I haven’t posted soups for a long time - it’s a mess. In the summer, when you want something light and don’t want to stand at the stove, soup with meatballs is what you need. It is prepared very quickly and simply: after all, you don’t need to cook a heavy, rich broth, and a multicooker simplifies the task even more.

Well, I'm going back to my own soup. Let's cook.
Meatball soup in a slow cooker
- Minced meat - 250 gr.
- Potatoes - 3 pcs.
- Carrots - 1 pc.
- Onion - 1 small piece.
- Butter - 20-30 gr.
- Vermicelli/noodles - a handful.
- Boiling water - 1.5 l.
- Salt - 1 incomplete tbsp. l.
- Pepper - to taste.
- Paprika - 1 tbsp. l.
- Dried basil - to taste.
- Garlic - 2 cloves.
Let's take minced meat. I have mixed pork + beef, quite fatty. I add salt, pepper and squeeze a couple of cloves of garlic into it, mix with a fork.
Then I roll the minced meat into meatballs until it is complete. Size is at your discretion. Some people like larger ones, “like a walnut,” but for me the size is faster, like a large cherry.
I like it when they are much smaller, then there are more of them in quantity.
After about 5 minutes of simple manipulations, I have this plate of beautiful meat balls. I think that no one will have any problems with the formation - everyone made little bells in kindergarten.
If suddenly someone did not sculpt, then a piece of meat must be placed between the palms and with radial movements give it an oval shape.
I set the workpiece aside and grate the carrots on a large grater and finely chop the onion. It’s very tasty when you cut carrots by hand into cubes.
It’s a pity my kids don’t love it and turn up their little noses, they have to rub it, but for you I would definitely recommend trying a large hand cut.
Almost everyone perceives a slow cooker as a vessel “throw everything in and leave, but when you come, you find food.”
Simply put carrots, onions, meatballs and potatoes in a bowl, fill with cool water and turn on the Soup program. And there, whatever is cooked is cooked and eaten.
The option that I outlined above is suitable for those who do not want to bother at all, but here the result (in my opinion) will not be the best. Still, you need to put your soul and a little attention into any dish, then you will get something delicious that you can treat to your beloved family.
If you want to cook it really tasty, then it’s better to briefly sauté the carrots and onions beforehand. To do this, turn on the Fry mode and fry the vegetables for about 3-4 minutes and, preferably, in butter - it will give a soft, harmonious creamy flavor.
In the meantime, they are fried, I peel the young potatoes and cut them into cubes.
I immediately add it to the fried vegetables. Turn off the Frying program.
I put on a kettle, in which 1.5 liters of water boils in a couple of minutes. I pour boiling water into the multicooker bowl. And immediately I carefully put the meatballs into it. I pour boiling water on for a reason, not only to save time, but also so that the meatballs “set” right away.
If you fill it with cool water and immediately put meat balls in it, you will have to wait until it boils and during this period of time the meatballs may become disheveled. And when you place them in hot water, they immediately lighten and nothing will disturb their even shape.
At this step I add salt - about one very incomplete tablespoon. It’s better to put less at first, try to mix, and if anything, add more. I also add paprika, about the same amount. I stir.
I peppered the minced meat, so I won’t add pepper to the broth. But I definitely add dried basil, it is not only fragrant, but also adds its own flavor to the soup. I rub about two pinches between my fingers so that small crumbs come out and season the soup.
I close the lid and set the Soup program. It is automatically designed for 1 hour, but I reduce the production time to 40 minutes.
The meatballs cook very quickly and immediately give a good fat. There is no point in boiling them for an hour. 40 minutes is enough. The main thing is that the potatoes are also cooked during this period of time. And 3-5 minutes before readiness, add vermicelli and bay leaf. Do not leave the vermicelli in a lump, stir so that it does not stick together.
The cartoon cooks the soup for the remaining time. Ready. Mmm, it’s quite fragrant and wonderful, I’ll try it now!
I pour it into a plate and serve it with fresh herbs because I don’t really like boiled herbs, they turn black. And it’s so wonderful, green and the smell of the freshest dill complements this soup, no matter what you add or subtract, it’s perfect!

I often cook wholesome and healthy first courses. So now I’m about to make soup with meatballs in a slow cooker . My family adores it very much, it is tasty, but at the same time light and necessary. After all, this soup is prepared without frying vegetables. When preparing dishes in a slow cooker, they turn out more delicious than on the stove; they can be compared with those cooked in a Russian stove. The 1st and 2nd courses turn out to be the most rich, simmered - simply delicious! Try to cook healthy dishes for your loved ones - believe me, it is very tasty, and most importantly healthy.
Ingredients:
- minced meat – 500 g
- potatoes – 3 – 4 pcs.
- onion – 1 pc.
- carrots – 1 pc.
- rice – 3 tbsp. spoons
- salt and spices to taste
- egg (minced) – 1 piece
- water
Meatball soup in a slow cooker:
Beat the egg into the minced meat, add salt and pepper. Mix thoroughly. Roll the minced meat into meatballs of a suitable size.
Peel the potatoes, wash and cut into cubes. Peel the carrots, wash and grate on a large grater. Peel and wash the onion.
Place potatoes, carrots, onions and meatballs in a multicooker bowl. I chop the onion coarsely, but this is not necessary, cut it as you prefer.
If you plan to cook soup with meatballs with “frying”, then you need to fry the onions and carrots in vegetable oil in the “baking” mode. Then add potatoes and meatballs to the fried vegetables.
Add salt and sprinkle with herbs to taste (I have a mixture of Provençal herbs). Add bay leaf.
Pour in water (my soup is filled with boiling water).
Close the lid. Set the “quenching” mode for 1 hour. Usually, for this soup in a slow cooker, 40 minutes of “stewing” is enough, but you can cook for an hour.
20 minutes before the end of cooking, pour washed rice into the soup (rice is added as desired, it can be added immediately with the potatoes, but it often gets boiled over).

Meatball soup in a slow cooker
It is not for nothing that meatball soup is popular among lovers of home cooking and among children. It will always amuse you with its simplicity of production and rich fragrant taste and smell. Each housewife has her own recipe for making this soup. I bring to your attention my own version.
Ingredients:
- chicken bouillon
- 4-5 potatoes
- 1.2 multi cups rice
- greenery
- salt and pepper
- Bay leaf
- tomato paste optional
Ingredients for meatballs:
- minced meat of your choice (chicken, beef and pork)
- half an onion
- 1 testicle
- salt and dark ground pepper
The photo shows ready-made frozen meatballs, but I think it’s necessary to tell you how to cook them.
- First you need to finely chop the onion, or chop it in a blender.
- Add onion to the minced meat, salt, dark ground pepper, beat in the egg and mix.
- Roll meatballs to the desired size. As a standard, you will get thick minced meat; if this does not happen, you can add a little semolina. It will remove excess water, and the meatballs will simply take the appropriate shape.
- Next, put the broth in the multicooker on the “Soup” mode to boil. If there is no broth, you can use water, because the meatballs will still add fat and the soup will turn out rich. By the way, you can create the opposite, i.e. First put all the ingredients in the multicooker bowl, and then pour in the broth, but this is as comfortable as you want. In this recipe, we first pour in the broth, and then add the meatballs.
- Next, wash the rice and finely chop the dill. You can put any kind of greens in the soup. Parsley, cilantro, and basil will also go well with it. In this case, we will use dill. By the way, I would like to see that in this recipe for making soup there is no frying, so the soup turns out to be dietary.
- Place rice, herbs, salt and pepper, bay leaf and tomato paste into the slow cooker.
- We set the multicooker to the “Soup” mode for about 1 hour, but sometimes 40 minutes is enough for production.
The advantage of making dishes in a slow cooker is the ability to put all the ingredients into the pan at once, because nothing will boil over. If the soup is very bubbling, you can open the lid of the multicooker.
Pour the finished fragrant soup with meatballs and rice into plates and enjoy a hearty home-cooked lunch. The family will be happy.
