How to bake buns like feathers in 5 minutes? Let's prepare the ingredients for the cottage cheese buns. The dough for buns is prepared very quickly, there is no need to stand it and it is even harmful (they may not rise), so you can immediately turn on the oven (top/bottom) and heat it to 180 degrees. Place natural cottage cheese of any fat content in a bowl. Fat content does not affect the properties and taste of buns; even low-fat cottage cheese produces fluffy and soft buns.
Step 2:
Beat chicken eggs into the cottage cheese and add sugar, a pinch of salt and a pinch of vanillin. Carefully mix the ingredients with a hand whisk or mixer, then add vegetable oil and mix until the mixture is homogeneous. It is better to rub the cottage cheese through a fine sieve or beat it with a blender in advance to make it as fluffy as possible.
Step 3:
Add sifted wheat flour combined with baking powder in parts. Sift a small part of the flour without baking powder to be able to regulate the density of the dough. If desired, the factory-made baking powder can be replaced with homemade baking powder (mix 3 tsp of small citric acid (or crushed in a blender), 5 tsp of soda and 12 tsp of flour - mix everything and store closed in a jar, take according to recipe as a baking powder).

When the dough becomes so viscous that it is difficult to stir with a spoon or blender, place it on a floured work surface and continue kneading with your hands. But you must definitely wet your hands with cool water so that the dough does not stick to your palms. The dough for buns should be soft and elastic, a little sticky and not very dense - do not fill it with flour!
Step 6:
Flour may be required exactly according to the recipe, or less, or a little more, but the dough must be soft. Line a baking sheet or baking pan with parchment and grease with oil. Divide the dough with your hands into 7 pieces of similar size. Roll them into balls with wet hands and place them on a baking sheet. If the balls don't turn out smooth and round, that's okay, they will straighten out during baking. Spread sour cream on top of the buns and sprinkle with sugar.
Step 7:
Place the baking sheet with the buns in a preheated oven at 180C for 20 minutes. But baking time may vary depending on the operation of your oven. The buns should be slightly browned on top. A bun is a sweet bun made from butter dough, twisted into a bow or a snail. Sugar is used as the inside; cinnamon is often sprinkled on top, and fondant is poured over it. Usually buns are prepared without the inside, like this, but now I prepared buns with cottage cheese.
I was constantly curious about the difference between a bun and a cheesecake. And the shape differs. Cheesecakes are oblong products, buns are round and are often prepared only with butter and sugar.
What should you pay attention to? Yeast. They vary and depend on the manufacturer. Always look at the instructions on the bags to see how much flour they are designed for. There is dry yeast that dissolves in water, and there is one that is mixed with flour. Again, the quantity, don’t let 3 teaspoons confuse you. In our area, the yeast is such that it requires more than usual for the dough to rise.
So, to make cottage cheese buns, we will need all the products listed in the list. You may need a little more or a little less flour, depending on its gluten content.
Dissolve sugar and salt in warm milk. Add vegetable and melted butter, also a full spoon of sour cream. Stir. I don't add eggs to the dough.
Mix flour with dry yeast.
Add flour and vanillin to the watery ingredients. Knead the dough into a soft dough; it should be completely sticky to your hands.
Cover the dough with film and a towel and place in a warm, draft-free space to rise.
Prepare the filling. Mix cottage cheese with eggs and sugar, add vanillin.
Divide the risen dough into two parts for ease of handling. Roll out part of the dough into a layer 6-7 mm wide.
Spread the cottage cheese over the surface of the dough. Roll into a roll.
Cut the cottage cheese roll into pieces 3 cm wide.
I prepared some snail-rolled buns and some round ones. For ordinary round buns, form even balls, then create a recess, for example, with a glass exactly in the center. Place the buns on a baking sheet.
Place cottage cheese in the round holes. Let the buns rise in a warm place, and then brush the surface with egg.
Bake buns with cottage cheese in an oven preheated to 190 degrees for approximately 20 minutes, until golden brown.

Would you like a recipe for perfect cottage cheese buns that never fails? I have one! The time for kneading the dough is only 5 minutes.
That’s why I call these buns “five-minute buns” or, in other words, “tender fluffies.” At this point you will understand why. And that’s all because...
The curd dough comes out tender, porous, and softly springs when you squeeze it in your hands. They really are like fluff! For breakfast - an ideal option. Write down the recipe quickly.
Tender fluffy cottage cheese buns without yeast
For production you will need:
- 2 testicles.
- 60 grams of sugar.
- 250 g of cottage cheese.
- 250 grams of flour.
- 2 tbsp. spoons of vegetable oil.
- vanillin.
- a pinch of salt.
- 7 g baking powder.
- 1 beaten yolk.
- sweet powder (for decoration, optional).
Turn on the oven in advance and preheat to 180 degrees. After all, in 5 minutes we will have the dough ready.
It does not need “rest” or proofing, because it is yeast-free. Hence the speed of making these buns. Recipe for the website A Million Tips.
So, break the eggs into a bowl, shake them with sugar and salt. And add cottage cheese. It should be lump-free and pasty. This is sold in briquettes in stores.
Whisk this mixture until smooth.
Next, pour in vegetable oil, add a pinch of vanillin. Add baking powder specifically to the flour and sift it all into the same bowl with the curd mass.
Let's take our time, gradually. Knead a soft, slightly sticky dough. In addition, we don’t add flour! It must remain soft.
On the table we roll out the dough into what is called “sausage”. And we divide it into 8 equal parts and each of them in half. From each piece we roll a careful, small bun.
Next, cover the baking sheet with parchment, which can be additionally greased so that it does not stick to the buns. We lay them out at a distance from each other so that they do not stick together, because... will increase in size.
Coat with loose yolk using a pastry brush.
Put it in the oven. Bake for 20-25 minutes. And while they are baking, you can brew coffee or squeeze out orange juice.
Sprinkle the finished buns with sweet powder if desired. I’m used to making these for my grandchildren in the morning. I got up, one or two, and the breakfast I needed was ready! They fly away and sometimes I don’t have time to blink an eye.
