Thin custard pancakes with holes on kefir with boiling water
Thin custard pancakes with holes on kefir with boiling water
Hello, dear friends! Now we have thin openwork pancakes with holes again. We will only make the dough choux - using kefir and boiling water.
My family absolutely adore this pastry and constantly demand to prepare a delicacy for breakfast, so I try to vary it. From time to time I make them with milk, they also turn out thin, patterned and very tasty. From time to time we eat them with condensed milk or sour cream, and from time to time I wrap them with different insides.
It is necessary to talk about the inside separately, so in one of the subsequent articles I will certainly tell you what we wrap in pancakes. There, flights of fancy never cease to amaze even me.
As I wrote earlier, for the most successful result it is necessary that all products be at the same temperature. And the flour must be sifted through a sieve. If your testicles are small, you can add one more thing to the recipe. You don't have to add salt and sugar according to the recipe; use your own preferences here. From time to time I add vanillin to the pancake dough. Well, let's get started already.
A little advice - when the dough is 100% ready, you shouldn’t stir it any more.
Kefir pancakes with boiling water - a sure recipe for thin pancakes
Each housewife usually has her own recipe according to which she prepares pancakes. But basically the ingredients are similar. The only difference is in the proportions and method of kneading the dough. This option works out best for me, which is why I consider it the most correct.
The following products will be useful to us:
- Drink – 0.5 l
- Flour - 300 gr
- Testicles - 2 pcs.
- Boiling water - 200 ml
- Vegetable oil - 3 tablespoons
- Salt - a pinch
- Sugar - 3 tablespoons
- Soda - 0.5 teaspoon
Manufacturing stages:
1. Break the eggs into a suitable container. Add salt and sugar there. Beat with a whisk or fork until foam appears. I don't like to use a mixer when making pancake batter.
2. Then pour the drink into the egg mixture. Stir moderately. By the way, instead of kefir, you can also add yogurt, sour milk or even fermented baked milk.
3. Place the water on the fire and bring to a boil. Then add soda to it, stir and pour into the mixture in a narrow stream. Stir until smooth.
4. Now evenly, in several additions, add sifted flour to the mixture and stir until completely dissolved and lumps disappear. Then add vegetable oil, stir again and the dough can be considered ready.
5. Heat the frying pan well, grease the bottom with vegetable oil and pour a little dough into it. To ensure that it is perfectly distributed throughout the pan, make radial movements with it, slightly tilting it in different directions. Then the dough will spread over the surface as it should.
6. Bake one side first until golden brown. And then turn it over to another and also wait for it to turn brown. The time for each side is approximately 1 minute.
7. Place the finished pancakes on a plate. You can put a small piece of butter on top. If desired, they can be wrapped in triangles. They turn out thin, rosy and very tasty.
Custard pancakes made with kefir and boiling water with holes, like grandma’s
Well, what grandmother doesn’t bake pancakes for her grandchildren? And we remember this taste from our youth and we know that grandma always had the most delicious ones and we consider her recipe to be the best.
Ingredients:
- Drink – 200 ml
- Flour - 1.5 cups
- Egg - 1 piece
- Boiling water - 100 ml
- Vegetable oil - 1 tablespoon
- Salt - 1/3 teaspoon
- Sugar - 1-3 tablespoon (to taste)
- Soda - 1/3 teaspoon
Manufacturing:
1. Pour the drink into a deep bowl. Add egg, salt and sugar there. Also add flour and stir everything well until smooth, so that there are no flour lumps left.
At first the dough will be slightly thick. Nothing terrible, that's how it should be.
2. Boil water and add soda. Stir until completely dissolved and pour into the dough. Mix it well. Then add vegetable oil and stir again. It's ready now.
3. Heat the frying pan well and grease with oil. Pour in a little dough and spread it over the entire surface. Bake until golden brown on both sides.
4. Do the same with the remaining dough. The pancakes turn out thin, delicate, with holes. And most importantly, they are very tasty and tender, they melt in your mouth.
The usual recipe for delicious openwork pancakes on kefir without eggs
There are times when you were planning to bake pancakes for breakfast, but at one point you ran out of eggs or forgot to buy them. Not a failure, this bake can be created without them. The main thing is to maintain the right proportions.
Ingredients:
- Drink – 500 ml
- Flour - 250 gr
- Cool boiling water - 200 ml
- Vegetable oil - 3 tablespoons
- Salt - 0.5 teaspoon
- Sugar - 2-3 tablespoons
- Soda - 1 teaspoon
Manufacturing:
1. Pour the drink into a comfortable container. Pour the sifted flour into it and stir it into a homogeneous mass until the flour lumps are completely dissolved.
2. Then add salt, sugar to the mixture and mix. Dissolve the baking soda in boiling water and also pour it into the dough. Stir again properly. At the end, pour in the vegetable oil and stir until smooth. Do not stir the dough any more.
3. Now heat the frying pan, pour in or grease it with vegetable oil. Pour a little dough with a ladle and spread it over the entire surface. Fry the pancake until golden brown, then turn it over and fry on the other side.
4. Fry all other pancakes in the same way. Then pour the tea, take out the jam (sour cream, condensed milk, honey, etc.) and enjoy a beautiful breakfast.

- 1 cup boiling water (250 ml.)
- 2 testicles
- 1-2 tbsp. spoons of sugar
- 0.5 tsp soda

At first, I prepared all the necessary products.
How to cook pancakes with kefir, tender, openwork with holes
We prepare the dough for pancakes, it is easier to prepare than usual. Beat 2 eggs into a bowl. It is better to take large or medium-sized eggs. Whisk everything together.
Add salt and sugar, pour in 500 ml. kefir You can take homemade or store bought. I bought village milk, poured it into a jar, it turned sour and I prepared custard pancakes with kefir.
You can take a drink with 2.5% fat content, I didn’t take less for the test. I usually take 2.5%.
I pour out the flour. The flour must be sifted beforehand. I used two glasses of flour.
I beat the dough, we want the dough to be homogeneous and without lumps. Don’t be alarmed, the dough comes out thick, just like it should be for pancakes.
Because we have choux pastry for pancakes, I prepared boiling water by boiling water earlier. Dissolve baking soda in a glass of water.
I pour boiling water into the dough, actively stirring it with a whisk, and in this way we brew.
Don't worry, nothing will cook in the dough. The result is a homogeneous pancake batter. Pour in the vegetable oil, mix everything well and set the bowl with the dough at room temperature.
I leave the dough for 10 to 30 minutes. As my grandmother used to say, so that the ingredients become friends with each other and become the same temperature. In addition, all the lumps in the dough spread out.
I fry pancakes in a heated frying pan. For the first pancake, I pour a little vegetable oil into the frying pan.
I scoop up half a ladle of dough. My frying pan is 15 cm in diameter, so small.
Look, the custard pancakes immediately melt into the hole. Completely any pancake in the hole.
Turn over and fry on the 2nd side. Pancakes fry in a heated frying pan very quickly. I would like to emphasize the fact that my frying pan has a non-stick coating.

This is how they look in the pan
Thanks for the recipe. Everything worked out. It's true that some minor adjustments had to be made. Because My drink was thick, the dough came out very thick. I diluted it with an additional amount of kefir and added a little soda. I have a Teflon pancake pan D22 cm, the dough needs to be thick enough to fill this pan (a mixture of thick sour cream). Oil only for the first pancake, later fried in a dry frying pan. And I realized that it is necessary to fry it over medium heat (so that the bottom does not burn and all the bubbles burst on top), and twist when the pancake is dry on top, then you get a beautiful openwork on the 2nd side and you can see all the holes. I also added a little less sugar, because... We eat pancakes with jam or condensed milk. thanks again for the recipe.
Thanks for the photo of the finished pancakes! I'm glad you liked the recipe)))
At the moment I made pancakes. They came out excellent, tasty, slightly crispy around the edges. I always made it with milk, because kefir made it sour and seemed raw on the inside. And these are cool. also thin and with holes.
These are the rubberiest pancakes I've ever eaten.
Ira you are absolutely right. I have never baked oak-rubber pancakes like these before. So I decided to try the newest method and was completely disappointed.

They can be served with honey, jam, sour cream, or wrapped with unsweetened interior (then do not add vanillin to the dough).
