To make the batter, pour the drink into a deep bowl. The drink can have any percentage of fat content, but the taste and thickness of the batter will depend on this. I have 3.2%. Add dried garlic (it literally won’t burn in the pan, unlike the freshest), salt and hot ground pepper.
Step 2:
Grate the cheese using a small grater. The cheese for this batter needs to have a sharp, pronounced taste, because the taste of the finished dish will mainly depend on the batter. Stir the batter.
Step 3:
Add most of the whole wheat flour to the bowl. Stir and evaluate the thickness of the batter. It should be thick, but not steep. Leave the rest of the flour aside for now to adjust the thickness of the batter in the next step.
Step 4:
Wash young zucchini under running water. Cut off the ends on both sides and cut the vegetables into circles. The thickness of the tenderloin will depend on the degree of readiness of the zucchini you want to get: crispy or one hundred percent soft. I chose a thickness of about a centimeter and my zucchini was crispy on the inside. Accordingly, for almost 100 percent softness, it is worth choosing a thickness of approximately half a centimeter.
Step 5:
Using a fork, dip the first round of zucchini into the batter. It seemed to me that my batter was very watery, so I added more flour. Everything will depend on the gluten parameters of the separately taken flour. Focus on the thickness of the batter. It should be excellent and in sufficient quantities! stick to the zucchini, otherwise what’s the point?
Step 6:
Heat a non-stick frying pan over medium heat. Pour in sunflower oil and process it. Whatever one may say, there must be enough oil; this will determine whether you will get a crispy cheese crust or whether the zucchini will stick to the bottom. I poured approximately 3 mm. oils for each batch. Fry the first training circles of zucchini over medium heat for a minute until golden brown.
Step 7:
Then fry the zucchini on the other side for another minute and a half until done.
Step 8:
To remove excess oil, place the finished zucchini in cheese batter on paper towels in one layer so that the crust does not become soggy. Fry all the zucchini in the same way.
It should be noted that cheese batter is not the most common thing to make! My first batch of zucchini was unsuccessful... That’s why I recommend making a training batch of one or two slices of zucchini. And according to the situation, adjust the thickness of the batter, as well as the amount of oil in the pan.
Unfortunately, it is unlikely to reduce the amount of oil here. Then the zucchini will mercilessly burn to the pan - tested.
Laying out the prepared zucchini on paper towels partly helps the situation, but still, the dish turns out to be quite high in calories.
But the batter comes out crispy and fragrant, and the cheese is fried. Zucchini sets off the batter with its own freshness. And, of course, it’s very tasty!

Battered zucchini with cheese is one of my family’s favorite zucchini recipes! The zucchini turns out very beautiful, juicy and immediately crispy. If you are a big fan of zucchini dishes, try to prepare this dish from them.
It is best to use very young zucchini for this dish, so that the seeds have not yet formed in them. You should also choose a cheese with a strong flavor, such as cheddar, it will give the zucchini flavor, since the zucchini itself does not have much flavor, other than its juiciness!
To make zucchini in cheese batter, we will prepare all the products according to the list.
Let's start making zucchini by creating a batter. To do this, pour the drink into a bowl, add salt and dark ground pepper to taste.
For batter, I prefer to use dried garlic, so we also pour the garlic into a bowl.
We grate the cheese on a medium grater, and also put the cheese in the batter.
Add flour and mix all batter ingredients until smooth. From time to time, a little more flour may be useful so that the batter sticks to the zucchini better. It depends on the moisture content of the zucchini and the properties of the flour.
Wash the small zucchini, cut off the stalks and cut any zucchini into strips 0.5 cm wide.
Dip each strip of zucchini into the batter.
Help yourself with a fork. Heat the vegetable oil in a deep fryer or in a saucepan to 170 degrees C. Fry the zucchini strips in cheese batter until golden brown, 3-4 minutes.
Place the finished zucchini in batter with cheese on a paper towel to get rid of excess oil.
