A special preparation can be served to the table after a certain number of days. You can regulate the spiciness of stuffed tomatoes without the help of others by increasing or decreasing the amount of hot additives.

Ingredients:

  • 3 kg of greenish tomatoes;
  • 3 pods of hot pepper;
  • 3 large heads of garlic;
  • 1 bunch of parsley;
  • 2 bay leaves;
  • 6 peppercorns;
  • 1 liter of water;
  • 3 tbsp sweet sand;
  • 1 tbsp salt;
  • 6 tbsp 9% table vinegar.

Manufacturing

First, finely chop the parsley. Chop the hot pepper, peel the garlic and mix with herbs. We pass these products through a meat grinder. If you want to get the most spicy dish, then do not remove the seeds from the pepper.

Place a couple of dill umbrellas, 2 sprigs of dill and peppercorns at the bottom of a sterile jar.

Try to pickle tomatoes of a similar size. On the fruits we make cuts almost to the end, as shown in the photo below. Fill them with the prepared mixture of garlic, pepper and parsley.

Fill the jar and pour boiling water. Cover the container with a lid and leave for 20 minutes.

In the next step, pour the liquid into a saucepan, add sugar, salt and vinegar. Place on the stove and bring to a boil.

There is another exciting manufacturing option. We will use celery in it, but we will not add vinegar. This preparation is not only spicy, but also very tasty. Therefore, be sure to use this preparation method.

Ingredients:

  • 1 kg of greenish tomatoes;
  • 50 g hot pepper;
  • 1 bunch of celery greens;
  • 50 g garlic;
  • 1 liter of water;
  • 2 tbsp table salt.

Manufacturing

Sort out the tomatoes and rinse well with cool water. Then we make the deepest cuts, but not all the way, so that the fruit retains its integrity.

To make the inside, grind garlic, hot pepper, and celery leaves. Mix everything thoroughly.

Now we stuff the tomatoes with the prepared vegetable mixture.

We sterilize the jars in advance. For clarity, in the recipe we will marinate the tomatoes in a bowl. Place several stalks of celery on the bottom of the container, and then compactly distribute the stuffed fruit.

To make the marinade, add table salt to a pan of water. Bring the liquid to a boil.

Fill the container with stuffed tomatoes with hot brine.

Ingredients:

  • 1.5 kg of greenish tomatoes;
  • 2 pods of hot pepper;
  • 1 head of garlic;
  • 125 g salt;
  • 1 sprig each of parsley, cilantro and basil;
  • Bay leaf.

Manufacturing

  1. To create the filling, chop the garlic and pepper. If you want to get the most special dish, then you do not need to remove the seeds. Mix with chopped herbs;
  2. Wash the tomatoes and dry them with a cardboard towel. We make deep cuts;

To prevent the skin of the fruit from cracking, make several holes in them with a toothpick or fork.

  1. Stuff the tomatoes and place them compactly in a pan or enamel bucket;
  2. To make the brine, place a container of water on the stove, add bay leaf and salt. Bring to a boil;
  3. Pour the marinade over the tomatoes and leave under pressure for three days.

Ingredients:

  • 5 kg of greenish tomatoes;
  • 10 pods of hot pepper;
  • 300 g garlic;
  • 5 bunches of any kind of greenery;
  • 3 tbsp sugar;
  • 5 tbsp salt;
  • 400 ml 9% vinegar.

Manufacturing

We wash the fruits under running water, remove the stems and cut into quarters.

In the next step, mince the garlic and pepper and mix this mass with chopped herbs. Add sugar, salt and vinegar to the tomatoes. Leave for one hour at room temperature.

Then the appetizer must be boiled for 15-20 minutes. When the salad has cooled, we distribute it into sterile jars and put it in a cold space.

Previously, I did not adore greenish tomatoes, until New Year’s Eve when I tried them with my old friend from Armenia. It’s summer at the moment, so I remembered this recipe and have already closed 5 jars for the winter. I would like to offer it for you too, I am sure that you will like these tomatoes. But still make 1-2 containers for testing (after all, everyone has different tastes).

To make greenish tomatoes for the winter, take the following products.

For 5 kg of greenish tomatoes (tomatoes should not be brown):

– bell pepper – 5-6 pcs,

– chili pepper (no matter what color) – 3 pcs.,

– garlic – 2 heads,

– bay leaf – 1 piece,

– dill – 1 large bunch,

– dark peppercorns – 4-5 pieces per 1 liter jar,

– sugar – 1.5 cups,

– salt – 1 glass (200g),

– vinegar 6% – 1 glass,

– aspirin – 1 tablet per 1 liter jar

Recipe for making greenish tomatoes:

1. Prepare seasonings: cut the dill, peel and chop the garlic. You can chop everything in a blender or chopper.

2. Cut the peppers – bell and chili

3. Mix all seasonings into one mass

4. Let's start with tomatoes. THEY need to be cut into slices into approximately 6-8 pieces of any size.

5. Sterilize containers for tomatoes.

6. We put our tomatoes in layers in sterilized jars (I take 1 liter jars), between the layers we certainly sprinkle the prepared seasonings with peppers.

7. After placing the tomatoes, put 1 aspirin pill in each jar

8. Now we are making the brine. To do this, pour 4 liters of water into a large saucepan and bring to a boil. Add salt, sugar and vinegar.

9. Pour this brine into jars and screw them on with lids.

10. Turn the containers with tomatoes upside down, cover with a warm towel and leave for 1-2 days.

Regarding aspirin: if it bothers you, then it is not necessary to add it. BUT then we carry out additional procedures: after pouring the brine into the jars, it is necessary to sterilize for about 20 minutes with the lids slightly covered and only then close.

Green tomatoes in Armenian style, the most delicious preparation for the winter

Armenian civilization has long been famous for its culinary skills. Spicy and fragrant dishes of this cuisine, despite the great spiciness, constantly cause ecstasy with their indescribable taste. And the Armenians are great masters in making preparations for the winter.

I would like to offer you one of the most delicious recipes for preparation in Armenian, which will amuse those who really love tomatoes: the most delicious, special greenish tomatoes, which are excellent as an appetizer for a gala dinner! The recipe is very simple, so it won’t cause any difficulties even for someone inexperienced in making home preserves.

As is clear, there is a possibility of severe poisoning when eating greenish fruits, but you should not be wary of preparations made from them - the toxic substance they contain is destroyed by temperature, but the benefits from consumption are enormous, because greenish tomatoes – is the strongest natural antioxidant and immunomodulator.

Ingredients:

  • greenish tomatoes - 2.5 kilograms;
  • parsley - a bunch;
  • garlic – 150 gr;
  • vinegar – 180 ml;
  • salt – 100 g;
  • bitter pepper (chili) – 5 pods;
  • water – 250 ml.

How to cook greenish tomatoes in Armenian style

We select fruits for harvesting that are not very large in size, dense, without warped areas on the skin. Be careful when working with pepper - its juice can burn your skin! If desired, the amount of spiciness in the recipe can be varied.

Carefully wash the green vegetables in running water, remove the area near the stalk, and let them dry slightly. We cut any fruit into 4-6 parts, depending on the size of the tomato.

Clean the garlic cloves. Carefully wash the parsley and pepper and let them dry. Remove the core from the chili. Chop the garlic, chili and herbs very finely (use a meat grinder or blender as a guide).

First put a small amount of chopped tomatoes into a glass jar, cover them with a spicy-spicy mixture of garlic, pepper and herbs, then add the tomatoes again. We alternate this way until the jar is full.

Pour water into a separate container and put it on fire. When it boils, add salt and vinegar, mix everything well and cook for several minutes. Turn off the heat and pour the marinade into the jars of tomatoes.

Cover the neck with a lid, place the jars in a bowl with a wide bottom, pour in water and boil for 20 minutes.
