Well, after this soup you can enjoy zucchini pancakes. This will make a real summer lunch. After all, when else, if not in the summer, should you stock up on vitamins from vegetables and fruits!

  • potatoes – 4-6 pcs.;
  • eggs – 3 pcs.;
  • boiled sausage;
  • cucumbers – 2 pcs.;
  • radish;
  • dill, green onions;
  • sparkling mineral water – 3 l;
  • sour cream – 250 g;
  • salt to taste.

  1. Boil eggs and jacket potatoes. Let them cool, peel and cut them into small pieces.
  2. We thoroughly wash all vegetables and herbs.
  3. Peel the cucumbers if they are bitter. Finely chop one cucumber, chop the second cucumber into three on a large grater.
  4. We also clean the radishes. We chop some with a knife, and some with a grater.
  5. Cut the boiled sausage into small cubes.
  6. Finely chop the greens.
  7. In a large saucepan, mix all the ingredients: potatoes, eggs, cucumbers, radishes and herbs.
  8. Fill everything with mineral water, add salt and sour cream. Mix everything well and serve!

Another good option for okroshka with mayonnaise. Citric acid adds the necessary sourness. You can replace it with the juice of the freshest lemon if you have it on hand.

  • mineral water – 1.5 l;
  • mayonnaise – 2 tablespoons;
  • sour cream – 2 tablespoons;
  • citric acid - on the tip of a knife;
  • boiled sausage – 200 g;
  • eggs – 4 pcs.;
  • potatoes – 4 pcs.;
  • cucumber – 2 pcs.;
  • radishes – 8 pcs.;
  • green onions and dill;
  • salt, pepper to taste.

  1. Boil potatoes and eggs, cool. Then we clean and chop with a knife.
  2. We also cut all the vegetables into cubes, having previously washed and peeled them. We chop the greens.
  3. Pour all the chopped ingredients into a large saucepan, stirring gently with a spoon.
  4. In a separate container, mix mayonnaise with sour cream, adding salt. Then add a little sparkling water here. Mix everything so that there are no lumps of mayonnaise.
  5. Pour the resulting mixture into the pan. Then add mineral water and stir the soup. And at the very end, add citric acid at the tip of a knife. Mix again. Let it brew a little in the refrigerator and treat yourself to a delicious summer stew!

Traditional okroshka with kefir and mineral water

When making okroshka with sparkling water, the drink most often used is. It is sour in itself, so there is no need to add lemon or vinegar, as in other recipes.

This recipe has gained a huge number of fans, so I advise you to try it too.

  • drink – 1 l;
  • sparkling mineral water – 1 l;
  • sausage – 300 g;
  • eggs – 4 pcs.;
  • potatoes – 4 pcs.;
  • cucumber – 4 pcs.;

  1. Boil the potatoes in their jackets, cool them and peel them. Cut into cubes.

  • mayonnaise – 1 tbsp;
  • vinegar 9% – 1 teaspoon;
  • potatoes – 4 pcs.;
  • radishes – 300 g;
  • sausage – 300 g;
  • eggs – 3 pcs;
  • cucumber – 3-4 pcs.;
  • greenery;
  • sugar – 1 teaspoon;

  1. Boil eggs and potatoes, peel and cut into cubes.
  2. Wash the radishes and cucumbers, cut half of them, grate half of them on a large grater.
  3. Chop the greens.
  4. Place everything in a saucepan and mix, pouring chilled mineral water.
  5. In a separate bowl, mix sour cream and mayonnaise. Pour the finished mixture into the soup. Add sugar, salt and vinegar. Taste it and add salt as needed. Mix and place in the refrigerator to infuse.

Okroshka made with mineral water is also excellent for people who want to lose weight. But it is necessary to realize that calorie content almost entirely depends on the components used. So, okroshka cooked with sausage and mayonnaise cannot be called low-calorie.   • 2-3 tablespoons of table vinegar (9%);
  • 500 ml sour cream;
  • 4 liters of mineral water;
  • salt, pepper to taste.

By the time you start making okroshka, you need to have time to boil and cool the potatoes in their skins and eggs. Cooled products need to be peeled and cut into small cubes, approximately the same as when making Olivier salad.

Cut boiled sausage or meat into cubes. If you eat meat, you need to cut it across the grain; only with this cutting method will you get neat cubes. We cut the freshest cucumbers, the shape of the tenderloin and the size of the pieces should be similar. We carefully wash the onion feathers and dill, dry them slightly and chop very finely. Mix the greens with the rest of the ingredients.

Preparing the filling. Mix mineral water with sour cream and salt. Add vinegar evenly, achieving the desired acid level. Pour the filling into the okroshka. The soup is ready and can be served. Or you can put it in the refrigerator for 1-1.5 hours so that it brews and cools.

Okroshka on kefir with mineral water

You can prepare okroshka using kefir and mineral water. You can cook it with any meat products - boiled or baked meat, sausage, ham.

  • 250 gr. meat products;
  • 200 gr. radishes;
  • 4 cucumbers;
  • 5 eggs;
  • 3 potatoes;
  • 1 bunch of green onions;
  • 1 bunch of dill and parsley consistency;
  • 1 liter of mineral water (carbonated);
  • 1 liter of kefir;
  • salt;
  • 1 teaspoon prepared mustard;
  • citric acid to taste.

Before you start cooking, you need to boil the potatoes and chicken eggs and cool these products. Peel the potatoes and cut into small cubes. We clean the eggs and separate the yolks. Chop the whites finely and mix them with the potatoes. We also send diced sausage or meat there.

Wash the radishes and cucumbers, remove the “tails” and rough skin. Grate the vegetables on a large grater. Mix with potatoes and egg whites. Finely chop the greens and add to the okroshka.

Okroshka can be cooked in mineral water with mayonnaise. As a standard, you need to use homemade mayonnaise. If you use store-bought sauce, choose a product with a very natural composition.

  • 400 gr. potatoes (5 small tubers);
  • 200 gr. radishes;
  • 250 gr. cucumber;
  • 5 eggs;
  • 300 gr. sausages or ham;
  • 1 bunch of consistent greens (green onions, parsley, dill);
  • 150 gr. mayonnaise;
  • 300-400 ml mineral water;
  • salt and ground dark pepper to taste.

By the time you start making okroshka, you need to boil and completely cool the potatoes and eggs. Then you need to peel the root vegetables and eggs and cut them into small cubes. Grate the radishes. Cucumbers can be grated or cut into the same cubes as potatoes.

Cut the sausage into small cubes. If desired, this ingredient can be replaced with ready-made lean meat (boiled or baked). Finely chop the well-washed greens, mix all the prepared products.

Add mayonnaise and mix very well, as if preparing a salad. Then pour in cool mineral water; determine the amount of mineral water depending on the desired thickness of the soup. Add salt and pepper to taste. If the filling comes out fresh, you can slightly acidify it with vinegar or citric acid.

You can cook okroshka using mineral water and sour cream. You need to use store-bought sour cream, not very fatty. Homemade sour cream will not work in this case.
