Flour is ground grains of wheat, rye, oats, buckwheat, rice, corn, flax, millet, barley, peas and other grains.

This cake has been in my baking plans for a long time, it gets a lot of praise, so I wanted to try it and realize how good it is.

It is very easy to make, the dough is even simpler than biscuit dough, there is no need to beat anything, worry about how it will rise during baking, it’s quite easy to mix everything! In general, such a cake will be baked by no matter what housewife, who has never baked anything before.

The finished cakes have a distinct milky smell, a warm texture, and buttercream with the addition of all the pieces of fruit or berries will add lightness and bring great pleasure. I highly recommend trying it out!

For the “Milk Girl” cake with fruit, we will need the following products.

So let's get started. Let's turn on the oven, heat it to 180 degrees and start making the dough. Break the eggs into a bowl.

Pour a can of condensed milk over them.

Add vanillin and beat everything with a mixer.

Sift flour with baking powder into a separate bowl.

Pour half the flour into the egg-milk mixture and beat at low speed.

We will do the same with the second part of the flour; the finished dough for the cakes will be fluid, but like thick sour cream.

To bake cakes, I use a pastry split ring, a very convenient thing; you can bake cakes, choosing any diameter. I made this cake with a diameter of 16.5 cm, from this dough I got 9 cakes. With such a diameter, I was able to place 2 cakes on a baking sheet.

Place 2 tablespoons of dough inside the ring, then remove the ring. We also make the second shortbread.

Remove the ring and place the baking sheet in the preheated oven to bake the cakes. The dough will not spread.

Almost 5 minutes is enough to bake the cakes. As soon as they acquire a pale golden color, take out the baking sheet and remove the mat with the shortcakes from it. Let's bake all the other shortcakes.

For the layer between the shortcakes and for decoration, I used raspberries. After baking the cakes, wash the raspberries or other fruits or berries you are using.

Afterwards, they must be dried on napkins or a cardboard towel.

Now let's create the cream. Place the cream cheese in a bowl.

Add sweet powder and beat.

Pour the well-chilled cream into a container and beat until creamy.

Pour the whipped cream into the cream cheese and beat everything together until combined.

Now let's start assembling the cake. I didn’t use any supports, but immediately assembled the cake on a wooden stand. To keep the cake stable, spread a little cream in the center of the board, dish or plate, depending on what you are collecting it on.

Place one shortbread on top of the cream and again place a pastry ring around it. This needs to be done in order to assemble the cake evenly.

Coat the cake with cream.

Arrange raspberries or other fruits that you use. And so we arrange them through one cake, and absolutely, their quantity depends only on your taste, some like it less, some like it more.

We assemble the cake completely in a ring and put it in this form in the refrigerator so that it settles for several hours. After assembling the cake, there should be some smoothing cream left.

Then carefully remove the ring from it.

Using a special tool called a palette knife, level the sides of the cake and the top, using the remaining cream. Because the cake was assembled in a ring, very little cream would be needed for smoothing, especially since I did not want to cover it on top with a large layer of cream, but simply level it so that the cakes were slightly visible. This is how the cake turned out in a rustic style or, as it is also called, in a rustic style.

Ingredients:

  • Condensed milk - 1 can (400 g)
  • flour - 160 gr
  • chicken eggs - 2 pcs
  • baking powder - 1 tbsp. l.

Cream filling for smoothing.

  • Sour cream – 350 gr
  • sugar - 110 gr
  • flour - 3 tbsp. l
  • egg - 1 piece
  • butter - 120 gr.
  • Cream 35% – 500 g
  • cottage cheese - 200 gr
  • snow-white chocolate – 50 g
  • butter - 40 gr.

Manufacturing method:

Drive two eggs into a deep bowl, add a can of condensed milk and mix. Then add the sifted flour with baking powder and mix properly using a mixer.

We distribute parchment paper on a baking sheet, take a ring (diameter 21 cm) and distribute three tablespoons of dough inside.

If you don’t have a circle like the one in the photo below, then you can draw a circle with a pencil and put the dough in it.

We make several preparations and send them to the oven preheated to 180 degrees for 8-10 minutes.

After taking the finished shortcakes out of the oven, immediately separate them from the paper and do the same with the remaining dough.

For the inside, take 200 grams of cottage cheese and rub it through a sieve with a spoon.

Take 500 grams of heavy cream, add 4 tbsp. spoons of sweet powder and beat until snow-white peaks. Transfer the resulting mass into the curd and mix gently. The very tasty creamy curd inside is ready.

Next we put the bottom crust, grease it with the insides, lay the berries on top and continue in the same sequence.

This cake took two portions of dough and one of the insides.

After folding all the shortcakes, place a small weight on top and put them in the refrigerator for at least 3 hours.

For smoothing, we will prepare a ice cream cream and for this you need to mix sour cream 350 g, sugar 110 g, egg, flour and mix everything thoroughly. Place it in a water bath and stir constantly until cooked. At first it will become very watery, then lumps will appear, but you must continue to stir, then the mixture will become thick. Then put it aside until it cools completely.

Beat butter at room temperature with a mixer at medium speed for 5 minutes and do the same with the already cooled thick consistency. After that, combine them and mix until smooth. Place in the refrigerator for at least one hour.

After the time has passed, we take a special culinary spatula and begin to coat the entire cake with cream, first in a circle, and then the top.

Now that everything is ready, we need to place it in the refrigerator until it hardens, and then, using a culinary syringe charged with cream, create a sketch like this, where we paint one part of it yellowish and continue to apply it as before.

Using a spatula, level the top and sides of our dish.

All that remains is to prepare the glaze. To do this, you need to melt the chocolate and butter in a bowl in a water bath and then decorate the finished cake with berries so that it turns out something like this.

3. For the cakes, we need to take baking paper and a pencil in order to draw 6 circles, 20 cm in diameter. Turn the pattern down and lay out 1/6 of the dough so as to level it evenly along the sheet without going beyond it border.

4. Preheat the oven to 180 degrees and place each piece in it for 5-7 minutes until blush appears.

Just find true condensed milk made from whole milk. There is no need to use condensed milk in the cake, which is made from soy milk and palm oil.

First, I melted the butter so that it cooled slightly before I added it to the dough.

In one bowl, combine flour with salt, baking powder and vanilla sugar.

In another huge bowl I break the eggs and pour the condensed milk. I mix all this with a mixer.

Now I begin to pour in the mixture of dry goods in portions and pour in the melted butter. One by one. Added oil, stirred, added flour, stirred. In the end, I combined all the ingredients and got this tender dough.

Blanks for cakes can be created using 2 methods. Draw a circle about 20 cm in diameter on a sheet of baking paper. And spread the dough onto this circle in a layer no thicker than 1 centimeter. Carefully, without going beyond the edges of the drawn circle.

Method 2 is even simpler. Place the ring from the round, detachable mold on a sheet of paper, spread the dough and remove the mold. It turns out to be a completely even circle.

My oven only has two baking sheets. I place two shortcakes there and bake at 180 degrees. seven minutes. The oven has already been preheated. It is very important to constantly watch so that the cakes do not burn. Everyone's oven is different, so your baking time may be different.

I took two ready-made shortcakes out of the oven and set them aside to cool. The next two shortcakes are sent for baking. And when these have cooled down, I turn them over and remove the paper from them.

Here is another advantage of the fact that the dough contains butter. The paper simply separates from the buttery cakes.

According to the scheme given to us, I continue to bake flatbreads until I have used all the dough. I got 8 pieces of beautiful, golden brown cakes. I’ll leave them to cool, and I’ll make the cream myself.

Another important point - do not stack the shortcakes one on top of the other until they cool down, otherwise they will stick together.

For my “girl” I will prepare cream with whipped cream with 35 percent fat content. I take the cream for the cream very cool, and I also put the bowl in which I will whip it in the freezer for a while. Then the cream whips perfectly and quickly transforms into a thick, airy mass. Beat with a mixer, evenly increasing the speed to maximum. While beating, add a little sweet powder and vanilla sugar.

The cream is already thick and fluffy. He's completely ready. I begin the most creative process - assembling the cake.

I spread a little cream on the dish and lay out the first shortbread. I apply a layer of cream. And I continue to form the cake, coating all the cakes one by one with cream. At the end I thickly coat the top and sides.

I didn’t level the cake, but rather slapped it across the top with a spatula to give it an uneven, wavy surface.

Perfect if you prepare the cake the night before and leave it in the refrigerator overnight (that is, in the dark) . This way it will be perfectly saturated and harden.

The next day I take out the finished product and sprinkle it with grated snow-white chocolate. It mixes well with the milky “girly” flavor. Such a simple decoration does not clutter up the airiness of the baked goods and does not interrupt the native, milky taste.
