In fact, there are quite a lot of recipes for how to make a cupcake. You can often see the name cupcake or muffin. Their main difference is the texture of the finished sweet. The cupcakes will be the most airy and porous, the cupcakes will be a little denser, and the muffins will be denser. In order not to confuse our readers, we will use the title “cupcake”.

In any recipe for making muffins, the most important thing is to knead the dough correctly. This is what we will do:
- First, sift the flour (do this twice if possible). Then add baking powder to the flour and mix well.
- Place the butter in a mixer bowl and start beating (at high speed). Continue beating until the butter turns snow-white. Without stopping the process, add sugar, then beat for another 2 minutes.
- Add both eggs to the resulting mass, add vanilla sugar and beat again until the mass becomes snow-white. During the beating process, remnants of our consistency will remain on the walls of the bowl - they must be removed so that a homogeneous mass emerges.
- Next, reduce the speed of the mixer to a minimum and evenly add flour and milk to the mixture (continue whisking). Add flour and milk in 3-4 additions.
- When we get a dough that is homogeneous in its structure, we can turn off the mixer.
- Now the dough needs to be poured into cardboard molds. This can be created using a special pastry bag or a regular tablespoon. Fundamentally! Fill the molds approximately 2/3 full.
- Preheat the oven at 180 degrees. Place the molds with the dough on a baking sheet and place in the oven for 20 minutes.
- When the cupcakes are ready, take them out of the oven and let them cool (do not remove them from the molds).

- Remove the zest from the washed lemon - you should get approximately 1 tablespoon of zest. We carefully wash the raisins.
- Add raisins and zest to the dough and mix again.
- Grease the baking molds with sunflower oil and place them in the dough - actually to the top.
- Preheat the oven at 200 degrees. Then we place the molds on a baking sheet and bake the cupcakes for a quarter of an hour.
- In such conditions, the cupcakes do not burst much on top - but it is precisely for these “canyons” on the surface that almost all gourmands adore them.
- If you want to avoid such “crackling”, then set the oven at a temperature no higher than 140–160 degrees, but bake for 25 minutes.

- Sift the flour separately through a strainer and mix with baking powder.

- First, prepare the biscuit dough for the cupcakes. First, beat the butter with sweet sand. To do this, it is convenient to use a blender or food processor. Place butter, sugar and a pinch of salt in a chopper, beat it all until smooth for about 3 minutes.
- Add the eggs and turn on the blender again.
- Sift the flour and baking powder separately, add the dry mixture to the egg-butter mixture. Knead a liquid, homogeneous dough.
- At this step we add raisins. Before this, dried fruits need to be washed, poured with hot water for 10-20 minutes and dried well with a napkin. Add the cooked berries and mix thoroughly with a spatula.
To ensure that the raisins are moderately distributed over the entire size of the dough and do not sink to the bottom of the product during baking, they need to be rolled in flour and only later mixed into the dough.
The most common muffin recipe is baked from a minimum of ingredients. But there must be butter, otherwise it won’t be a cake. Sour cream, drink, milk or mayonnaise are suitable for baking cupcakes. - Drive the freshest chicken eggs into the cooled oil base, beat the mixture until smooth and lightened with a mixer.
- Add sour cream to the foamed mass and mix thoroughly.
- Sift the flour and baking powder separately, add vanilla and a pinch of salt.
- Now combine the watery and dry ingredients. We do this using the following method. First, add half of the watery mass into the dry base, rub everything well with a fork until all the lumps are gone. Later, pour in the rest of the mixture, mix and beat with a mixer at low speed.
- Pour the dough into portioned silicone molds, filling them 1/2 the size (if you put more dough, it will run out of the mold during baking). Place in the oven preheated to 180°C for 8-10 minutes.
- Remove the finished cupcakes from the oven, cool, shake out of the molds and serve with hot cocoa or tea.
Plain kefir muffins with orange zest
Making kefir muffins requires a minimum of effort and a small set of common ingredients. The main product for this baking is a drink that can be found in the refrigerator of virtually every housewife. For this recipe for muffin dough, you can even use a drink that is not fresh or sour milk.

- Separately, pour the drink into a bowl and dissolve the soda in it. Place the drink in a common bowl and whisk.
- Add sifted flour to the watery base in parts to get the dough as thick as thick sour cream.
- At the very end of the kneading, add orange zest, which will add an extraordinary piquancy to the baked goods. To do this, wash the orange well, scald it with boiling water and use a special grater to remove only the upper orange peel, without touching the whitish, bitterish subcortex.
- We fill the muffin tins half or two thirds of the size with dough, because... it will increase significantly in volume under the influence of high temperatures.

Before taking on complex culinary masterpieces, you need to master a traditional, basic recipe, prepare ordinary muffin dough, and master the simple technology of making real muffin dough. To do this, we suggest finding out how to bake a regular pound cake.
How to make delicious regular cake batter
The pound cake got its name from the amount of ingredients it contains: 1 pound of flour, butter, eggs and sugar. If you convert the ingredients of the recipe into the most common system of measures, you get 450 grams of flour, butter and sweet sand, as well as 8 chicken eggs (specifically, 8 pieces equal 1 pound) - that’s the whole recipe.
TestoVed recommends. To make an ordinary dessert even more delicious and fragrant, we will add a little salt, vanilla extract and orange zest to the traditional ingredients. The extreme taste can be perfectly replaced with lemon zest or even raisins.

How to create muffin batter in tins. The usual recipe for homemade cake dough in the oven with step-by-step photos will help you understand the usual production steps. You see - everything is simple. All you have to do is decide how many cupcakes to bake.
The number of ingredients in the recipe is designed for two ordinary rectangular bread baking pans measuring 23x13 cm. To bake 1 cupcake instead of 2, reduce the quantity of ingredients by half, and the cooking time to 40-45 minutes.

- sugar – 450 g (2 cups);

- salt – 0.5 tsp;

- zest of 1 orange;

Cupcake Dough Recipes
Option 1: Traditional recipe for capital cupcake dough
The metropolitan cake is most often called ordinary. Specifically, it has a crumbly and buttery crumb, a toasted crust and a lot of fragrant raisins. Here is the usual dough recipe with minor changes. The raisins must be soaked for filling. It is also very important not to use very large and large dishes for such cupcakes; it is better to bake in small molds.
Ingredients
- 0.17 kg butter 72%;
- 0.25 kg flour;
- 0.15 kg raisins;
- 25 g sweet powder;
- 5 g baking powder;
- 0.17 kg sugar;
- 3 testicles;
- 1 g vanillin.
Step-by-step recipe for homemade muffin dough
Soak the raisins. We use warm water for this. The butter for the capital dough must be softened. Often they simply consume melted fats, but this is not entirely true. Add about half the sugar to the butter. Mix the second part of the sand with the eggs. It is with them that we begin. Whisk until the sand dissolves.
Take out the mixer, transfer it to the oil and beat it until fluffy. Then pour in the eggs evenly, bringing the dough until smooth, add a pinch of salt.
Squeeze out the raisins, mix them with flour, add baking powder and add everything together into the dough. Stir again, after which we begin to place the cupcakes in greased molds. They will certainly rise, so we fill them 2/3 the size.
Place in the oven at 200 degrees, then immediately reduce the temperature to 170. Bake the capital's muffins for approximately 25-28 minutes. If one large form is used, the time will increase little. During this process, the cupcakes should have “spouts” with a crack in the center. Sprinkle the finished cupcakes with sweet powder.
You can prepare the capital's cupcakes in capsules, which are used for cupcakes. In this case, they will not stain your hands and will look neat and beautiful.
Option 2: Frisky recipe for cupcake dough “By the bottom of the barrel”
This funny name was given to the test because of the usual set of products. The ingredients for kneading can be changed, for example, instead of mayonnaise, take sour cream, instead of margarine, butter. If you don’t have 3 eggs, then two will do. In any case, you will get delicious and fluffy cupcakes; the only important thing is to adjust the amount of flour.

- 0.5 sticks of butter;
- 10 g ripper;
- 200 g flour.
How to cook quickly
We measure out the sweet sand, it comes out to almost a full glass. Pour into a bowl and add all the eggs. Beat lightly with a whisk, add mayonnaise, after dissolving the grains, add melted recipe butter. As mentioned above, you can use regular margarine instead.
Mix all the watery ingredients, add flour and one packet of baking powder. Stir once, after which you can immediately send it to the form. Or put it in small silicone molds. Bake at 180 degrees.
If you add cocoa to this dough, you get a chocolate cake. You can pour powder into only one part so that a zebra comes out or collect marble. In the summer it will be delicious with berries, and in the winter with nuts and dried fruits.
Option 3: Honey Cake Batter
Honey muffin batter will vary greatly, and not just in taste. It is the most tender, light, porous, does not go stale longer and rises better in the oven. Naturally, if you use high-quality, natural honey. The basic recipe, to which we optionally add nuts, cinnamon or other spices, candied fruits or dried fruits, is perfectly enhanced by grated zest.
Ingredients
- 0.5 tbsp. Sahara;
- 1.5 tbsp. flour;
- 0.1 kg of honey;
- two testicles;
- 2/3 tsp. soda;
- 0.15 kg butter.
How to cook
Place the butter together with the prescribed amount of honey in a bowl and melt. According to the rules, this is done in a water bath, but it’s not necessary; simply heat it on the stove, just in this case, don’t leave, stir, nothing should burn. Add soda, stir, cool.
Add the eggs and immediately add a little salt, beat, after which you can add flour and any additives to your own taste. Without them, the dough is also good, you can even bake cake layers from it.
The dough with honey is simply baked in the oven, the temperature for small muffins is 190, if you are preparing one large mold, then you need to reduce it to 170 degrees.
If the honey has become candied and it is difficult to get it out of the jar, it is recommended to heat the container. In fact, you shouldn’t increase the temperature of the entire product, as this will kill the beneficial substances; you can simply scoop the product with a hot spoon.
Option 4: Cupcake batter with sour cream
The recipe for a regular, but tender and soft dough for cupcakes. Here it is simply with vanilla, you can add zest or raisins, other dried fruits at your discretion.

- three testicles;
- a glass of sour cream;
- two glasses of flour;
- a glass of sugar;
- 1 packet of vanillin;
- 1 bag of ripper.
Step by step recipe
Beat the eggs at high mixer speed together with a glass of sweet sand, then add sour cream, while reducing the speed. Stir slowly and add a pinch of salt.
Once all the sand has dissolved, add flour with vanilla and baking powder. Mix once and the cake batter is ready. Place in molds or pour out one huge container and bake.
If the sour cream is low in fat, then you can replace 50 grams of the product with softened or melted butter, this will only make the cake better.
Option 5: The Best Chocolate Cupcake Batter
Cocoa makes the dough drier, it may turn out tasteless, the crumb will crumble. Therefore, you should not add powder to any recipe you come across, especially without adjusting the amount of flour. Chocolate cupcakes have their own notable batter options, here's just one of them.
Ingredients
- 2 spoons of cocoa;
- 0.2 kg butter;
- 4 testicles;
- 2 tbsp. flour (approximately 270 g);
- 7 g soda;
- 80 ml milk;
- 0.17 kg sugar (about a glass).
How to cook
Melt the butter, pour into a bowl. Or we do it right away in a bowl and put it in the microwave. Add sugar, stir, you don’t have to let it cool beforehand. Sift the cocoa powder through a strainer and mix together again.
Add egg yolks one at a time. Place the whites separately in a clean bowl. Add a pinch of salt to them and beat until stiff foam.
Pour warm milk into the chocolate butter mixture and stir. Once the sugar has all dissolved, add the proteins, flour and soda slaked with acid. It could be vinegar or lemon juice. Mix the dough. You can add a little instant coffee to enhance the taste.
Transfer the chocolate dough into the mold and bake the cake until done at 180 degrees. If desired, decorate with glaze or simply sprinkle with powder. It looks especially beautiful on black dough.
You can replace butter with margarine in cake recipes, but in this case we don’t save, we use a high-quality product with the highest fat content. Liquid margarines of 40-50% are often found on store shelves, they do not stand up, we choose a minimum of 65%. Other characteristics are not so important.
Option 6: Kefir muffin dough
Kefir dough options are very popular because this product often stagnate in the refrigerator. As well as curdled milk, fermented baked milk, yoghurts. You can add all this to cupcakes. Another basic recipe that can be a real lifesaver for the housewife.
Ingredients
- three testicles;
- 160 ml vegetable oil;
- 3 g salt;
- a glass of kefir;
- 12 g soda;
- 2.5 tbsp. flour;
- a glass of sugar.
How to cook
Place the drink with eggs and sugar in a bowl, add salt and soda. Using a mixer or a regular hand whisk, beat for two minutes.
Add vegetable oil, then flour. If desired, washed (steamed) raisins, candied fruits. Stir and leave for 10 minutes.
Stir the dough again, place it in the mold and bake for about half an hour at 180 degrees. Sprinkle with powder or cinnamon.
The zest of lemon or orange will give any cake an excellent smell. It can be prepared for future use and used as needed. There are two methods to create this - dry and chop or cut and sprinkle with sugar.
