The main component of borscht is sorrel, which not only gives the dish a special sourness and beautiful green color, but is also a real storehouse of vitamins and microelements. It has a beneficial effect on the condition of our body. In addition, borscht is prepared both with and without meat.

1. Peel the potatoes, rinse and cut into medium-sized cubes. Peel the onions and rinse. Place the vegetables in a cooking pot.

2. Fill the potatoes with drinking water and send them to cook on the stove.

3. Immediately put the soup seasoning into the pan and boil. Reduce temperature and simmer covered for 20 minutes.

4. Rinse the sorrel and dry with a cardboard napkin.

5. Take cuttings from the leaves and chop the leaves. Chop it coarsely so that in the finished soup they do not turn into an incomprehensible mass.

6. Boil hard-boiled eggs, cool in cold water and peel off the shells. Cut it into medium sized cubes.

    2. Wash the potatoes, peel them and cut them into small pieces, as you usually cut them for soup.

    3. Wash the rice well under running water a couple of times so that all the dust comes off.

    4. Take a deep saucepan, pour water into it and place on medium heat. Place potatoes, rice and greens with green onions into the pan. Cook, stirring, add salt.

    5. Pour a little vegetable oil into the frying pan and add the previously washed and chopped sorrel. Fry it, stirring, for about 4-5 minutes over medium heat.

    6. Carefully add the fried sorrel from the frying pan to the soup, continue to cook over medium heat, stirring.

    7. Beat the eggs well with a whisk in a separate bowl, but do not overdo them, they should not turn snow-white. Gently add the flour and beat everything together a little.

    8. Add the beaten eggs to the soup, stir everything again. Cook for about 7-10 minutes more and turn off. Pour the soup into bowls, add a spoonful of sour cream. Green borscht without meat is ready, bon appetit!
