First, let's prepare the pancake dough. In a deep bowl, beat a couple of eggs, salt and sugar until fluffy.
Pour in 100-150 ml of milk and add the entire portion of flour (previously sifted). Mix with a whisk or fork, trying to break up the lumps. At first the dough is thick and dense.
Then add the remaining milk evenly - in this way we dilute the pancake dough to a suitable mixture.
Pour in the oil (refined) at the end and stir again. The pancake batter should be watery and homogeneous.
We warm up the frying pan and coat it with vegetable oil for the first time (later you can bake pancakes on a dry surface, because we added oil to the pancake dough). Pour a portion of the dough and distribute it over the entire bottom, turning the pan in the air.
Bake the pancakes over moderate heat for about 2 minutes until golden brown on both sides. It is most convenient to twist using a spatula or tossing it in the air. Place freshly baked pancakes in a stack on top of each other and cover with a lid so that the edges soften, do not dry out and remain warm.
While the pancakes are baking, they are busy making the insides. Peel the fruits and remove seeds, cut into small pieces and sprinkle with lemon juice. Melt the butter in a frying pan, immediately add cane sugar to it and pour in a spoonful of rum.
Place the frying pan on the heat and boil the syrup for a few minutes. Place the apples in the bubbling syrup and sprinkle with cinnamon. Simmer for 10 minutes, stirring gently. The pancakes turn out to be very tender, tasty and fragrant. They are perfect for breakfast with a cup of tea and will appeal to both small and adult gourmands. Beat the eggs into a deep bowl, pour in the milk and stir with a whisk.
Add vanilla sugar, salt and sugar to the milk-egg mixture and mix well.
Then pour in the vegetable oil and whisk the resulting mixture.
Add the sifted flour and thoroughly mix the resulting dough with a whisk (until smooth).
Then pour boiling water into the dough in a thin stream, stirring continuously.
The dough will be homogeneous, not thick. It just pours from a spoon. Let the finished dough rest for 10 minutes.
Grease a hot frying pan with vegetable oil, then pour in one ladle of dough and spread it moderately over the surface of the frying pan.

Good day! Pancakes with apples are our family’s favorite treat. And if you have never eaten these before, you are missing out! )) There are a huge number of different entrails, but this one, I assure you, is the most delicious!
I highly recommend making it, and I will now share 2 recipes: the popular method of making the insides in caramel with the addition of cinnamon and my signature one with chocolate sauce.

Recipe for pancakes with apples and cinnamon on kefir
To make pancakes, which we will stuff with apples, any recipe that you like will be suitable. If only they were thin. Last time I carefully described how to create these with milk, but for now let’s try kneading the dough with kefir.
We will need the following products:
- drink – 200 ml
- water - half a glass
- 1 testicle
- flour – 150 g
- baking soda – ¼ teaspoon
- salt – ½ teaspoon
- sugar – 2 tbsp. spoons
- vegetable oil – 1 tbsp. spoon
Let's begin our process.
Let’s boil the water first, because we will be using boiling water.
Break an egg into the drink, add salt and sugar and mix everything together.
You must try to create everything quickly before the water cools down.
Now add all the flour into the dough at once and knead it very well, rubbing it with a whisk so that there are no lumps.
Pour soda into a glass of boiling water, dissolve it, stirring with a spoon, and pour into the dough in a narrow stream.
After the dough has stood for 5 minutes, you can add vegetable oil to it.
And look at the dough mixture that came out, because the drink varies in fat content and thickness. If you consider it necessary, you can add a little more warm water.
Fry the pancakes as usual, on both sides. There is no need to keep them in a frying pan for a long time; even if they are not very beautiful, they will turn out soft.
And by adding boiling water they will become thin.
Very tasty pancakes without any inside!
How to create a filling for pancakes with caramel apples at home
But let's move on. Let's cook the apples in caramel. Although, it must be said that it is better to create this in advance. Because the filling still needs to be cooled, it is not recommended to leave the pancakes unattended for a long time, and it will be more enjoyable while they are still warm. (But even when cool they are not bad, you won’t be able to pull them off by the ears!)
And it’s completely easy to create yourself at home, the recipe is very simple and super delicious!
- apples – 4 large (500 g)
- cinnamon – 1/2 teaspoon
- butter – 50 g
- sugar – 2 tbsp. spoons
Any apples are suitable, but sweet and sour are the best option.
They must be peeled, first cut into 4 parts and freed from seeds, and then chopped into small cubes.
If your fruits are sweet, it is recommended to sprinkle them with lemon juice.
What do we do with them next?
First, put the butter in the frying pan and immediately add sugar to it.
With vigorous stirring, let the sugar caramelize: quite slightly, no need to fry it to the point of candy. Despite all this, our fire is powerful (evenly).
Pour in the apples and simmer them, stirring constantly. At first they will release juice, and later the liquid will begin to evaporate. And we need to wait until as much water as possible has evaporated.
The entire mass will decrease by almost half, become viscous and sticky, and the apples will be slightly fried and even acquire a crust (but not necessarily).
Now is the time to add cinnamon to them and reduce the heat. Let it sit a little longer (don’t forget to stir constantly) and the inside will be ready.
She has such a great smell! Everything will take approximately 7 minutes.
There is another option using honey instead of sugar; one tablespoon will be enough.
Cut the apples into slices.
You will need to melt the butter along with honey and simply fry our fruit in it. With this whole method, what comes out is not a thick mass, but each piece comes out separately, which is also very curious, wonderful and appetizing.
How to wrap pancakes with apple inside
The important question is how to wrap all this deliciousness and how best to serve it.
You can create pancakes using a simple envelope and fry them. But I prefer the option of rolling it into a tube. It’s more attractive, and you can put in a lot of insides.
So, spread the thick apple mixture along the edge of the pancake circle, leaving not a centimeter on either the left or the right.
We wrap this edge, hold it and press the filling lightly with our fingers, and roll it into a roll.
Be sure to sprinkle with sweet powder or melted chocolate!
Another option for folding is a beautiful triangle.
Place the filling, filling the cone-shaped area on the pancake.

It's time for my signature recipe. But in fact, I found out about it back in my student years during a visit to the capital’s 1st cafe “Shokoladnitsa”. And although it is more for children, we walked there with pleasure specifically for these pancakes with apples and chocolate sauce. It's indescribable and amazingly delicious!
So adults will eat it with pleasure, and children will be in ecstasy, I understand from my own experience.
There is no caramelization here, and everything is done so quickly and simply that you can entertain your family with this dessert any day.
I don’t peel the apples, I cut them into small pieces. I put it in a frying pan, pour two tablespoons of water and simmer for no more than 2 minutes. I only seek to soften them.
I drain the excess liquid by tipping the workpiece onto a sieve.
You can add a little sugar, according to your own taste. But we will also have a sweet filling.
I take a glass of sour cream (any fat content), add a spoonful of cocoa and a couple of spoons of sugar. I put everything in a water bath (I can just use gas), stir until the sugar dissolves.
This all happens very quickly at the same time while the pancakes are baking. The recipe for them is not important, use your favorite one.
I wrap the pancakes with apple inside in a tube. And so that the edges also have the neatest appearance, at first I bend them inward.
