Chicken and orange salad
This unique salad with chicken and orange is prepared quickly and easily, using affordable ingredients. The salad is seasoned with a special dressing and has a unique taste. Ladies will most likely appreciate the salad for its lightness and low-calorie content, so you can safely prepare it for get-togethers with girlfriends. But you can also offer it to men, why not? There's meat there too!
Baked chicken fillet is used for the salad. It must be prepared in advance - bake in foil in the oven and cool before cutting it. I used fillet from a whole baked chicken.
Ingredients
- Leaf lettuce (greenish and brown) – 1 bunch
- Feta cheese – 100 g
- Baked chicken fillet – 2 50 g
- Peeled walnuts – 30 g
- Purple onion (Mars variety) – 0.5 -1 pcs.
- Honey – 2 tbsp. spoons
- Mustard beans (not spicy) – 2 tbsp. spoons
- Salt - to taste
- Ground dark pepper - to taste
Manufacturing
Peel the orange, disassemble it into slices and remove the partitions and seeds from each slice. At the same time, save the juice flowing from the orange.
Wash the lettuce leaves well under running water, place in a colander and drain.
Cut the purple onion into thin half rings.
Cut chicken fillet and feta cheese into cubes.
Prepare salad dressing. Strain the orange juice (approximately 2 tablespoons), mix with honey and mustard. Test and season with salt and pepper to your own taste. I didn't add salt or pepper. If the orange juice is very sour, you can add more honey.
Tear lettuce leaves into a plate with your hands.
Place chopped onion, pieces of chicken and cheese on top of the salad.
Add orange slices and nuts. Drizzle dressing over salad.

The most common option
The first recipe for chicken salad with oranges is easy to follow. Only fillet and citrus - it does not contain any other ingredients that could be called harsh, just pleasant additions. A two-hundred-gram fillet is boiled and cut into cubes. A couple of oranges are peeled and cut in the same way. A small onion is crumbled into thin rings, scalded and strained. A handful of snow-white raisins are soaked in boiling water, and after swelling they are squeezed out. The third part of a glass of walnuts is calcined and chopped. All ingredients are mixed, then the salad is peppered, seasoned with mayonnaise.
With mushrooms
A very interesting recipe for chicken salad with oranges, enriched with mushrooms. Champignons are suitable either fresh or canned (but not pickled, in other words, without excess vinegar). They need to be finely chopped and fried with 2 chopped onions. Since we are planning a layered salad with orange and chicken, the mushrooms and onions are distributed over the dish in an even layer and coated with mayonnaise.
The second “floor” will be boiled chicken. By the way, if you leave it to cool directly in the broth, it will become more tender. The layer is again flavored with mayonnaise.
Three eggs (per 400 g of meat) are hard-boiled, divided into yolks and whites. The outer ones are rubbed, scattered over the chicken and treated with dressing.
The peeled orange is disassembled into slices, which should be cut into small triangles. This layer does not need priming.
The third part of a glass of nut kernels is crushed, distributed among the citrus fruits and smeared with the same mayonnaise. The top of the mound is decorated with grated yolk, and the salad is left overnight (that is, in the dark) in the refrigerator to soak.
Salad “Royally” – with cheese
We can offer another wonderful salad recipe: chicken with oranges is now complemented by a number of delicious ingredients.
Boiled chicken will need a third of a kilogram. It must either be cut into strips or disassembled into fibers. A peeled huge apple (or two medium ones) is cored and crumbled as well. A large orange is divided into slices; In the standard, it is also supposed to be cut into strips, but here it’s up to you - you don’t want to lose the juice of the fruit. Cut into strips: a large cucumber, 150 grams of high-quality ham. Three large hard cheeses. The products combined together are seasoned with the consistency of sour cream and mayonnaise (take in equal amounts). The finished mixed salad with cheese, orange and chicken is sprinkled with grated egg on top to create a layer without gaps. Cheese can also play a role in decorating a “royal” dish. The dish will soak for about an hour to 2 hours.
Salad with orange and chicken, cheese and tomatoes
The appetizer is prepared just before serving, or the “vulnerable” component (crackers) is added at the moment of setting the table. The construction of the salad, however, begins specifically with it: three garlic cloves are chopped or crushed and simmered in olive oil; As soon as the smell starts, cubes of 3 slices of snow-white loaf are poured into the frying pan. When an appetizing crust appears on them, the croutons are transferred to a colander to cool and drain the oil.
Half a kilo of fillet is boiled, cooled, chopped, distributed over the bottom of the container, salted and peppered - this is another version of a puff salad with orange and chicken. It is necessary to coat any layer with mayonnaise, not counting the top one. The second layer is tomato cubes, the third is grated cheese (the creator of the recipe recommends “Estonian”, but it is unlikely that other hard varieties will give a worse effect). The pyramid should be crowned with halves of orange slices sprinkled on top.
“Princely” salad with oranges and chicken
In fact, it has other names as well. For example, “Orange mood”. But most chefs prefer to call the salad with chicken, orange and Korean carrots “Princely”.
For it, it is suggested to take not the breast, but the leg, but this is obviously a matter of taste. The thigh is boiled, separated from the bones, cut, laid out on a dish and flavored with a little mayonnaise. Korean carrots are placed on top and are also lightly coated. You need approximately the same amount of this ingredient as chicken.
Next, add orange slices, cut into pieces. Unlike previous recipes, this layer also needs to be greased with mayonnaise. Next comes grated hard cheese - and another coating. But grated eggs sprinkled on top are no longer covered with mayonnaise. Although they can draw a narrow mesh for beauty. Olive rings and sprigs of greenery are used for decoration.
Noteworthy versions
The salad with chicken, orange and Korean carrots described just above can be given new flavor notes if the boiled meat is replaced with smoked or baked in the oven. They say that such options are even more piquant and tasty than a dish prepared according to a traditional recipe.
