Simple shortbread cakes “School”, which could be purchased in any pastry shop in the USSR (Union of Soviet Socialist Republics, also the Soviet Union - a state that existed from 1922 to 1991 in Europe and Asia) , almost all people probably remember . Such pastries were once quite cheap and at the same time were quite tasty. Not long ago, my pastry chef friend shared with me a traditional recipe for “School” cakes, which I present to your attention below.

Ingredients for “School” according to GOST

Officially, in Russian recipe textbooks this dessert was called “Shortcake with icing fondant.” The following products will be useful for its manufacture:

margarine - 250 g;

In Russian times, all pastries and cakes were baked only with margarine. Therefore, in the recipe for “Schools”, according to GOST, this particular product is used. But if desired, cakes, of course, can be baked in butter.

The icing on Russian cakes could be either light or black. If you want to prepare the second baking option, you need to take more cocoa - 1-1.5 tbsp. l.

How to knead the dough

To prepare the dough for “Schools”, remove the margarine from the refrigerator in advance. By the time the cakes are baked, this product should soften so that a fingerprint remains on it, but pressing it deeply with all this would be unrealistic.

Sift the flour and mix it in a bowl with baking powder. Cut the margarine into cubes and place in a mixer bowl. Add sugar, salt and vanilla sugar there. Beat margarine for 5-7 minutes. With the mixer running, add the eggs to the bowl. Beat the mixture for about 5 more minutes. until completely homogeneous.

With the mixer running, add flour into the bowl in large portions. Beat the mixture for about 1 more minute. As a result, you should have a soft but not sticky dough.

How to create a shortbread

Wrap the finished dough in cling film and set aside for 40 minutes. in the refrigerator. After cooling, roll out the dough on a sheet of parchment paper into a layer 3-4 mm wide. Place the crust on a baking sheet and place it in the refrigerator again for another 1-1.5 hours.

Fondant icing

Pour very cool water into a large bowl. This will be useful for cooling the finished glaze.

Pour sugar into a saucepan and pour out water. Place the container on low heat. Stir the syrup until it starts to boil. Once the mixture boils, stop doing this function, otherwise the syrup may become sugary. Cook the syrup for 3-5 minutes. before testing on a soft ball. In approximately 2 minutes. Before the end of cooking, add citric acid to the mixture.

Remove the saucepan with the prepared syrup from the stove and immediately place it in the bowl of water prepared in the first step to cool. This is necessary in order not to overcook the syrup and get exactly fudge, and not caramel. Transfer the cooled syrup (30-40 °C) into a mixer bowl and beat into a snow-white foam. Place the finished mixture in a bowl, cover with a damp towel and place in the refrigerator.

Beat everything well. Cut the dough, ready by then, into two equal parts, roll it out thinly and coat with the previously prepared interior. Roll it up, but so that the seam comes out from the bottom. Cut into small pieces and place on a baking sheet lined with parchment paper for baking.

From 1 roll there are approximately twelve pieces. And from the 2 that we have, accordingly, 20 four comes out. Place in an oven preheated to 180 degrees and bake for fifteen minutes. Place on a clean, dry towel and, once cool, use a sieve to decorate with sweet powder. The resulting shortbread cake tastes delicious. If you don't really like the taste of orange, you can simply replace it with any other jam or marmalade.

Don't forget that if the jam is liquid, add a spoonful of starch to it. Any housewife who has such a treat in her daily routine will always feel confident. Coffee shortcake. Recipe

Take 100 grams of butter, 1 egg and 150 grams of sugar. Grind it all. In a small bowl, mix a tablespoon of natural coffee, 2 tablespoons of sugar and 1/4 spoon of soda.

We crush the nuts with a rolling pin; you can, of course, use a blender, but this will not break up the pieces. We throw all our preparations into a blender and beat everything together. Take a baking sheet with parchment paper and place a teaspoon of the purchased dough on it. Place in the oven at 100 eight 10 degrees, after seven minutes reduce the temperature to 100 fifty. After 15 minutes the cake is ready. This cake is very good and delicious with a cup of dark or milk coffee in the morning for breakfast.

If you need to prepare something to intrigue little children and force them to eat, then “Champignons” shortbread cakes are the best choice. To make them, take 300 grams of butter and a glass of sweet powder, grind it and add 3 eggs. Separately combine a teaspoon of soda, 4 cups of starch and half a cup of flour. Later we add all this into the egg-oil mixture. Mix it all together until it forms a dough.

Divide the finished dough into balls approximately the size of a walnut. Take a plastic bottle, soak the neck in flour and roll it through the middle of the dough twice. Place the prepared champignons on a baking sheet lined with parchment. Place all this in an oven preheated to 200 degrees and after 20 minutes the baking is ready. They go perfectly and deliciously with tea, but better, of course, with milk.

And the most important thing is that it doesn’t take much time to make them, and the most ordinary products are used, which are available in any refrigerator.

And if you have absolutely no time for making, then you can prepare the “Minute” cake . Take 2 processed cheeses, grate them, add melted and then cooled and grated margarine. Composition of goods

  • 200 grams of small sweet sand;
  • one chicken egg + one yolk;
  • a pinch of salt;

  11. Grease one shortbread with half of the apple jam (from the total mass), not reaching the edges.
  12. Advice. I used fragrant apple jam, which I prepared in the fall according to a recipe from our website.
  13. Using spatulas, lift the second cake and place it on the first, grease with the remaining jam, not reaching the edges.
  14. We cut off the uneven edges that we did not smear with jam and crush them into crumbs with our hands.
  15. Sprinkle the top cake with the purchased crumbs and put the biscuit in a cold space for several hours: the cakes should be thoroughly soaked.
