7. Cucumber salad for the winter with tomato and pepper puree

Ingredients

  • 1 kg of tomatoes;
  • 2 bell peppers;
  • 1 hot pepper;
  • 2 tablespoons sugar;
  • 1½ tablespoons salt;
  • 50 ml vegetable oil;
  • 1½ kg cucumbers;
  • several sprigs of dill - optional;
  • 4 cloves of garlic;
  • 4 tablespoons vinegar 9%.

Manufacturing

Make cross-shaped cuts on the tomatoes on the reverse side from where the stalks were. Pour boiling water for 1-2 minutes, then strain the water and remove the skin.

Puree the tomatoes with a blender. Pour into a saucepan and simmer, stirring, for 20 minutes over low heat.

Grind the seeded bell and hot peppers in a blender. Add this puree, sugar, salt and butter to the tomatoes. Stir and cook for another 10 minutes.

Cut the cucumbers into slices, add to the puree and cook for 5 minutes after boiling. If desired, add chopped dill along with the cucumbers.

Place the pressed garlic into the pan, pour in the vinegar, stir and cook for 1 minute. Distribute the salad among the jars and roll up.
