Lady's whim cake

A breathtakingly tender homemade cake with shortcakes made with sour cream dough and a delicious light cream made with cream and boiled condensed milk. All cake layers are baked separately and with various fillings: ground poppy seeds, dried apricots, chocolate, prunes, raisins or nuts. The choice of filler is only at your whim. It's quite tasty. Try it!

Ingredients

  • For 1 cake (4 cakes in total)

Chicken egg 1 pc.

  • Flour 80 g
  • Sour cream 120 g
  • Sugar 120 g
  • Baking powder 1 tsp.
  • Starch 15 g
  • Additionally for black cakes

    Cocoa powder 1 tbsp.
    l. Fillings for 4 shortcakes

    Ground poppy seeds 100 g

  • Dried apricots 100 g
  • Prunes 50 g
  • Walnuts 100 g
  • Raisins 50 g
  • For impregnation

    Sour cream 10–20% fat 500-700 g
    For cream

    Cream 33% fat 500 ml

  • Boiled condensed milk 1 can

    The first step is to bake 4 shortcakes. Any of them must be kneaded and baked separately, because the dough contains baking powder. Mix all dry ingredients in a bowl.

    For dark cakes, in addition to flour, cocoa and baking powder, cocoa powder is added.

    Beat the egg and sugar until white with a mixer.

    Add sour cream, stir.

    Sift the dry ingredients into the egg mixture and knead into a homogeneous dough.

    Next, add poppy seeds to the kneaded dough, and dried apricots, walnuts with prunes and walnuts with raisins to the remaining shortcakes. You can take any ingredients in the shortcakes to suit your own taste.

    Pour the dough into a baking dish, which must previously be lined with parchment, greased with butter and dusted with flour.

    Bake the shortcakes one by one in an oven preheated to 170-180*C for 20-25 minutes. Check readiness with a wooden skewer.

    Carefully remove the freshly baked shortcake from the mold and leave it to cool on the parchment.

    In order for the shortbreads to come out very tender and moist, you need to soak them. For impregnation, mix sour cream with sweet powder.

    Remove the parchment from the cooled cake layers.

    Cut any shortbread lengthwise into 2 equal halves.

    We grease any shortbread with sour cream impregnation and leave it on the table for 1-1.5 hours. During this period of time, the sour cream should be absorbed almost one hundred percent into the dough.

    Beat the cool cream with a mixer until soft peaks form.

    Add boiled condensed milk into the whipped cream in several steps and stir until smooth.

    We assemble the cake, alternating the shortcakes and coating any of them with cream.

    Place all the shortcakes, not counting the top one, with the sour cream cut side up. And on the contrary, place the top crust with the baked side up.

    Grease the top and sides of the cake with cream and decorate to your liking.

    After production, the cake can be cut into portions immediately and served. Bon appetit!

    For my daughter-in-law’s birthday, I decided to make a “Lady’s Whim” cake. This cake is from the category of honey cakes.

    The dough is prepared according to the same principle as in the Spartak cake, although the ingredients are slightly different, but the cream is completely different. The cake is layered with cream based on boiled condensed milk and sprinkled with nut crumbs, due to this it has a rich nutty taste and smell.

    To make the cakes, prepare the ingredients according to the list.

    Mix the eggs with sugar, place in a steam bath and beat until white.

    Then add honey and butter while continuing to beat.

    Add cocoa and soda to a bowl. Bubbles will begin to appear in the consistency.

    Add flour evenly and knead into a soft dough.

    Divide the dough into 8 parts, roll into balls.

    Cut a piece of parchment into a square shape and use a rolling pin to roll out the dough very thinly. I rolled out the shortcakes with a diameter of 22 cm. The shortcakes will rise during baking. I rolled out 2 cakes at a time and baked them one by one. The shortbreads are baked very quickly, 4-5 minutes per shortbread at a temperature of 190 degrees.

    Some of my shortcakes came out smooth and perfect, ready for the upcoming work, but some had to be trimmed slightly because they were not baked perfectly round. Place the shortcakes in a stack.

    For the cream, beat the butter with a whisk, add boiled condensed milk and stir until smooth.

    Melt the milk chocolate in a water bath, cool slightly and gradually stir into the cream.

    For impregnation, prepare instant coffee with sugar, it is better that it is sweet. Place the first shortbread on a plate, pour coffee over it, it is better to do this with a brush.

    Then grease the shortbread with cream and sprinkle lightly with chopped nut crumbs. Nuts should be chopped in advance.

    In this way, coat all the shortcakes with cream. The top crust can also be greased with cream, but do not sprinkle with nuts. Mix the remaining nuts with crushed pieces of cake to sprinkle the entire cake.

    Prepare chocolate glaze. Heat the cream, add dark chocolate broken into pieces and after a minute stir until smooth.

    Pour the glaze over the top of the cake, spreading it out sparingly when it starts to drip down. Then slide foil under the sides of the cake to make it easier to sprinkle with crumbs.

    You can sprinkle the whole cake, but I only wanted to sprinkle it on the side, and I decorated the top with chocolate candies in colored glaze. Let the cake soak overnight (that is, in the dark) at room temperature, if not very hot, or on the balcony.
