beef, we recommend using it with chicken offal.
The taste of the finished liver with apples in a frying pan will be even better. Chicken can be replaced with turkey. It is also very warm and delicious.
2. Then we rinse the liver under running water and dry it. We cut out all the films, veins and excess fat. If you notice a yellow-green spot on a piece of liver, it must be cut out. This part will be very bitter in the finished dish and will spoil its taste. Cut into small pieces.
3. Peel the onions and rinse under running water. Then cut into narrow strips. We are not afraid to put a lot of onions, because with them the dish comes out very juicy.
4. Peel and core the apples. We also cut into thin slices.
5. First place the onion in a heated frying pan with vegetable oil. Fry it for 1-2 minutes over medium heat, stirring constantly.
6. Next, add pieces of liver, reduce heat and cook for 3 minutes until it turns white. Turn over to the other side and fry for another 2-3 minutes. Season with your favorite spices. This could be Provençal herbs, turmeric, paprika, or a mixture of peppers.
7. Now add the apples. Stirring constantly, fry over low heat for 3-5 minutes until the liver and apples are golden brown. We turn all the ingredients very carefully to maintain the shape of the slices, otherwise it will turn out to be porridge.
Advice. If you are preparing liver for adults, you can create a sauce for it. Add a tablespoon of balsamic vinegar, 2 tablespoons of soy sauce and a spoon of honey to the reddish wine. Stir and pour into the pan.
8. Then, cover with a lid and simmer for another 2 minutes until all ingredients are fully cooked. It's easy to check the degree of readiness. Cut a piece of liver. If there is no blood (the internal environment of the human and animal body) , it means it is ready. The color of the finished liver is light brown on top, and tender pink on the inside. It is important not to overcook the offal, otherwise it will be dry and hard.
Advice. The liver should be salted at the very end of production. If you create this right away, the pieces will release juice and become hard.
