Recipe for Asparagus Soup:

Prepare the necessary products.

Wash the asparagus. Cut 1cm off the thick side and discard.

Cut the asparagus into pieces of 1-2 cm (not counting the tops - we leave them for decoration).

Place in a saucepan with salted water.
Let it boil. Then add the asparagus and let it simmer for 2-3 minutes. I put the pieces and tops in separate pans so that I wouldn’t have to divide them later.

Chop the onion and fry until transparent. Let the potatoes cook.

Cut the fillet into cubes and add to the onion. Fry for a few minutes.

Pour in broth, wine, cream and bring to a boil.

Place the boiled potatoes and asparagus in a blender and blend until smooth (pour in a couple of ladles of cream sauce to make blending easier).

Pour the sauce and asparagus-potato puree into the pan and let it boil.
Salt and pepper to taste.

The soup is ready! Place a couple of tops of asparagus and croutons on a plate.

Some time ago, asparagus was considered the food of rulers, but at the moment this vegetable is publicly available - you can buy it in stores, at the market, and even grow it on your own plot.

The inhabitants of Old Egypt, who intensively consumed asparagus for healing purposes, knew about its beneficial characteristics. Asparagus contains substances called coumarins, which are responsible for regulating blood clotting (the internal environment of the human and animal body) , which means preventing the formation of blood clots. As it should be, asparagus has a beneficial effect on the circulatory system as a whole, and is also good for the heart and blood vessels.

In addition, asparagus is low in calories and, therefore, suitable for people who care about their figure. And folic acid, which is part of the chemical composition of asparagus, strengthens hair and prevents the formation of wrinkles.

It can be used in various forms. Asparagus makes very tasty soups, main courses, salads, desserts and even drinks.

The most common option is to simply boil the asparagus in bubbling salted water for no more than 5 minutes, otherwise it will become hard and lose its color. Various creamy sauces are perfect for asparagus prepared in this way.

Asparagus makes excellent soups, and there are a huge number of recipes for making them - cream soup, puree soup, soup with vegetable or meat broth, snow-white asparagus soup...

Potato soup with asparagus and salmon

In order to prepare asparagus soup, firstly, you need to thoroughly wash the asparagus. Then cut off the tops and boil them in a small amount of water. Pass the remaining asparagus, cooked unpeeled until tender, through a sieve and mix with sugar, butter and prepared asparagus tips. Bring everything to a boil. Beat the yolks with milk, lemon juice and salt. Mix all. The soup is ready. Bon appetit!

But this is not the only option for making such a soup. There are a huge number of recipes for asparagus soup. For example, you can make mashed potato soup with salmon. To do this, you first need to prepare fish broth - boil salmon in 1.5-2 liters of salted water (although you can replace it with any other fish if desired) with the addition of dark pepper, dill, bay leaf and onion cut in half.

The finished fish broth needs to be strained, add two large potatoes cut into cubes. Asparagus must be prepared using the same method as described above. Finely chop the asparagus stems and add to the bubbling broth with potatoes. Let it boil until the potatoes are ready, and then grind everything in a blender. There is a recipe for asparagus puree soup with meat broth. In order to prepare such a soup, you will need, in addition to the broth and asparagus itself, cream, flour and butter. Asparagus is prepared in the same way as in previous recipes. A dressing is prepared from flour, butter and boiled asparagus, to which you can add a little parsley or dill. The prepared dressing is diluted with meat broth, the asparagus tops are placed in it and boiled for 15-20 minutes. You can serve this soup with sour cream and croutons.

This asparagus soup recipe can be supplemented with broccoli. In this case, along with the asparagus tops, you need to add broccoli that has been washed and disassembled into florets in advance. This soup can be seasoned with sour cream before serving.

To vary your daily menu, you can prepare creamy asparagus soup.

  1. To make it, you need to simmer the leeks in butter for 10 minutes in a thick-bottomed pan, without letting them fry.
  2. Add diced potatoes and saffron and simmer for another 10 minutes.
  3. Then you need to add the cooked asparagus and water and boil until tender (approximately 10 minutes).
  4. Grind the finished soup with a blender, add cream, mole and ground white pepper.
  5. Pour the soup into bowls and garnish with dill. It should be noted that this soup comes out even tastier from snow-white asparagus.

By the way, snow-white and greenish asparagus are not different varieties, but simply different feeding technologies. In order for the asparagus to be snow-white, the shoots and rosette are covered with earth. This process is quite labor-intensive, which is why it is more expensive than the green one. For those who are watching their figure and following a diet, green asparagus soup is an ideal light lunch option. The method of its production is no different from those listed above, the only aspect will be that greenish asparagus is the coarsest, so it needs to be cleaned most painstakingly.

Tasty and healthy asparagus can not only be boiled: asparagus dishes come in a huge variety. You can, for example, use asparagus to make soups, because spring and summer are the right time to include light vegetable soups in your diet.

Tender cream soup is a beautiful summer dish. To make this asparagus dish we will need the following products:

  • 1.5 liters chicken broth
  • 0.5 kg asparagus
  • 3 onions
  • 1 tbsp. cream
  • 5 tbsp. l. butter
  • 2 tbsp. l. flour
  • allspice
  • salt

Clean the asparagus and cut into pieces. Peel the onions, cut them and sauté in 2 tbsp. l. butter. Melt the remaining butter in a saucepan, add flour and aromatic pepper. Stir, add broth and bring to a boil. Add the asparagus, reduce the heat to low and cook for 20 minutes. Strain the soup, rub the grounds through a sieve and mix with the broth. Add cream, salt to taste. Heat, without bringing to a boil, and serve.

Chicken soup with asparagus

Almost all asparagus dishes can only be prepared in season, when the freshest asparagus is available. And this soup requires canned asparagus, so it can be cooked all year round. To prepare it, we will take:

  • 300 g boiled chicken (white meat)
  • 100 g canned asparagus
  • 100 g canned corn
  • 12 champignons
  • 2 tbsp. chicken broth
  • 2 tbsp. l. cornmeal diluted with water
  • 0.5 tbsp. l. sea ​​salt
  • 1 tsp. sesame oil
  • green onion

Bring the chicken broth to a boil, add the chopped champignons and cook for 2-3 minutes over low heat. Add corn flour diluted with water and cook until thickened, stirring. Then reduce the heat, add asparagus, corn and thinly sliced ​​chicken. Heat well over low heat and add salt. Before serving, add sesame oil and sprinkle with finely chopped green onions.

Beef soup with asparagus

For the heartiest of asparagus dishes, make this Beef Soup with Canned Asparagus. We will need to take the following products:

  • 4 tbsp. chicken broth
  • 130 g sirloin beef steak
  • 100 g canned asparagus
  • 2 egg whites
  • 2 tbsp. l. dry sherry or rice wine
  • 2 tbsp. l. diluted cornmeal
  • 1.5 tsp. sea ​​salt
  • ground white pepper

Pour the broth and wine into a large saucepan, add salt and bring to a boil. Reduce heat and add cornmeal, stirring continuously. Increase the heat, bring to a boil again, stirring constantly, and simmer until thickened. Reduce the heat again.

Cut the beef steak very thinly, add salt and season with ground white pepper. Finely chop the canned asparagus. Place the steak and asparagus in the broth and cook for 10 minutes. Lightly beat the egg whites, bring the soup to a powerful boil and pour the whites into it in a narrow stream.

Salmon and asparagus soup

Asparagus mixes well with fish, so you can include asparagus dishes and, for example, salmon in your diet. Try to cook, say, this soup. To do this, take the following ingredients:

  • 1 liter vegetable broth
  • 400 g white asparagus
  • 400 g greenish asparagus
  • 350 g salmon fillet
  • 300 g spinach
  • 3 tbsp. l. flour
  • 3 tbsp. l. cream
  • 2 tbsp. l. oils
  • 2 onions
  • green onion
  • snow white pepper
  • salt

We clean the asparagus (snow-white - to the top, greenish - only in the lower third) and cut into strips about 3 cm long. We sort the spinach. Peel the onion and cut into pieces. Heat the oil in a saucepan, add the onion and fry for two minutes. Then pour in the flour and let it simmer for a little while. Pour in the broth and bring to a boil.

Add asparagus to the broth and cook for 8 minutes. Then add spinach and cook for another 4-5 minutes. Cut the salmon fillet into long, thick strips and add to the soup. Remove the pan from the heat and let stand for three minutes. Pour cream into the soup, salt and pepper to taste, sprinkle with finely chopped green onions.
