    Kurnik can be created from virtually any dough. It can be rich or bland. Perhaps even puff pastry or shortbread – it depends on the taste of the housewife. Typically, two types of dough are used for production. From 1 they make pancakes with which they divide the filling. And from the other - a dome or a pie cap (which was previously called the “monomakh cap”).

    What are the must-have ingredients for this savory pie?

    Firstly, it's chicken. Secondly, a classic chicken pot must contain porridge (usually buckwheat) and an egg with fried onions. And then the housewives relied either on their imagination or on what they had at home.

    The inside would be mushrooms, berries, potatoes, sauerkraut, and other types of meat. A good chicken pot always has a lot of entrails!

    The chicken recipe has been passed down from generation to generation, which is why almost all recipes have discrepancies - in proportions or ingredients. If anyone has a recipe that they got from their grandmother, then share it in the comments!

    Production: Knead the dough and divide it into three parts. We will need 2 flat cakes - one for the base, the second (larger) to cover the entire chicken pot. We can also throw in some dough to decorate the chicken pot.

    Pancake dough: 1 egg, 350 ml milk, 5 tbsp. lie with a top of flour, salt and sugar.

    Production: Bake 6-8 pancakes. The more layers, the more pancakes you need to bake!

    For the entrails: 1 chicken (approximately 1.4-1.5 kg), 400 g of mushrooms (white mushrooms, champignons can be used), 1-2 medium onions, 200 g of boiled rice (or buckwheat, millet), herbs (parsley and dill), 2 hard-boiled eggs, salt and spices to taste.

    Manufacturing:

    – mix boiled rice with finely chopped and fried onions, chopped herbs (dill, parsley);

    – boiled chicken (finely chop, add a little broth, ground black pepper, bay leaf, salt);

    – mix fried mushrooms with chopped boiled eggs.

    Now we are collecting our chicken!

    Oiled parchment paper is placed on a frying pan or baking sheet, and a rolled out circle of dough is placed on it. Next we lay the insides in layers. Cover each layer with a pancake. The first layer is rice, then the chicken filling, the 3rd layer is mushrooms. Next, we alternate.

    When all the layers are assembled, place the outermost pancake, and then cover this entire system with thinly rolled dough in the form of a dome. We pinch the edges, firmly connecting the bottom cake to the top.

    If there is any dough left, then decorate the chicken pot with dough figures. Then brush the entire cake with beaten yolk.

    On top, in the middle of the already assembled pie, it is imperative to create a hole so that steam can escape.

    Preheat the oven to 200 degrees and bake the chicken for 20-30 minutes.

    Once the entire pie is covered with a golden brown crust, it’s done!

    You can serve chicken with sauce: grind flour with butter, dilute with hot broth, add cream. Steam the mixture until creamy. Remove from heat and season with yolks mashed with butter.

    The broth that remains after boiling the chicken is served separately, seasoned with all the necessary spices.

    Kurnik can also be made with potatoes:

    You will need: 100 grams of margarine, 200 grams of sour cream, 3 eggs, half a teaspoon of soda, 3 cups of flour, chicken fillet, potatoes and onions.

    Making: For a stiff dough, beat soft butter with an egg, add sour cream and flour. Roll out two layers of dough of different sizes.

    For the inside : mix diced potatoes, onions and finely chopped fillet, adding salt and pepper to taste.

    Place the filling on the larger layer, cover with the smallest layer and pinch the edges. Instead of a hole, create punctures over the entire surface with a fork. Brush the pie with egg and bake until done at 180°.

    • Sift the flour, pour into a container, add melted butter, mix with a dull table knife, then rub into butter and flour crumbs with your hands.
    • Combine the drink, egg, salt, sugar, soda, mix everything and pour into the flour crumbs.
    • Carefully mix the mixture with a knife and knead the dough with your hands.
    • The dough does not have to be very tight.
    • Wrap the dough in cling film and set aside for a while

    Preparing the filling:

    • Cut the meat into thin slices (it will be easier if it is frozen.
    • Peel the onion, cut into thin half rings
    • Peel the potatoes, cut into thin slices, cover with water for a while to prevent them from turning black.

    Making the pie:

    • Prepare a container with high sides for baking the pie.
    • Grease the bottom and sides of the container with vegetable oil using a brush, sprinkle the coated surface with breadcrumbs
    • Separate 2/3 of the dough and roll out a narrow layer according to the shape and size of the baking container
    • Place the layer in the mold, covering the bottom and sides
    • We lay the filling in layers, there should be several of them.
    • 1st layer potatoes, onion on top, 3rd layer meat.
    • Lightly salt and pepper the layers (don’t overdo it!), place several pieces on the meat, 5-7 grams each. butter.
    • We make the fourth, 5th, 6th layers in the same way as 1,2,3 and place a layer of potatoes and the remaining butter on top.
    • Roll out the rest of the dough into a narrow layer according to the size of the upper part of the container.

    • Close the pie, carefully pinch the edges, and make a hole in the middle to allow steam to escape.
    • Place in an oven preheated to 180-200°.

    • Egg – 1 pc.
    • Water – 100 ml.
    • Salt, spices to taste

    Manufacturing:

    First, let's prepare the ingredients.

    1. Cut the meat into small pieces.

    2. Also finely chop the potatoes.

    3. Chop the onion very finely.

    4. Place all ingredients in a deep cup. Salt and pepper. Mix everything and set aside.

    Prepare the dough.

    Puff pastry can be prepared independently and you can use store-bought dough. We sell beautiful dough. You can use it in any kind of baking, including when making chicken.

    5. The dough needs to be taken out of the refrigerator half an hour before making it so that it becomes elastic.

    6. Sprinkle the workspace with light flour. Divide the dough into two parts and roll out two layers, one larger, the other much smaller. According to the shape in which we will bake the pie.

    10. Pinch the edges.
