Cupcakes are small confectionery products made from biscuit or yeast dough, which do not have inside, but contain scattered inclusions of raisins, nuts, candied fruits, citrus zest or chocolate.
What to take for making?
The dough is kneaded quite watery. It is laid out in a thick-walled form, which is certainly greased with oil and lined with parchment paper. If you have silicone molds, the process is simplified, because... the dough does not stick to the walls.
If you knead oatmeal with kefir instead of flour, you will get a dietary treat that will not harm your figure. It will contain a pinch of salt and an egg, but you can safely change the sugar:
vegetable syrups - maple, agave or Jerusalem artichoke;
Stevia is a low-calorie natural sweetener.
The cone-shaped elevation in the center of the finished dessert is decorated with melted chocolate and sweet powder. Here, too, you can give room to your imagination.
Oatmeal muffins combined with freshly squeezed fruit or vegetable juice are suitable as an afternoon snack for children and adults. Muffins and small portioned biscuits are convenient to take with you on the road or on a picnic. And by adding cottage cheese to the oat base, you can give your baked goods a new flavor.
Oatmeal muffins are not difficult to make. Step-by-step photos in recipes make the whole process of creating them enjoyable.

How to Make Oatmeal Blueberry Muffins
Ingredients:
- Oat flakes – 1 cup (250 ml)
- Milk – 1 cup (250 ml)
- Sugar – 0.5 cup (250 ml)
- Vegetable oil – 0.3 cup (250 ml)
- Chicken egg – 1 pc.
- Flour – 1 cup (250 ml)
- Baking powder – 1.5 tsp.
- Soda – 0.25 tsp.
- Cinnamon – 0.25 tsp.
- Blueberries – 1 cup (250 ml)
- Sweet powder – 1 tbsp. optional
Manufacturing:
Pour milk into oatmeal in a large bowl; it can be warm or cool. Leave the cereal for 10 minutes.
In another bowl, sift flour, baking powder and baking soda, and ground cinnamon. This recipe requires both baking soda and baking powder because the berries may release juice.
Cinnamon will turn the dough blackest, remember that. If you don't like cinnamon, you can add vanilla or orange/lemon zest to the cupcake.
Add sugar, unflavoured vegetable oil and egg to the oatmeal, mix well.
Combine both mixtures and mix with a whisk. There is no need to beat for a very long time.
If you like nuts, you can add a third of the cup at this step.
If you use fresh blueberries, they must be washed and dried on a towel; if the blueberries are from the freezer, then they must be doused with warm water, then blotted with a cardboard napkin. Dip the berries in a spoonful of flour.
Gently fold in the berries with a spatula. You must try to do this so that the blueberries do not burst, otherwise they will color the dough blue.
Divide the dough into the molds. If the muffins are made with fresh blueberries, you can put 2/3 of them in 9 molds, but if you have frozen ones, then put the dough in 12 cells, one-half of the cells. This way it will be literally baked, although the cupcakes will not be very high.
Bake oatmeal muffins with blueberries in the oven at 190 degrees for about 25 minutes.
Check readiness with a skewer; it must be dry, but you need to try in several places, because... You can get into the berry and incorrectly assume that the dough is wet. Transfer to a wire rack and let cool.
If desired, dust blueberry oat muffins with candy powder. Serve with tea, coffee or milk.
