What could be better than the traditional combination of chocolate and cherries? Probably nothing! Naturally, such a dessert is a delicacy only for adults, because alcohol is not allowed for children under any circumstances, however, if the cherries are not soaked in alcohol, then that’s a different matter. But since we are talking about a traditional cake, we bake it exactly as it should be.
This cake arose in Russian times in response to the popular German Black Forest cake, or as it is also called – “Dark Forest”. But let’s not confuse these cakes together, because they are completely different not only in composition, but also in assembly. The only thing they have in common is that they are chocolate.
The traditional Drunken Cherry cake does not consist of several cake layers, like other cakes; only one cake is baked for it, but a large one. The upper narrow part is cut off from the cake, the inner part is removed from the lower part so that the workpiece comes out in the form of a deep bowl, which will then be filled with cherries infused with alcohol, mixed with condensed milk cream. Then the whole thing is closed with a biscuit lid and filled with chocolate glaze. This is how we can briefly outline the traditional version of this delicious cake, and now we can proceed to the practical part, for which we will take the necessary ingredients.
If you take frozen cherries, like I do, then you need to let them defrost, then remove the pits and fill them with alcohol. You can use cognac or strong reddish wine. Leave it overnight (that is, in the dark) .
The next day we begin baking the sponge cake for the cake. Mix sifted flour, starch, baking powder and cocoa.
Beat the egg whites until stiff, add half the sugar and beat until smooth.
In another container, beat the chicken yolks with the remaining sugar until fluffy.
Pour half of the flour mixture into the beaten yolks and mix with a spatula.
Then carefully add the whipped whites and mix with a spatula until the whole mass is combined.
Then add the rest of the flour and mix. The dough is ready.
