How to cook pork chops with mushrooms and cheese in the oven
Cut the onions and champignons: mushrooms into slices, and onions into quarter rings.
Fry mushrooms with onions with the addition of vegetable oil. Fry with constant stirring for about 10 minutes.
Cut the meat into slices, season with salt and pepper.
Beat the meat: to make the pork narrow, you need to beat it either with a rolling pin or with the side of a culinary mallet, where there are no large teeth, so as not to tear the meat.
Place the chops in a baking dish: brush with mayonnaise and mustard.
Add fried mushrooms and onions on top of the meat.
Grate the cheese until large shavings come out.
Sprinkle chops with cheese.
Bake in a preheated oven at 180ºC for 20 minutes.

It’s best to take sliced meat, because it’s juicy, and it doesn’t matter which other part is also suitable. Usually I buy meat, immediately cut it into slices and put it in the freezer in this form - this simplifies the manufacturing process in the future.
Making it in a frying pan rather than in the oven reduces the cooking time, plus you can get a crispy crust if that's what you like.
Ingredients:

Wash the mushrooms and slice them thinly. Chop the onion.
Fry the onion until translucent and add the champignons. Fry until done and add salt to taste.
Thaw the pork meat and cut it into pieces about 1 cm wide.

Heat the frying pan and add the meat.
Fry for half a minute and turn over. We reduce the fire.

- the best chops will come from the neck, ham, or loin, because these parts contain more juicy flesh;
- value should be given not to frozen, but to chilled products, because they often have the highest quality;
- the freshest pork should be pink in color, and the fat layers should be snow-white; it’s best if there are no veins in the piece;
- if the piece you like smells unpleasant, it means it is not the freshest, so you shouldn’t take it;
- You also need to press the meat with your finger. The surface of the freshest product will quickly level out, unlike the old one;
- It would not be superfluous to pay attention to the general appearance of the piece - it should be wet, but not very damp and not weathered;
- if frozen meat is purchased, it must have a light color and a clear, regular shape;
- To make this recipe, it is best to choose medium-fat pork. A very lean piece will produce dry chops, while a fatty piece combined with cheese will produce a dish that is difficult to digest.
It should be noted that you can vary the dish with tomatoes. To do this, before cooking, sliced tomato slices are laid out on the meat, and the dish is sprinkled with cheese on top, and in this form it is baked or fried. You can also sprinkle with herbs. When cooking in the oven it will take more time, but the food will be the most healthy.

- pork (entrecote) – 450 g
- champignons – 300 g
- large onion – 1 pc. (75 g)
- garlic - 2 teeth.
- mustard – 1 tsp.
- vegetable oil – 4 tbsp. l.

- sour cream – 3 tbsp. l.
- wheat flour – 2 tbsp. l.

Cut the pork across the grain into slices approximately 1 cm wide. Then beat each slice with a hammer on both sides.
Mix in a bowl: 0.5 tsp. salt, 2-3 chips. ground dark pepper, 2 cloves of garlic (passed through a press), 1 tsp. mustard. Rub the resulting fragrant consistency over the chops and leave to marinate for at least 30 minutes, covering the bowl with film so that the meat does not dry out.
To distribute the marinade sparingly, brush only one side of the chop, and then place another piece of meat on top so that it forms a stack.
Meanwhile, take care of the mushrooms: wash and cut into small pieces. Peel the onion and chop into cubes. Heat a couple of tablespoons of vegetable oil in a frying pan and sauté the onion in it first.
When the onion becomes soft and transparent, add the mushrooms to the pan. Continue cooking until all the moisture has evaporated and the mushrooms are browned. At the end of cooking, add salt and pepper to taste.
Add sour cream (fat content 15-20%) and heat everything together for several minutes. Remove from heat and let cool slightly.
The pork chops should already be marinated by this point. Bread them in flour, and then quickly fry them in a frying pan with heated vegetable oil until lightly browned.
