Recipe: Cookies “Curd ears” – with vegetable oil

2. Add 4 tablespoons of sunflower oil (or any other vegetable oil - the main thing is so that it has no aroma). The amount of oil added depends on the fat content of the cottage cheese that you will use - the higher the fat content, the less oil is needed (I used 9% cottage cheese).

3. Next, add a pinch of vanillin into the bowl (not to be confused with vanilla sugar - if you use vanilla sugar, you will need 1 teaspoon), also sifted flour and a pinch of soda.

4. All ingredients should be mixed well and kneaded into an elastic, flexible dough. Add more flour as needed, but the main thing is not to overdo it and make the dough heavier. Because I didn’t grind the cottage cheese through a sieve before, you need to knead the dough very carefully, it takes me 10-15 minutes, and it becomes homogeneous. Cover the dough ball with a bowl, a towel, or place it in a bag and leave for half an hour.

5. Roll out a narrow (about 3 mm) layer of dough and use a glass (or any other round-shaped accessory) to cut out rounds. The size is at your discretion, I like to create small “ears”.

6. Pour sugar into a saucer and place any round of dough there on one side. It will be even tastier and more aromatic if you mix sugar with cinnamon.

Fold the circle in half with the sugar inward and again place one side in the sugar.

And roll it up one more time and put it on the sugar. The sweet side will be the top of the cookie.

7. One by one, place our “ears” on a baking sheet.
I have a special baking grid, you can put it on parchment or just grease it with butter. The “ears” are baked very quickly - it takes me no more than 20 minutes, or even less at 180 degrees - and the cookies turn brown - which means they are ready.

I like to crunch them with a glass of cool milk or just like that. They also go perfectly with tea or coffee.

  • 0.5-0.6 kg flour
  • 0.5 kg cottage cheese
  • 180 ml vegetable oil
  • 150 g sugar
  • 100-120 ml milk
  • 2 testicles
  • 30 g butter
  • 25 g baking powder
  • 2 tsp grated lemon zest
  • 20 g vanilla sugar

Recipe for making a dish at home

  1. It is better to use soft, paste-like cottage cheese. Rub the cottage cheese through a sieve, add sugar with vanilla sugar, eggs, pour in the milk and beat everything with a mixer until the mixture is homogeneous.
  2. Without ceasing to beat the curd cream, pour in the vegetable oil, spoonful at a time. Add zest and stir. Mix flour with baking powder and sift through a sieve. Mix the flour mixture into the curd mixture and knead into a soft dough.
  3. Cover the curd dough with a slightly damp towel or film and leave to stand at room temperature for half an hour. Then remove the towel/film and roll it out on a table sprinkled with flour into a layer about 1 cm wide.
  4. Cut out cookies of any shape from the rolled out dough using special molds and place on a baking sheet. Brush the surface of the cookies with melted butter and place the baking sheet in an oven preheated to 180C.
  5. Bake the cottage cheese cookies in vegetable oil for approximately 10-15 minutes until lightly browned. Remove the pan from the oven and leave the products to cool. Serve cooled. Enjoy your tea!
