What we will need:

  • chicken legs - 2 pcs.;
  • potatoes - 2-3 tubers;
  • carrots - 0.5 pcs.;
  • onion - 1 small head;
  • bay leaf - 1 pc.;
  • salt - 1 tsp;
  • drinking water -
  • vegetable oil - for frying.
  • testicle - 1 pc.;
  • flour - as needed;
  • salt - a pinch.

Yield: pan size - 3 liters. Number of servings: 6.

How to make chicken soup with dumplings

  1. Let's prepare the broth. We took 2 chicken legs, they make the soup rich. If desired, you can use the remaining parts of the carcass - wings or breast. Broth cooked with them will be the most dietary.
  2. Place the washed meat in a pan, fill it with water, and put it on the stove. Bring the liquid to a boil, remove the foam, reduce the heat, and cook the broth for an hour. At the end of production, add salt.
  3. While the broth is cooking, prepare the dough for the dumplings. Break an egg into a bowl, add a pinch of salt, and add a little flour.
  4. Mix. Add flour until the dough is thick and tight. Roll the workpiece into a ball. Let it sit so that the gluten in the flour dissolves - this will make the dough more elastic.
  5. Cut off part of the dough and roll it into a narrow (the width of your index finger) sausage.
  6. Cut the sausage crosswise into small (see photo) pieces. The dumplings are ready. From the indicated amount of ingredients you get a lot of them, which will allow you to create a thick soup. It will not be possible to create less; we already used one egg. For a pan with a volume of 3-3.5 liters, one handful of dumplings will be enough. Keep in mind that if you are preparing the soup more than once, then after standing in the broth, the egg balls will increase slightly in size. This is fine. Therefore, you should not put a lot of dough in the soup.
  7. Remove the chicken from the finished broth. When the boiled bird has cooled down sufficiently, separate the meat from the bones and cut it into pieces.
  8. Peel the potatoes, wash them, cut them into cubes or cubes. Place the vegetable in a saucepan with bubbling broth. Immediately add the bay leaf.
  9. Finely chop the peeled onion, grate the carrots on a large grater or cut into small pieces.
  10. Pour oil into a frying pan and heat it up. Add carrots and onions to the hot fat. Sauté vegetables until soft.
  11. Add fried vegetables to the soup. After this, put the previously prepared dumplings into the pan (the liquid must boil during all this).
  12. Stir the contents of the container for some time until pieces of dough begin to float to the surface. If this is not done, the dumplings may stick to the bottom of the pan.
  13. Cook the soup for 10 minutes. Return the chicken pieces to the pan. Check the potatoes for doneness and the broth for salt. If everything is in order, then the soup is ready and can be served.

Ingredients:

  • chicken - 250 g;
  • bay leaf – 2 pcs.;
  • onion – 1 pc.;
  • carrots – 1 pc.;
  • potatoes – 2-3 pcs.;
  • chicken egg – 1 pc.;
  • wheat flour – 70 g;
  • salt – 1/3 tsp;
  • oil for frying – 1 tbsp;
  • oil for the inside - 2 tbsp;
  • garlic – 1-2 cloves;
  • herbs – 1/2 tsp;
  • fresh herbs for serving - 2 sprigs.

How to cook soup with garlic dumplings

  1. First you need to set the broth to boil. Wash the chicken, place in a pan with water, add a bay leaf, and you can add a few peas of dark or aromatic pepper. Place the container over medium heat. After the liquid boils, skim off the foam and immediately reduce the heating power to a minimum. Simmer the broth over low heat for about 30 minutes.
  2. While the broth is cooking, prepare all the other ingredients. Peel the onions and carrots, wash them and chop them finely.
  3. Heat a tablespoon of vegetable oil in a frying pan and add vegetables to it. Fry them for 3-4 minutes over low heat. Once the broth is ready, add the frying mixture.
  4. Peel the potatoes, rinse, cut into small pieces. Also transfer to the pan.
  5. For dumpling rolls, you need to knead a soft dough. Crack a fresh chicken egg into a bowl, add a pinch of salt and beat with a fork.
  6. Place the sifted wheat flour into a bowl. Stir the dough first with a fork, and later with your hands.
  7. The result should be a dough that will not stick to your hands.
  8. Grate the peeled garlic cloves on a small grater or pass through a press. Transfer the mixture into a small bowl. Add dried herbs, vegetable oil and stir.
  9. On a cutting board, roll out the dough into a very narrow flat cake.
  10. Lubricate the central part of the cake with the prepared fragrant oil, using a brush (for example, silicone). The edges of the dough must be dry so that the roll can be tightly fixed.
  11. Roll the cake into a roll and secure its edges.
  12. Cut the flagellum with a knife into small pieces-rolls.
  13. Send the preparations into the soup when the potatoes are almost ready. Salt the dish to taste, cook everything together for another 5 minutes.

That’s why we don’t cut it, just rinse it well, fill it with 3 liters of water, and put it on the stove. Has the water boiled? Boil for two minutes and change. Pour into the sink, fill with clean water, and cook the broth for 20 minutes. If the mushrooms are wild, then cook for 30-35 minutes.

2. Remove the mushrooms from the broth. You can pour the broth through a colander into another pan or catch everything with a slotted spoon. Leave in a bowl and let cool.

3. Prepare the dough. Mix the eggs with salt, pour in a couple of tablespoons of water, throw in a small pinch of baking powder and add flour. We are kneading a dough that is not liquid, and not completely stiff. Make it soft and knead until elastic. Cover and leave for 10 minutes.

4. Peel the potatoes. If you want to prepare a watery soup, then reduce the quantity. Cut into pieces, add to mushroom broth, and lightly add salt.

5. Chop the onion and grate the carrots.

6. Place butter or vegetable oil in a frying pan, add vegetables and lightly fry, about 2 minutes is enough.

7. Cut the boiled mushrooms, add them to the vegetables in the frying pan, and fry everything together for about 4 more minutes. As soon as a pleasant smell of fried champignons comes from the frying pan, you can turn it off.

8. Roll out the dough into a long rope about a centimeter across. We cut the dumplings across, there is no need to create a huge thickness, five mm is enough.

9. Place the dumplings in a pan with half-cooked potatoes. Stir, bring to a boil and simmer for several minutes.

10. Transfer the mushrooms and vegetables from the frying pan to the soup, stir, cook together with the dumplings for about 10 minutes.

11. Cut the greens, prepare spices to your own taste, and taste again for salt. Add everything to the pan, stir, turn off the stove.
