Grandma Yulia baked this wonderful pie for us when she came from Irkutsk to visit (by the way, grandma worked as a cook and chef for more than 30 years). A tender, rich in juices, fragrant pie with salmon can take anyone who tries it captive. Naturally, for such a pie you need to make some good homemade yeast pie dough and wait a couple of hours until the dough rises a couple of times. But this wait is worth the minutes of pleasure and enjoyment that you and your family will receive after tasting a hearty, fluffy and airy salmon pie.
Due to the fact that our fish pie is closed, the inside comes out very tender, and the bottom crust is perfectly saturated with fish and onion juice. The success of such a pie depends almost entirely on the prepared dough. In my opinion, the perfect dough for a fish pie is the one used in the catfish pie recipe. Recipe for closed pie with salmon
So, to make the most delicious fish pie you need to take:
- 1 kg homemade pie dough;
- fresh salmon fillet 500-700 g;
- 2-3 large onions;
- salt and dark pepper to taste.
When the dough for the pie has already risen, it must be beaten well with a wooden or silicone spatula. Now let's work on the insides for the pie. The onions must be peeled and cut into thinner rings. Over low heat with a drop of vegetable oil, soften the chopped onion. So that it becomes soft and transparent. Wash boneless salmon (fillet) and cut into thin strips. Divide the dough into 2 parts. Using a rolling pin and hands, roll out the bottom circle.
Place the slightly cooled warm onion and pieces of salmon, add a little salt and black pepper (it will give the fish a magical smell). Roll out the second part of the dough into a circle and cover the top of the pie. From the leftover dough you can create decorations for a pie in the form of leaves, just like my grandmother did for us. Don't forget to create a couple of holes in the cake to allow steam to escape! Leave the pie to proof for 20 minutes. Meanwhile, put the oven on preheat. Bake for about half an hour at 180 degrees, then another 10 minutes at the lowest heat. Turn off the oven and leave the pie in the hot oven for another 3-5 minutes. We take our beautiful pie out of the oven and let it rest for 15 minutes. We cut it into pieces and invite everyone to the table for a lush fish pie with salmon. Bon appetit!

My family loves fish pies. This recipe is not bad. But, I want to create an addition. This is not for everyone. I don’t fry the onion, I cut it into half rings or larger ones, mash it well with my hands and place it on top of the fish. Then I salt, pepper and sprinkle with sunflower oil. I cover it with a second layer of dough. Don’t forget to create punctures in several places and into the oven. Bon appetit!

Hello, dear blog readers! I hasten to share with you a delicious recipe for yeast pie with salmon. I would call this royal pie, it’s so beautiful, delicious and unique! The nice thing is that preparing such a pie is quite simple, but the salmon can be replaced with another reddish fish, which is the most economical if you are preparing this pastry for the daily table, for example, pink salmon or chum salmon.
Ingredients:
- Milk – 150 ml
- Dry yeast - 1.5 tsp.
- Testicles – 1 pc.
- Butter – 70 gr.
- Flour – 400-500 gr.
- Sugar – 2 tbsp.
- Salt – 1 tsp.
- Salmon – 500 gr. (fillet)
- Cheese – 100 gr.
- Bell pepper (reddish) – 1 pc.
- Tomato – 1 pc.

How to make reddish fish pie:
First, let's create a dough, for this we dilute the yeast in warm milk (38 g), add sugar and 2 tbsp. flour and leave in a warm place for 30 minutes.
Add the egg, salt, melted butter, add flour in portions and knead a soft elastic dough, cover with a dry towel and leave it to rise in a warm place for 2-3 hours.
Now roll out the dough into a circle approximately 0.5 cm wide. Cut the salmon fillet into 2 cm strips (you can season them in advance) and place them in a circle, moving 3.5 cm from the edge.
Now cover the top of the fish with dough, seal it, you should have a roll. Using a sharp knife, cut the roller into pieces about 4 cm wide and twist any such piece upward with a fish.
Place the remaining fish cut into pieces in the center of the pie, then diced tomatoes, sweet peppers, and herbs (I used dry ones). Season the filling with your favorite spices, sprinkle grated cheese on top (I didn’t add salt, because the cheese is salty).
Leave the purchased pie for half an hour to proof, brush the pie with yolk and bake in a preheated oven at 180 degrees. oven until golden brown, about 30 minutes.

First, prepare the dough.
To do this, mix warm milk, flour and yeast in a bowl. Cover the dough with cling film and leave in a warm place until the yeast activates.
After the dough has increased in volume, you can begin kneading the dough.
In a suitable sized bowl, mix flour, eggs, sugar, salt, warm milk. Add butter melted in the microwave (not hot!), vegetable oil and all the dough.
While the dough is resting, it's time to work on the insides.
Finely chop the cabbage.
Chop the onion as desired. Remove the fish from the bones and cut into cubes.
Heat vegetable oil in a frying pan.
Add the cabbage and onions and simmer the vegetables until soft. Salt, pepper, add pieces of fish, mix. Simmer the filling over low heat for about 7 minutes, covering with a lid.
If desired, you can add chopped herbs to the filling.
Divide the dough into two parts. Roll out both parts across the width of the baking sheet. Place the bottom layer of dough on a baking sheet lined with greased parchment paper. Spread the prepared filling onto the dough layer. Cover the filling with the remaining rolled out sheet of dough. Pinch the edges. Let the cake rest for 15 minutes. Brush the top of the pie with the consistency of egg yolk and 1 tbsp. l. milk.
Bake the pie for 40 minutes in an oven preheated to 180 degrees.
