Minimum effort, no need to bother with rolling out dough and using cookie cutters. The meat grinder will do all the work for you.

Ingredients

  • creamy margarine or butter – 250 g
  • sugar – 1 partial glass (160 g)
  • salt – 1 chip.
  • vanillin - on the tip of a knife
  • chicken eggs – 3 pcs.
  • soda – 0.5 tsp.
  • 9% vinegar – 1 tsp.
  • wheat flour - 3.5 tbsp. (470-500 g)

Manufacturing

Cut the margarine into cubes into a deep bowl and leave for 1-2 hours until it softens to room temperature. There is no need to melt, we are preparing a kind of shortcrust pastry. For cookies, it is best to use creamy margarine with the highest fat content (from 70%), which was most often used by Russian housewives. You can replace margarine with butter in the same amount. Once the pieces become soft, pour the sweet sand into a bowl and mash with a fork until smooth. I like it when shortbread cookies are not very sweet. Therefore, I add an incomplete glass of sugar (at the end it will still be sprinkled with powder). Certain gourmands can increase the dose of sugar to 180 grams, in other words, take a full faceted glass.

Add chicken eggs (3 small or 2 large), a pinch of salt and vanilla to the bowl. Again, vigorously mash everything with a fork until smooth.

Next, add baking soda, slaked with vinegar, and mix. By the way, not all housewives add soda to these cookies. If you do not add soda, the cookie outline will be better preserved during baking. If you add it, the baked goods rise better and the cookies come out crispier.

Add 3 cups of sifted flour, mix with a fork and then with your hands. Knead the dough quickly (the less contact with your hands, the more crumbly the cookies will be). Add more flour if necessary. The dough should not be very stiff, elastic, and a little sticky to your hands. Place the bowl in the refrigerator for 30-40 minutes.

Turn on the oven to heat up. Pass the chilled dough through a meat grinder with a large mesh. We grab the resulting “pasta” from below with our hands. Once they reach a length of 4-5 cm, cut off the sector with a knife. In this way, products are obtained that look like chrysanthemums or shells. Naturally, it is most convenient to use the good old manual meat grinder. Working with an electronic one will be somewhat more difficult, because you need to stop it every time or very quickly cut off another portion of “pasta.”

We place the future cookies on a baking sheet - you can line it with parchment or just lay it out on a sheet, there is no need to grease it with anything, because the dough contains a huge amount of fat. Be sure to leave space between the pieces, because they will increase during baking.

Immediately place the baking sheet in the oven, previously preheated to 180 degrees. Bake for 20-40 minutes depending on the size of the products. The finished cookies should dry out over the entire area and brown on top.

  4. Pour flour into the dough evenly, while stirring it with a spoon or whisk. When it becomes difficult to mix, knead with your hands until the dough begins to stick to your hands.
  5. Place the dough in the refrigerator for about 15 minutes. During this period of time, prepare a meat grinder, a baking sheet, and turn on the oven so that it heats up to 200 degrees.
  6. Take out the dough, cut off ¼, put the rest back. We divide the removed part into pieces, which we then pass through a meat grinder. After every 3-4 scrolls, we disconnect the pieces from the meat grinder with a knife, while forming the desired shape of the cookies. We do the same with the remaining dough.
  7. Grease the baking sheet with a couple of drops of vegetable oil or a piece of butter and place the cookies on it (if you wish, you can immediately roll the dough onto the baking sheet, just be sure to brush it with oil first). Place the baking sheet in the oven to bake.
