Yeast dough for pizza. Ingredients for 1 huge pizza:

  • 200 grams of flour (this is about 1.5 cups of flour with a volume of 250 ml) + 2 level tablespoons for sourdough;
  • 150 ml warm water (40-50 degrees);
  • 1.5 tablespoons sugar;
  • 0.5 teaspoons salt;
  • 5 grams of dry yeast;
  • 1.5 tablespoons of vegetable oil.

Vegetarian pizza at home, how to prepare:

1. First, make a yeast starter - mix water, sugar and 2 tablespoons of flour. The water does not have to be very cool or very hot: when it’s cool, the fermentation process slows down; when it’s hot, the yeast dies.

2. Place the starter in a warm space for 20-30 minutes; a foamy “cap” should form on the surface during this period of time.

3. In a separate bowl, mix flour and salt. Pour in the starter and vegetable oil and knead the dough. It should turn out quite dense. Leave the dough in a warm place (you can place the container with the dough in a huge bowl of warm water) for another 20-30 minutes, during this period of time it should increase in volume by 1.5-2 times.

Pizza sauce

While the dough is rising, it’s time to grate the cheese, prepare additional ingredients for the inside, and, of course, prepare the sauce. For the sauce we will need:

  • 2 tablespoons of thick tomato paste (it is important that the paste is thick, undiluted with water and starch; for example, Pomodorka paste is suitable);
  • 30 ml water;
  • 0.5 teaspoon salt;
  • 2 level teaspoons of sugar (optional, in this case the sauce will be sweet and sour);
  • a couple of pinches of dark pepper.

Just mix all the ingredients until smooth and the sauce is ready!

Homemade vegetarian pizza - assemble, bake and enjoy the result

1. Punch down the risen dough, lightly sprinkle the table with flour and roll it into a round layer. Keep in mind that the dough will rise slightly during baking; make it thinner than you want the resulting pizza to be.

2. To transfer the dough to a baking sheet, use a rolling pin: wrap a layer of dough around it, then place it on a baking sheet previously greased with vegetable oil and sprinkled with flour.

3. Grease the dough with sauce, sprinkle with cheese (at least 150 grams for this size), add additional entrails if desired (see entrails options below). Bake in a previously preheated oven at 220 degrees for 15-20 minutes until golden brown.

Cheese and entrails

1. Vegetarian pizza “Margherita”. For it, not counting the dough and sauce, we will need at least 150 grams of mozzarella cheese without rennet. You can use other cheeses, but mozzarella specifically produces an impeccable cheese crust. If it is difficult to find or expensive, a closer option will be made with suluguni cheese.

2. Vegetarian pizza “4 cheeses” . For the most appetizing and juicy cheese component of pizza, you can mix a number of types of cheese. 50 grams each of mozzarella, cheddar cheese, parmesan and tilsiter will come in handy (you can experiment with the composition of the cheeses, but for the vegetarian option it is important that the cheeses are without animal rennet).

3. Vegetarian pizza with tomatoes, olives and Adyghe cheese . For this option we will need:

  • 100 g mozzarella;
  • 100 grams of small tomatoes (can be cherry);
  • 50 grams of olives;
  • 100 grams of Adyghe cheese, cut into cubes.

Grate the mozzarella, cut the tomatoes in half or into small circles, and cut the olives in half. Sprinkle the mozzarella on the pizza, then distribute the other ingredients sparingly.

Description of the process of making vegetarian pizza

Pour water into a saucepan, add salt, bay leaf, cauliflower, broccoli, green beans, boil until tender. While the vegetables are cooking, cut the zucchini and tomato into thin half rings. Cut the sweet pepper into narrow strips. We don’t put the chopped vegetables together; they lie on different plates. Three cheeses on a large grater. When the vegetables are cooked, drain the water and let them drain.

  • Yogurt – 200 gr;
  • Soda, quenched with apple cider vinegar - 1 teaspoon;
  • Sea salt – 1 teaspoon;
  • Honey – 1 teaspoon;
  • Flour – 250-300 gr;
  • Olive oil – 5 tablespoons;
  • Butter – 5 g;

Making the dough:

Add soda to the yogurt and stir. Then add salt, honey, olive oil and mix again. Then add flour and knead into a stiff dough. First add 2/3 of the flour, mix, then, as needed, add more flour. Because any type of flour behaves differently, the weight of flour in the ingredients is indicated approximately. The dough doesn't have to be very watery and stick to your hands, and it doesn't have to be very tough. Sprinkle a cutting board generously with flour, place the dough on it and roll out into a narrow layer.

Making vegetarian pizza

Grease the pizza pan with butter, lay out the dough and begin to decorate it, first, with boiled vegetables, laying them out sparingly, alternating with each other. Then, sprinkle chopped zucchini on top of the boiled vegetables, and place chopped tomatoes on top of the zucchini, distributing them sparingly over all surfaces of the vegetables. In order to give our pizza a fragrant and light spice, we sprinkle the vegetables laid out on the dough with seasoning.

  2. Cut the mushrooms into slices, place in a dry frying pan without oil, put on low heat, add a little salt. Wait for the liquid to begin to evaporate from them.
  3. Simmer the mushrooms in their juice until done.

  • one and a half cups of flour;

  • 350 g flour;

  • 1 tablespoon sunflower oil.

  1. Beat the eggs into the sour cream, add a spoonful of salt, and beat everything. Add flour, knead into a thick but not stiff dough.

  • 15 g dry yeast;
  • 1 tablespoon sugar;
  • three quarters of a glass of water;
  • 2 tbsp. flour;
  • salt;
  • 2 eggplants;
  • 40 g vegetable oil;
  • 50 g tomato paste;
  • Provençal herbs – at your discretion;
  • reddish onions;
  • 60 g vegetable oil;
  • 100 g cheese.

It is not necessary to remove the skin from the eggplants. For piquancy, you can add garlic passed through a press to the tomato paste.

  1. Heat the water to 37°C, dissolve sugar and yeast in it. Remove the container for 20 minutes in a warm space.

  3. Cut the eggplants into slices and onion into rings. Drain in a colander and scald with boiling water to remove the bitterness.
