Nettle soup with eggs and potatoes
- Nettle 200-300 g (the more, the tastier)
- 3 potatoes
- 5 eggs

We cut the nettles into small pieces or strips, as you prefer.
Scramble the eggs, but do not beat them. If desired, their number can be reduced.
Mix milk with water in a 1:1 ratio, i.e. Add the same amount of water to 300 ml of milk. We do this in a saucepan. Add salt to taste and maybe some dark ground pepper.
While we wait for the milky consistency to boil, cut the potatoes into small cubes. And as soon as the contents of the pan boil, pour it in.
Now you need to wait until the potatoes are cooked. When she has become soft, it is time to pour out the eggs.
We take our bowl with the eggs and pour them into the pan in a narrow stream.
This method will give us very noteworthy egg “threads”, beautiful and tasty.
At this step, the stove can already be turned off.
Next, chopped onions and nettles are added to the soup.
Make sure that the nettle is completely covered with milk. Cover the pan with a lid and let it brew for 20 minutes.

- Beef 500 g
- Potatoes 2-3 pcs.

- Water – 2 liters.
- Sorrel - a bunch.
- Nettle (young leaves) - the same amount as sorrel.
- Green onions - 3-4 feathers.
- Potatoes – 3-4 tubers.

- Water – 2.5-3 liters.
- Carrot.

- Potatoes – 5 pcs.
- Nettle, green onion and dill - a bunch each.
- Dark pepper – 2 peas.
- Bay leaf – 1 leaf.
- Salt - a teaspoon.
- Any spices and seasonings.
Two boiled eggs and sour cream for serving decoration.
Throw the washed meat into the water and cook until done. With all this, it is important to realize that chicken cooks very quickly, about 15 minutes, pork more - 20-25 minutes, beef about 40 minutes.
The foam formed during cooking of the meat broth must be skimmed off.
Once the meat is ready, throw the peeled and finely diced potatoes into the pan and continue cooking for fifteen minutes.
While the soup is cooking, fry the carrots and onions in a frying pan in oil (cut as you like, you can grate the carrots if desired).
We take the meat out onto a separate plate. Add the roast to the potatoes along with chopped nettles.
Add spices, bay leaf, peppercorns, salt, mix, cook for seven to ten minutes.

Regular and light nettle soup - recipe with eggs
- Sliced pork – 350 gr.
- Young nettle, only leaves – 300 gr.
- Potatoes - 5 tubers.
- Carrots – 2 pcs.
- Medium-sized onions - two.
- Green peas (both canned and fresh or frozen products are suitable) – 200-250 gr.
- Raw chicken eggs – 4 pcs.
- Vegetable oil – 3 tablespoons.
- Seasonings, parsley, salt - to your own taste.
Manufacturing process:
Peel one onion and cut into 4 parts.
Peel one carrot and cut into rings.
Place the vegetables in a saucepan, add salt, pour in about 1.5 liters of water, add in pieces for the previously washed meat, and cook for 25 minutes.
Once the pork is cooked, take it and the vegetables out. Let the meat cool, then it will need to be chopped as finely as possible and distributed in portions; the boiled vegetables should be thrown away, they will no longer be useful.
Cut the peeled potatoes, add them to the prepared broth and cook until done.
Chop the second onion and carrot and sauté in vegetable oil in a frying pan until soft. A couple of minutes before they are ready, add the peas (if you are using canned ones, you should drain all the liquid from them; if the peas were frozen, you need to defrost them beforehand; you don’t need to do anything with the freshest product), stir.
Scald the nettles with boiling water, then wash and chop not very coarsely.
Once the potatoes are cooked, add sautéing, nettles and spices to the soup, stir, continue cooking, covered, over low heat for 2-3 minutes.
Beat the eggs until foamy, add them into the pan in a narrow stream, stirring the dish with a spoon, cover with a lid, boil for another 2 minutes and then remove from the stove.
The finished nettle soup should sit for a little while to gain flavor, then add parsley into it and pour the dish into portions, into bowls in which you already have cooked meat.
You can serve nettle soup with or without dressing. In this case, unsweetened natural yogurt, mayonnaise, or sour cream can be used as a dressing. For decoration, you can use boiled eggs or olives.
Rich, tasty and satisfying soup with stewed meat and nettles
For nettle soup we take:
- A can of chopped pork stew (look at the meat content at least 50%).
- A large bunch of young nettles.
- Potatoes 5-6 tubers (it’s very tasty to take young small vegetables).
- One carrot and one onion each.
- It doesn’t matter what kind of greens, little salt, you can add your favorite spices.
- Vegetable oil – 2 tablespoons.
Recipe for making nettle soup with stewed meat step by step:
Rinse the cauldron (you can use an ordinary pan, but in a cauldron it comes out most beautifully and deliciously).
Wash all vegetables, peel and cut.
Pour boiling water over the leaves, then drain the water, cut the product and add a little salt on top.
Heat the sunflower oil in a cauldron, add carrots, after a few minutes onions and then potatoes, add a little salt and pepper, fry for a couple of minutes.
Add water to the existing ingredients and cook until the potatoes are cooked.
Add nettles, seasonings, and stewed meat.
On a note! Put the whole jar of stew, adding both the meat itself and the fat in the container.
Boil the nettle soup for another 10 minutes, then let it sit for a little while without cooking under the lid and you can pour it into tureens. The dish is ready!

- Heat vegetable oil in a kettle, add vegetables and simmer until soft.
- Later the stew is added, the water with nettles is poured out and potato cubes are added.
- The dish is salted, peppered and boiled until the potatoes are soft.

While the nettle is still young, you need to have time to prepare the desired soup from it with meat and eggs.
Ingredients: nettle – 300 g, potatoes – 6 pcs., carrots – 2 pcs., onions – 2 pcs., meat (beef or pork) – 300 g, green peas – 250 g, eggs – 4 pcs., vegetable oil – 3 tbsp. l., seasonings - salt, pepper to taste.
Cooking: wash the meat, cut into portions and let it boil. When the foam appears, remove it with a slotted spoon and cook over low heat until the meat begins to separate from the bone.
We clean one onion and cut it into 4 parts, without cutting all the way to the tail, so that the head stays intact. This makes it most convenient to remove it from the broth. We also cut one carrot into small pieces and add it to our meat along with the onion.
While the broth is cooking, prepare the greens. To cut nettles, you should first scald them with enough boiling water and wash them under cool water. When the excess moisture has drained, you can quietly grab the leaves with your hands - they no longer pose any threat to the skin. Finely chop the nettle and set it aside - add it to the soup last in order to preserve all its beneficial characteristics.
Peel the potatoes, wash them and cut them into small pieces. As the meat begins to fall away from the bone, we remove the onions and carrots with a slotted spoon - we will no longer need them. Separate the meat from the bone and cut into portions. Add potatoes and meat to the broth and place on low heat.
To fry, finely chop the second onion, grate the carrots on a large grater and sauté in a frying pan with the addition of vegetable oil over medium heat. When the vegetables become soft, turn them off, and 15 minutes before the end of cooking, add them to the fragrant, greenish nettle soup. Place cooked nettles, canned or frozen peas into the broth, salt and pepper to taste.
Add raw chicken eggs to the prepared nettle soup. Beforehand, beat them well with a whisk, and just before removing the pan from the stove, introduce them into the broth in a narrow stream, stirring constantly. Turn off the soup, let it brew for 5-10 minutes and serve, topped with sour cream. You can also boil the eggs separately and place half an egg on each plate when serving.
