Homemade non-alcoholic mulled wine based on juice

Homemade non-alcoholic mulled wine based on juice

Ordinary mulled wine is prepared by adding spices and fruits to wine (usually reddish) that is heated but not brought to a boil. If drinking alcoholic beverages for any reason is not necessary, you can prepare non-alcoholic mulled wine according to one of the proposed recipes, replacing the wine with juice: grape, apple or cherry. The result is a fragrant, warming drink that is suitable even for children.

General tips. It is better to use the freshest homemade or canned juice, but if you don’t have your own supplies, store-bought juice will do. If you don’t like any of the spices or herbs, you don’t have to add it. “Signature”, in other words, forming the appropriate taste and smell, are cloves and cinnamon. Stores sell ready-made sets of spices for regular mulled wine, which are also suitable for non-alcoholic wine.

Never bring the juice to a boil (heat no higher than 70-75°C), otherwise the taste will be “cooked”. Sweeten the drink to taste with sugar or honey after preparing and pouring into cups or glasses, since not many people like sweet mulled wine. Reheating can be done, but it is not necessary because some of the smell disappears. Soak store-bought fruits and citrus fruits in warm water for 3-5 minutes in advance to remove the preservative that is used on the surface of the fruit to increase shelf life.

Non-alcoholic mulled wine or a warming drink

Mulled wine is a beautiful, fragrant drink that can warm us up on the chilliest autumn evening. But sometimes, due to various events, you have to give it up because of the alcohol it contains. For such cases, you can prepare a non-alcoholic cocktail so as not to deny yourself a spicy drink. How to brew such mulled wine at home and about other features of the drink in our material.

Just one mug of mulled wine will give you comfort and warmth. Spicy spices with a slight astringent sourness of fruit juice, heated to a good temperature, reveal a rich aroma and give a pleasant aftertaste. Despite the absence of alcohol, this drink perfectly dilates blood vessels and accelerates blood circulation (blood circulation throughout the body) , which allows you to warm up from the inside. This is why mulled wine is often sold at winter fairs. This is not only a tasty, but also a necessary drink. Ginger and the spices included in the cocktail strengthen the body's defenses. So this drink can be used as a preventative against colds in the cool season.

You need to be careful with fruit mulled wine. Although it does not contain alcohol, it may be unsafe for people suffering from diabetes. The calorie content of the drink due to the juice is very high - approximately 140 kcal with a sugar content of about 30 grams per glass! This calculation does not include the addition of honey. Therefore, for those who watch their diet, it is better to choose a recipe for a dietary soft drink with hibiscus. But these are not all the pitfalls of the fragrant cocktail. Because of the spices, it contains many different essential oils that can cause an allergic reaction. You should be careful if you are prone to allergies, including pregnant and lactating women.

Basic rules for making mulled wine

  • The central components that form the taste of the drink are: base (wine or juice), cloves and cinnamon. Others are added as desired.
  • It is better to use all spices in their whole form (not ground), so that the drink can simply be strained.
  • To enhance the sweetness, you can add honey or sugar. Check in advance whether all guests adore sweet mulled wine. If the views are divided, then honey or sugar can be placed in a mug for any guest before serving.
  • To prevent the taste of mulled wine from becoming “cooked,” do not increase the heating temperature above 75 degrees and do not reheat it. And in order for the spices to better reveal their own taste, they must be simmered separately in a small amount of water.
  • When wine is heated, alcohols begin to evaporate, which reduces the strength of the drink. To avoid this, always cover it with a lid.
  • For non-alcoholic mulled wine, any fruit or berry juice is suitable, for example, grape, apple, cherry, pomegranate or blackberry.
  • In hypermarkets in the grocery department you can find a ready-made mixture for mulled wine. It has a significant advantage - it contains various spices. If you rarely prepare such a drink, the mixture will cost less than buying other seasonings separately. But there is also a minus - you cannot “create” and create your own version of the drink with your favorite spices.

Traditional recipe

  • Fruit juice – 1000 ml;
  • Water – 200 ml;
  • Cloves – 4 buds;
  • Cinnamon – 1 stick;
  • Ginger root – 2 centimeters;
  • Star anise – 2 pcs.;
  • peel of 1 lemon;
  • Honey - to taste.

Pour water into the pan, then add all the spices. Grind the lemon peel and ginger. Send everything into the water with the seasonings. Bring to a boil over low heat and simmer briefly (about 10 minutes) so that the spices reveal their own smell and taste. Add honey, stir until completely dissolved, and then pour in the juice. Heat the entire mixture along with the juice to a temperature of about 70 degrees. Non-alcoholic mulled wine according to the traditional recipe is ready, and all you have to do is strain it through a strainer and pour into mugs.

Non-alcoholic mulled wine with apple and orange

  • Honey to taste.

Cut the orange in half and cut off several round slices according to the number of guests for decoration. Cut the remaining orange and apple into cubes, three ginger, add all the spices, add water and put on fire. Then you can go in 2 ways: either boil and leave to infuse for an hour, or simmer for about 10 minutes over low heat. When the seasonings reveal their own aroma, you can add juice. As soon as the first bubbles and steam start to appear, the mulled wine must be removed from the heat. The spicy drink is ready! Strain it or leave pieces of fruit as decoration.

How and with what to drink non-alcoholic mulled wine

Typically, mulled wine is a drink for slow gatherings with friends. You need to drink it in small sips, savoring the rich taste each time. You can use a thick tube. If you are serving a hot cocktail with pieces of fruit, then place 2 straws in a mug to equalize the pressure and make it easier to drink. The best dishes for serving mulled wine are thick glass mugs with a handle. This drink looks great in a tulip-shaped Irish glass with a short stem and handle.

The mugs are decorated with orange slices, into the zest of which you can stick a clove from the strained sediment. To decorate the edge of a glass with frost, dip the glass shallowly in water, and then dip it in sugar, and only later pour the drink.

Traditionally, mulled wine is served with sweets and baked goods. Bitter chocolate, gingerbread, apple strudel or nuts will be a good snack. Hard cheeses also perfectly match the special taste of the drink. If your cocktail is not very sweet with a pleasant tartness, then it can be served with the main courses. The spicy taste will go perfectly with game or steaks.

Naturally, non-alcoholic mulled wine tastes far from ordinary wine, which is based on wine. But as an independent drink, it is quite good: invigorating and at the same time relaxing, sweet and at the same time tart-spicy. Delight your guests by preparing mulled wine for a shared dinner!

Mulled wine time: how to brew a warming winter drink. 5 recipes for every taste!

How to make mulled wine: a traditional recipe

Traditional mulled wine is prepared on the basis of reddish wine - it is better to choose dry or semi-dry. For cooking you will need:

  • a bottle of wine;
  • 2 cinnamon sticks;
  • 4–5 clove buds;
  • 1 tbsp. l. sugar (if you like sweet drinks, you can add more);

Optional: ginger, star anise, zest.

To prepare mulled wine, you need to mix wine, spices and sugar in a saucepan and heat over medium heat to 70–80 degrees. Even if you don’t have a temperature indicator, this moment is easy to find by eye: steam starts coming out of the wine, and a little later the first bubbles appear. You should not bring the mixture to a boil, otherwise some of the alcohol may evaporate and the drink will not be as rich. Remove the pan from the heat, cover and let sit for at least 5 minutes. Before serving, mulled wine must be strained so that pieces of spices do not float in the drink.

How to create non-alcoholic mulled wine

Mulled wine does not necessarily have to be alcoholic - there are many options for those who do not like or do not drink alcoholic beverages at all. Typically, non-alcoholic mulled wine is prepared from various juices - apple, cherry and, of course, grape. The extreme option seems to me closer to the unique taste of mulled wine. To prepare it you will need:

  • 1 l. dark grape juice;
  • 1 cinnamon stick;
  • 3 clove buds;
  • 3 slices (circles) of fresh ginger;
  • 1 orange.

Optional: star anise, dark peppercorns, honey (add at the very end if you like it sweeter).

The preparation process is almost the same as in traditional mulled wine. Pour the juice into the pan, add spices and sliced orange. You can mash the orange a little so that it releases the juice. Remove the pan from the heat, without bringing it to a boil, and let it brew. Before serving, do not forget to strain the drink.

How to make mulled wine with orange

Orange makes the drink the juiciest and least strong, and also looks unsurpassed! To prepare orange mulled wine: you will need:

  • 1 bottle of reddish wine;
  • 2 oranges;
  • a couple of lemon slices;
  • 2 cinnamon sticks;
  • 7-8 clove buds;
  • 3 tbsp. l. honey

Optional: star anise, ginger, dark peppercorns.

To prepare orange mulled wine, you need to cut the orange into slices, put it in a pan and mash so that it releases the juice. At this step, I advise you to set aside a couple of orange slices to decorate the glasses. Add wine, spices and lemon slices to the pan with oranges, place the pan over medium heat and heat to 80 degrees. Let the consistency brew under the lid. When it has cooled slightly, add honey, strain the drink and serve!

How to make mulled tea

Mulled wine is not a drink for every day. For those who love its taste, there is a candidate: mulled wine-flavored tea. This drink contains neither wine nor juice, but thanks to the addition of spices, its taste is reminiscent of real mulled wine. Ingredients:

  • dark tea;
  • 1/2 orange;
  • 1/2 lemon;
  • cinnamon;
  • carnation;
  • honey.

Pour hot water over dark tea. Add a couple of slices of orange and lemon or the juice of half any fruit, as well as spices, to the teapot (or directly into the cup). Let it brew. Before use, add honey to taste.

For tea lovers, I also recommend the publication that I wrote in the beginning:

It seems to me that almost all of the recipes will be relevant in the winter :)

How to create mulled wine in 5 minutes

From time to time you want mulled wine, but there is absolutely no time to stand at the stove and conjure with spices. What should we create? In this case, I advise you to purchase a ready-made set of spices for mulled wine.

The preparation method is simple: pour the wine into a pan, add spices from the bag and heat to 80 degrees.:) The whole process will take no more than 5 minutes. Usually detailed {instructions} are indicated on the bag itself - I won’t duplicate it. The main thing is, don’t forget to strain the finished drink.

In the end, I would like to say that these recipes are not bad as a base, but do not be afraid to experiment and change them to your own taste. Try brewing mulled wine with snow-white wine instead of red wine, add tangerines instead of oranges, remove cinnamon if you don’t like it, and add vanilla if you want something sweeter. It may not be traditional mulled wine, but the main thing is that you will like it specifically.

I hope you will need my recipes. Thank you for your attention to my publication!
