I will add 100 g of condensed milk and 100 g of jam to the dough, but you can add only 200 g of condensed milk or the same amount of jam.

How to make a “Rotten Stump” cake with sour cream:

Pour boiling water over the dried fruits and leave them there forever while we make the dough.
(I used raisins and dried apricots, but you can also add prunes, nuts, or just fine-tune the chocolate. If you don’t have anything like that at home, just skip this step.)

Break eggs at room temperature into a bowl in which we will combine everything. Beat at medium speed until stable foam. We send sugar there.

Beat for 3-4 minutes until the sugar dissolves (speed is above average).

Pour all the watery ingredients into the bowl and mix for 1 minute. (If you take reddish jam, keep in mind that it will give a greenish tint in the dough. If the jam is in pieces, blend it with a blender.)

We extinguish the soda with vinegar (you can replace it with baking powder). Be sure to put out the soda. Despite the fact that there is sour cream in the dough, it will not completely extinguish the soda due to the fact that the sour cream is fresh.

Add flour. Leave the dough for 5 minutes.

Cut dried apricots into cubes.

Add all the dried fruits to the dough and mix.

Take the largest rectangular or square baking sheet and cover it with parchment.
We distribute the dough along the entire perimeter. (If you have a small baking sheet, divide the dough in half. In any case, the cakes should be thin.) Place the baking sheet in a preheated oven at 170-180 degrees for 18-20 minutes.

The most delicious cream for this cake is sour cream. Pour the highest fat sour cream into the mixer bowl and beat for 2 minutes (higher than medium speed) until it becomes thinner and has some air. Add sugar and continue beating for another 2-3 minutes.

Add lemon juice and stir.

We take the crust out of the oven and leave it on the table for a couple of minutes so that the baking sheet cools down.

Spread a wet waffle towel and place the shortbread on top.

Wrap the cake into a roll.
Then you can proceed in 2 ways: 1. Leave until the cake has cooled down completely.
2. Let it sit for 10 minutes, so that it is not very hot, but still warm.
I prefer the 2nd method, because the warm cake absorbs more cream and the cake comes out juicier.

Unwind the roll. It is necessary to decide on the height of the “stump”; a ruler will be useful for this. Cut the shortbread into 3 strips 10-15 cm wide.

Soak the biscuit in cream twice.

Crumble the remaining edge of the cake with your hands and mix with the cream. The baby should become very soft.

When the sour cream has been perfectly absorbed, take the first strip and roll it into a roll (if it breaks, it’s okay). Place vertically on a plate and pour cream on all sides.

We wrap the second strip around.

After a few minutes, we do the same with the third stripe. Leave for 5-10 minutes.

Using crumbs, we attach the edges of the third strip to the 2nd. We cover the voids with crumbs, straighten all the bulges and form a root (see video).

Pour the remaining sour cream over the top of the cake. Wipe all edges of the plate.

Combine chocolate with butter.

Melt in the microwave.

Use a silicone brush to coat the sides of the cake.

Use the remaining chocolate to draw “annual rings” on top.

Lightly sprinkle with grated chocolate.

Decorate the bottom of the “Rotten Stump” cake with cookie crumbs.

In fact, this is a version of the most ordinary cake that even a novice pastry chef can prepare. Well, in terms of its own composition it is unpretentious. In the saddest case, everything that is in the refrigerator (within reasonable limits) is used.

The dessert earned its name thanks to the porous structure and dark color of the cake (reminiscent of a rotten stump). But the taste, of course, has nothing in common with dried wood. There are a huge number of recipes for making it. We would like to offer you two options for this dessert. With the first option you will have to tinker a little, but the result will pleasantly surprise you. And the second option is suitable when you don’t have much time to mess around in the kitchen, but you’re very willing to treat yourself and your loved ones with something tasty.

Traditional recipe for “Rotten Stump”

A traditional recipe for making a miracle “stump” at home. The main feature of this recipe is that it contains dried fruits, which, by the way, are very beneficial for our body. So, for your masterpiece you should have:

  • 1 cup of fat sour cream;
  • 2 chicken yolks;
  • 1 full glass of sugar. sand;
  • 0.5 teaspoon of soda;
  • flour, enough to knead a thick dough, like dumplings;
  • You can add a pinch of lemon zest to taste.

  • 200 g prunes;

Cooking a pie at home involves the following steps:

  1. Let's start creating a base. We take the yolks, sour cream, sweeten them.
  2. To begin, beat one yolk with one spoon of sugar and a spoon of sour cream until smooth. Then add another yolk, a spoonful of sugar. sand and a spoonful of sour cream and beat again until smooth.
  3. Separately whisk the remaining sour cream with the remaining sand, adding soda.
