Ramen soup

We study cooking with reference to geography - we travel around Asian fast foods and collect recipes that can be easily digested at home. Broth and noodles, which is easier? In the Land of the Rising Sun, China, and Korea, the popular first or Ramen soup (often referred to as Ramen) attracts with its affordability, excellent taste and high energy value.

Interestingly, China is considered the birthplace of ramen soup, where the dish is called “Japanese”. The inhabitants of the land of the rising sun called it “Chinese noodles” (tyuka-soba), and the Koreans called it “ramen”. Manufacturing techniques, of course, vary. But the general principle is clear. You really need a rich broth, and here there are both fish (with shark fins, fish concentrate, with dried aquatic plants) and meat (with beef, pork, poultry). Everywhere is flavored with roots, vegetables, and seasonings.

Divide the broth for ramen soup into four groups, with the addition of:

  • salt (shio ramen),
  • soy sauce (shoyu ramen),
  • miso paste (miso ramen),
  • bones, fat and cartilage (tonkotsu ramen).

Everyone is increasingly using freshly made noodles, boiling them separately and putting them on plates as needed. In a public poll in 2000, “instant ramen” was voted the greatest Japanese invention of the 20th century. Minor ingredients include boiled and fried eggs, sliced meat, bean sprouts, shiitake mushrooms, nori, spinach, green onions and even pickles. There are a huge number of options, and here is just a part of the list of soups:

  • Wantan ramen,
  • Tokushima ramen,
  • Okayama ramen,
  • Banshu ramen,
  • Hakata ramen,
  • Nagahama ramen,
  • Wakayama Ramen,
  • Kumamoto ramen,
  • Shoyu ramen, we prepare this traditional recipe - with the addition of soy sauce

Ingredients

  • chicken 400 g
  • pork 300 g
  • ginger root 20 g
  • celery stalks 2-3 pcs.
  • garlic 3-4 teeth.
  • wheat noodles 200 g
  • eggs 2 pcs.
  • soy sauce, hot pepper, herbs to taste

Manufacturing

Boil about 1.5 liters of water. For the broth, I take part of a chicken carcass, and for serving, a pork steak. I boil everything together. The bones, skin, and fatty layers of the bird will saturate the broth, the pork loin will be saturated with all the odors, soften and simply separate into plates. First wash the cold cuts in cool water and place them in boiling water. Next we throw in natural flavors: garlic, about half a pod of cayenne pepper (take any hot one), spicy celery stalks, a piece of ginger root, several branches of fresh herbs. Boil again, reduce the heat, and continue cooking under the lid set slightly askew for approximately 40-50 minutes. Look at the quality of the meat. The broth should be rich.

We examine the meat for softness - pierce it with a knife or skewer. If the chicken easily separates from the bone, it means everything is normal. Still without salt/soy sauce, but already fragrant meat broth should be strained. Use a sieve with a small mesh to remove even the smallest fragments and leave the liquid cleaner. Strain once or twice. Place the boiled pork separately, remove the adhered branches of greenery.

Pour soy sauce into the strained hot liquid, mix and taste. If you wish, boil again. The dose depends on the concentration of the particular sauce and your preference.

At the same time, boil hard-boiled eggs, clean, grease and paint the whites with soy sauce - “make them beautiful.” The thick extract quickly turns yellowish-brown. According to the instructions, boil the wheat noodles, also cut the pork steak into slices and finely chop the greens. You can start assembling the Ramen soup.

We lay out the boiled noodles on portioned plates, add slices of meat (placing them overlapping), find space for an egg cut in half, don’t forget about the branches of greenery - fill it almost to the top with rich broth with glossy spots on the surface.

We serve the freshest Ramen soup to the table perfectly warm, almost hot. Bon appetit! In the middle of the devices, chopsticks for noodles and large additives, plus a Chinese spoon for scooping broth, will come in handy.

Proper preparation of ramen soup is quite rare in our country. Often, only in restaurants of the appropriate cuisine. But if you have the technique for making it, purchase the necessary ingredients and know some of the fundamental features of the kitchen, then you can simply learn how to cook ramen noodle soup at home. In this article you will find noteworthy options for ramen soup recipes.

Traditional version of making soup

Varieties of soup are created by adding a number of ingredients to traditional ramen soup. Accordingly, in order for you to have the opportunity to experiment with this dish in the future, you need to know the main version of its production.

Cooking real ramen is very difficult. It differs not only in the production time, but also in the difficulty of obtaining suitable goods. All components of the soup are prepared separately and certainly in a certain sequence. Try making homemade pork ramen soup using the recipe provided.

Ingredients for 5 servings:

  • 1 kg pork
  • 700 g ramen noodles
  • 20 g salt and sugar
  • 200 g soy sauce
  • 30 g rendered pork fat
  • 30 g ginger
  • 1 g cinnamon
  • 10 g greens

Cut the purchased pork into small pieces, carefully wash it to remove blood (the internal environment of the human and animal body) , place it in a large saucepan and boil for 30 minutes, occasionally skimming off any foam that forms. Then remove the meat without draining the broth, which must be salted. Let the broth settle and get rid of impurities. Pour the purified broth into another pan.

Place cinnamon and ginger on the bottom of an unsealed pan, place pork meat on top and add a little broth. After boiling, sweeten, pour in soy sauce. Close the pan with meat tightly with the smallest lid so that it presses the meat tightly. For weighting, a weight is suitable, with the help of which the pork meat was completely in the broth. Cook in this form for another 4 hours.

Prepare a new clean noodle pot. Pour water into it, bring to a boil and add ramen noodles. It will take about 5 minutes to be ready. Drain all the water from the pan, remove the noodles and divide into 5 servings.

Take the pan again, pour a liter of water into it, which needs to be boiled again. After the water boils, pour out the remaining broth. A couple of minutes will be enough to boil. At the very end, add pork fat and boil again for about a minute. Finally, pour the contents of the pan into plates that already contain noodles. Put the pork in there too. Decorate the purchased dish with herbs.

Although the Japanese soup has a rather complicated recipe, it is completely possible to prepare it. Not all the time and not everyone succeeds perfectly the first time. In this case, there is no need to sin on the soup, just try cooking it again and you will certainly get the most real ramen!

Tori ramen soup with chicken

The distinctive feature of Tori ramen soup is the introduction of chicken meat and, accordingly, chicken broth. Tori hasn't achieved the same level of mainstream fame as pork ramen. This is due to the fact that chicken contains several times less fat than pork. Koreans consider this a huge drawback because they don’t always get enough of it.

Unlike the traditional one, the chicken ramen recipe has a number of advantages. Firstly, it is easier to manufacture and does not take much time; secondly, chicken has beneficial qualities and contains more cartilage and skin, which has a positive effect on the broth; thirdly, the indescribably pleasant smell of chicken not only provokes appetite, but also does not cover the smell of the other ingredients.

To make it for 4 servings you will need:

  • 500 g ramen noodles
  • 500 g chicken bones
  • 300 g chicken wings
  • 10 g salt
  • 100 g soy sauce
  • 20 g ginger
  • 10 g greens

  1. Place chicken wings and bones in a saucepan and add hot boiled water.
  2. Let it cook for half an hour.
  3. Remove the finished meat and place it in small containers.
  4. Strain the purchased broth, add soy sauce, salt, ginger and heat it up.
  5. Boil ramen noodles for 5 minutes.
  6. Divide it into 4 servings, and then moderately divide the heated broth.
  7. Chop green onions for decoration and sprinkle on portions.

Chicken ramen soup is ready!

If you want to amaze your guests with a non-standard dish, then ramen will perfectly cope with this task for us; you don’t have to be a fan of Japanese cuisine.
