What do you need to take for a banana cake?

For a layered banana cake for a small company you will need:

  • bananas – 500 gr;
  • cookies – 500 gr;
  • sugar – 100 g, you can replace it with powder;
  • sour cream or yogurt – 100 g;
  • gelatin – 10 g;
  • water – 1 glass;
  • cottage cheese 5 or 9% fat – 350 g;
  • butter – 50 g;
  • condensed milk – 1/3 can;
  • kiwi - 3 pieces.

Recipes with no-bake bananas say that the fruit should be elastic, without black spots, with a thick skin. It is better to choose slightly unripe branches. Pieces of sweetness should hold their shape and not turn into a paste when lightly pressed. In overripe fruits, the flesh quickly darkens, and the appearance of the sweetness will be spoiled.

Cookies for the cake are purchased based on your own taste. An original delicacy is created by combining several types of different textures. It could be:

  • cracker;
  • “fish”, they can be used in their entirety to decorate the cake; salted “fish” add a special note to the cake;
  • biscuits, with them the delicacy will not turn out very airy, but it will be stored longer in the refrigerator;
  • regular oatmeal cookies or with dried fruits;
  • regular biscuit cookies without glaze;
  • home-baked cottage cheese, in which case the cake will become even healthier due to its high protein content.

To decorate the finished cake you can use:

  • grated or melted chocolate;
  • nut crumbs;
  • coconut flakes;
  • Nesquik instant cocoa or regular powder;
  • colored confectionery powder;
  • pieces of fruit (not counting hard apples and pears);
  • the freshest berries;
  • roasted sunflower or pumpkin seeds.

Making without baking

  1. First, in a small saucepan, which can later be put on the fire, soak the gelatin in a glass of warm water. It is left until it swells.
  2. At this time, crush the cookies. Place it in a thick plastic bag, take a meat hammer or rolling pin, and start tapping the bag, turning it over from time to time. Fresh “Jubilee” cookies can be crushed without removing them from the packaging.
  3. Beat cool sour cream or yogurt with sugar using a mixer or blender, the milk mixture comes out fluffy.
  4. Combine whipped sour cream or yogurt with cookies, knead with a spoon until the mixture is homogeneous. The resulting mass is placed in the refrigerator. It can be immediately divided into two parts; if desired, a little instant coffee or cocoa is added to one.
  5. The gelatin has already swollen, put the saucepan on the fire, stirring constantly, and bring to a boil. If the gelatin dissolves earlier, immediately remove the saucepan from the heat. Gelatin should cool to 30-35°C.
  6. Prepare the layer. To do this, the cottage cheese is passed through a sieve so that a homogeneous mass comes out. Add condensed milk, melted butter, and dissolved cooled gelatin. Carefully beat the mixture and put it in the refrigerator.
  7. Take a cake pan, grease it with oil or line it with cling film, parchment paper for baking, it also needs to be slightly greased. To do this, use butter or vegetable oil without flavor.
  8. Kiwis are peeled and the skin is removed in a thin layer from the whole fruit. Cut the fruit into thin, almost transparent rings, and divide the purchased amount approximately equally. You will need to create two layers from the kiwi.
  9. Start assembling the cake. First, lay out half the cookie mixture, level the layer and compact it. The top layer is covered with kiwi plastics, they are laid overlapping each other so that a greenish layer is clearly visible on the cut of the cake.
  10. Then carefully spread the curd mixture. It should not be compacted too much; smooth it out comfortably with a wooden spatula. Carefully place the remaining kiwi rings on top of the curd layer. Then comes the final layer of cookie consistency. To avoid crushing the lower layers, you first need to form a layer from the mass using a plastic bag. Then carefully transfer it into the mold.

How to create a cake from cookies, bananas and sour cream

  1. We dip each individual cookie in milk, this way they will become softer and soak up the inside more quickly.
  2. We choose any suitable form, line it with cling film and lay out the first layer of cookies. I fit 3 cookies in a row, approximately 8 cm long. Immediately brush with sour cream. Sprinkle a little sugar on top of the sour cream to taste.
  3. Peel the bananas and cut into circles. Place bananas on top of sour cream.
  4. We repeat all the layers in this way: cookies, sour cream, a little sugar and bananas. Finish the cake with a layer of cookies. We ended up with 4 layers. Cover with cling film and place in the refrigerator for a couple of hours. If you plan to eat the cake only the next day, then soaking the cookies in milk is not necessary. The cake will be soaked in sour cream overnight (that is, in the dark) and the cookies will become soft in any case.
