Baked goods are not necessarily sweet. Take, for example, the cheese and ham muffins that I propose to prepare for you now. This is, one might say, a snack version of a regular snack. Very tasty with tea or coffee, and if you like, with milk.
Instead of ham, you can use carbonate or even boiled smoked sausage or meat - in any case it will turn out tasty and fragrant. Choose the cheese according to your preferences - both hard and semi-hard varieties are excellent.

Products needed to make snack muffins: ham, cheese, chicken eggs, butter, wheat flour, milk, baking powder, salt and ground dark pepper (optional).
Because we will prepare the dough very quickly, immediately turn on the oven to heat up (180 degrees). Cut the ham and cheese into small cubes - approximately 5-7mm.
In a bowl, combine eggs, salt and ground dark pepper.
Beat everything with a mixer or whisk. Add room temperature milk and stir.
Next add soft butter and mix everything well.
Add ham and cheese and mix.
At the end, pour in wheat flour, which we previously mixed with baking powder and sifted.
Quickly mix all the ingredients to form a fairly dense dough.
We put the dough into muffin tins - exactly 12 pieces come out.
Bake snack muffins with ham and cheese at 180 degrees for about 30 minutes.
Remove them from the oven, remove them from the molds and let them cool slightly.
These snack muffins are very tasty warm, when the melted cheese still stretches in threads. But they're not bad cold either. Help yourself, my dears!

Muffins with ham and cheese are a good snack; adults and children adore them. They go well with a glass of wine at dinner and a cup of coffee or tea for breakfast. They can simply be served at buffets, or you can take them with you to a picnic or cottage.
To make muffins with ham and cheese, we will need the products from the list.
Finely chop or chop the ham, sun-dried tomatoes and olives. Grate the cheese.
Mix eggs, milk, olive oil in a deep bowl until smooth.
Add flour, baking powder, a pinch of salt and pepper, stir.
Add ham, cheese, olives, sun-dried tomatoes and oregano.
Mix well again. If using a whisk is awkward, take a spoon or silicone spatula.
Place in molds and bake muffins with ham and cheese at 180 degrees for about 30 minutes. Cool the finished muffins, put them in a plastic bag and leave for 2-3 hours, so they will become soft, without a crispy crust.
A good treat with a cup of coffee or tea for breakfast.

Unsweetened muffins are a good substitute for morning sandwiches.
It is better to cook them with fermented milk products - kefir, sour milk or sour cream. If you like soggy muffins, then add soft cheese to the filling and cut it into pieces - this will give the baked goods juiciness. With grated cheese, the muffins will be soft and tender, but the dough will be a little denser and more homogeneous.
Ingredients

- cheese – 50 gr
- flour – 220 gr
- low-fat drink – 1 glass
- egg – 1 piece
- salt – 1 tsp. (taste)
- sugar – 1 tsp. (taste)
- baking powder - 2 tsp.
- butter (margarine) – 50 g
- basil, thyme, thyme - to taste (optional)
Manufacturing
Beat the egg with a fork and pour into a warm drink (room temperature).
Add melted butter there.
Sift the flour and pour into the kefir mixture. Don't forget to add baking powder (it can be mixed with flour).
Stir the dough. While it has not yet become homogeneous and dense, add spices and herbs to it according to your own taste. Knead the dough until all ingredients are combined.
Grate the cheese or cut into pieces.
Cut the ham into very small cubes. If you cut it coarsely, it will be difficult for the dough to rise and the muffins will turn out dense.
Stir cheese and ham into dough.
The batter will be denser than for sweet muffins, and it will fall from the spoon in a lump rather than pour out.
Fill the molds no more than 2/3. The muffins will rise in the oven. Since the dough is dense and not completely homogeneous, press it slightly to better distribute it throughout the mold.
The top can be brushed with beaten egg and sprinkled with sesame seeds.
Muffins are baked in a perfectly preheated oven at a temperature of 180-190 degrees. In 20-25 minutes they will be ready. To prevent the muffins from gaining moisture, immediately remove them from the molds and cool on a wire rack.

You can create snack muffins with a variety of fillings. These small products simply charmed us with their versatility - you can swallow them on the run instead of breakfast, you can put them on the table as dinner, and if you try and embellish them, they will be just right for a festive feast.

- Beat eggs with salt and pepper.
- Pour in the milk, add the butter and mix thoroughly.
- Cut the cheese and sausage into small cubes.
- Place the tenderloin in the egg mixture.
- Add flour and baking powder, stir everything well.
- Fill the muffin tins with dough, just short of the top.
- Place in an oven preheated to 180° for half an hour.

Making cheese muffins
- Pour the butter into the milk, break the eggs, and beat it all well.
- Grate the cheese on a small grater and add it to the milk mixture.
- We cut the ham into long thin strips and send it there.
- Add chopped green onions.
- Add baking powder and flour to the mixture. Mix carefully.
- Place the dough into the molds, filling them not to the top.
- Bake for 40 minutes in the oven at 180 degrees.

You can decorate the muffins as needed - for example, sprinkle with sesame seeds before baking, or, after removing from the oven, decorate with nuts or seeds. It will look great with their reddish, dark caviar or drops of thick sauce.
Useful tips
According to the proposed recipes, it becomes clear that almost all the ingredients can be safely replaced - instead of sausage, cut sausages or smoked meat, or a mixture of sausages, or completely use minced meat. You can grate half the cheese and cut half into cubes. You can safely add finely chopped herbs - dill, parsley or anything else that you personally like. You can cook muffins with kefir or sour cream, and not with milk. I think it would be more convenient for someone to try out the muffin recipe in the microwave.
In general, in such universal recipes, improvisation is only welcome. For those who have never made such baking, it would be appropriate to start from the traditional muffin recipe - and then fantasize as you please.
