Cabbage pie recipe in the oven

1. First, let's prepare yeast dough using dry yeast (link to the most detailed recipe with a photo just above). It’s very simple to create: combine milk, eggs, sugar and yeast. The milk should be pleasantly warm and the remaining ingredients should be at room temperature. When the yeast dough rises slightly and is covered with a cap of bubbles, add half the flour. Knead the dough until it slightly lags behind the bowl. Pour in the prepared vegetable oil and melted butter. Add flour so that the dough is not too watery. Knead until the dough comes away from your hands and becomes smooth and homogeneous. If the dough remains very sticky, you can add a little more flour. But you must not overdo it, otherwise the dough will become tough, dense, and the pie will not be as tender. A perfectly kneaded dough should turn out tender, soft, elastic and very slightly sticky.

2. Place the dough in a warm space, wrapped in a towel to protect it from drafts. We have two hours for the dough to rise. During this period of time we will simply prepare the cabbage filling.

3. It is better to choose carrots that are not long, have a blunt tip and have a catchy color (the “carrot” variety). It will be sweet and juicy even in spring. So, we peel the carrots, wash them and grate them on a large grater.

How to bake a pie with cabbage from yeast dough in the oven

  1. Let's start with making yeast dough, it needs time to mature, just enough time to prepare the filling. Sift flour and sugar into a bowl. Pour in yeast and mix.
  2. Pour warmed milk into flour and yeast.
  3. Pour in the eggs and butter lightly beaten with a fork.
  4. Stir, add salt and start kneading. The splendor of the pie depends on the quality of the kneading. This needs to take at least 10 minutes to complete. If you have a mixer with a dough kneading function on your farm, it will greatly simplify the task. At the end we collect the mass into a smooth lump.
  5. Place in a bowl lightly greased with sunflower oil, cover with film and keep warm.
  6. While it is rising, we are carried away by the cabbage - we chop it thinly.
  7. Cut the bacon and onion into cubes.
  8. Sauté cabbage in a frying pan in oil.
  9. Transfer it to a bowl. If necessary, add a little more oil to the frying pan and add the bacon and onions. Fry a little and add to the cabbage.
  10. Let cool slightly. Break the eggs into a bowl with cabbage and add 3 tbsp. crackers, salt, mustard and sugar.
  11. Mix and get the best savory filling for our yeast pie.
  12. Meanwhile, the dough rose very well. You can see how in the photo it turned into a ball, stretched the film and even found a hole to crawl out.
  13. Transfer the dough to a floured cutting table. First we divide into 2 equal parts. We roll out the first one in accordance with the dimensions of our own shape, taking into account the sides.
  14. Transfer the layer onto a rolling pin into the mold. Pour the remaining 2 tbsp onto it. crackers so that they absorb water.
  15. We spread the filling. We again divide the second half of the dough into 2 parts, but this time into uneven ones, approximately 2/3 and 1/3. Roll out a huge portion and cover the top of the pie. We connect the edges.
  16. We make decorations from the smallest part of the dough. The simplest thing is a braid. We make a hole in the center for steam to escape. Brush the surface with lightly beaten egg.
  17. Bake in the oven, previously heated to 200 degrees, for 45-60 minutes. The exact time depends on the characteristics of your equipment.
  18. First let the finished cake cool slightly in the pan, and then remove it onto a wire rack.

Serve warm with a glass of milk, a cup of fragrant tea or coffee. If you have a little dough and cooked cabbage left, don’t worry. You can quickly bake or fry several pies from them.

Yeast pies, despite some difficulties in making and the long wait for the dough to rise, still remain a popular dish. And this is not mind-blowing, because they turn out lush, tasty and satisfying. Therefore, the wait and the effort expended are completely justified by the result.

A yeast cake in particular is good combined with some innards. Moreover, it can be either a sweet or salty version. In this article for us, we will talk about the extreme, and specifically about cabbage. It is not difficult to find, it is a cheap product, but it perfectly complements such dough. Let's look at 5 options for making such pies.

Yeast pie with cabbage and eggs

  • Wheat flour – 500 gr.
  • Milk – 200 ml.
  • Egg yolk – 1 pc.
  • Butter – 150 gr.
  • Fresh yeast – 20 gr.
  • Sugar – 2 tablespoons.
  • Salt – ½ teaspoon.
  • Cabbage - half a fork.
  • Chicken egg – 3 pcs.
  • Low-fat cream (10%) – 75 ml.
  • Butter – 1 tablespoon.
  • Salt - to taste.

First, let's prepare the dough. Add yeast to warm milk and stir, sift a little flour to bring the mixture to the state of watery sour cream. Cover with a towel and place in a warm place for 40 minutes.

After this time, add soft butter, sugar and salt to the dough. Stir until they dissolve and evenly mix the remaining flour into the mixture. After carefully kneading the dough, we send it to a warm space for another 90 minutes.

At this time, let's start preparing the inside. Finely chop the cabbage, place it in a saucepan and add salt and cream, then stir. Place on low heat and simmer until the cabbage is soft, which will take about 20 minutes. Finally, add the butter and turn off the heat. Boil the eggs, cool slightly under cool water, peel and cut into cubes. Then we'll add it to the cooled cabbage. At this point the inside is ready.

Let's return to the risen dough and roll it out into a large circle. We will place all the filling in the center of it, leaving a fairly large indent on all sides. Pull the edges of the dough towards the center and fasten them together. Using a fork, make several holes to allow steam to escape. Beat the yolk and brush it over the entire surface of the pie. Leave the workpiece for 15 minutes and place it in the oven, preheated to 180 degrees, where we leave it for 30-40 minutes. After cooling, you can serve.

Yeast pie with cabbage and milk

  • Butter – 270 gr.
  • Milk – 400 ml.
  • Wheat flour – 500 gr.
  • Dry yeast – 22 grams.
  • Sugar – 2 tablespoons.
  • Salt – 1.5 tablespoons.
  • White cabbage – 600-700 gr.
  • Chicken egg – 2 pcs.
  • Olive oil – 50 ml.

First, let's prepare the dough. Sift the flour and mix it with salt, sugar and dry yeast. Add butter and mix with hands until crumbly. Add milk and knead into a homogeneous dough. Leave in a warm place for 40 minutes.

Let's get to the insides for now. Finely chop the cabbage, add salt and pour boiling water over it, leave for 10 minutes. Then add salt and squeeze out excess water. Place in a deep frying pan with heated olive oil. Add half a glass of water and simmer until soft. Boil the eggs hard, cut them into strips and mix with the cooled cabbage. The inside is ready.

Place the risen dough on a floured table and divide it into two parts. Let's roll two layers - one a little larger, the second smaller in diameter. Place the first layer in a baking dish, greased with oil, and distribute it along the bottom and sides. Then add the filling and distribute it moderately, cover with the second smallest layer. Use a fork to create small holes for steam to escape. Place the pie in the oven to bake at 180 degrees for half an hour until golden brown.

  • Margarine – 100 gr.
  • Chicken egg – 2 pcs.
  • Sugar – 25 gr.
  • Dry yeast – 25 gr.

  • Cabbage – 200 gr.
  • Meat (pork or beef) – 200 gr.
  • Onions – 1 pc.
  • Parsley.
  • Dill.

Let's do the dough first. Mix a third of the flour with milk and yeast and put on the dough. Let's put it in a warm space for at least 1 hour, and preferably 3. Then heat the oil and beat in the eggs, mix everything purchased with sugar and salt. Pour the resulting mass into the dough and knead the dough. It should turn out dense, but at the same time it should lag well behind your hands. After all the steps have been completed, we send it to a warm space for another hour and a half.

Now let's take care of the insides, fry the shredded cabbage, finely chopped onion and meat, which we will previously mince into mince. And then we mix all the acquired components of the entrails with pepper, salt and chopped herbs.

The dough must be rolled out into two layers. We place one of them on the bottom of the mold, greased with oil, then add the filling and cover with the second layer. After this, place the pie after about 20 minutes in an oven preheated at 180 degrees for 30 minutes.

Yeast pie with cabbage and potatoes

  • Wheat flour – 400 gr.
  • Milk – 500 ml.
  • Chicken egg – 2 pcs.
  • Salt – 1 tablespoon.
  • Sugar – 1 tablespoon.
  • Dry yeast - 1.75 teaspoons.
  • Potatoes – 1 kilogram.
  • White cabbage - 0.5 forks.
  • Large carrots – 1 pc.
  • Onions – 1 pc.
  • Egg yolk – 1 pc.
  • Vegetable oil.

First, let's prepare the dough. In a bowl, mix the sifted flour, milk and eggs, then add salt and sugar. We also add yeast to the mass and knead the dough. To do this, pour half a tablespoon of flour onto the table and bring it to a state so that it does not stick to your hands. After the dough is kneaded, cover it with a towel and leave for 40 minutes.

Now you can do the insides. First, peel the potatoes, put them in a container and fill them with water, putting them on fire. Salt the water after boiling. Potatoes need to be cooked until crisp. After that, you need to crush it and pour hot milk and egg yolk into it. Then mix well.

Chop the cabbage, grate the onion and carrots. After that, fry the cabbage. It will be fried in vegetable oil; beforehand, salt it to taste and add onions and carrots to it. After completing the steps, bring it to readiness and mix the finished cabbage with mashed potatoes, then let it cool.

Divide the dough into two parts so that one part is larger than the other. Roll out a small piece of dough and place it on parchment greased with vegetable oil, do not forget to create holes in the dough with a fork. Place the filling on top of the dough and smooth it well over the entire surface. After that, place the second part of the dough on top of the inside and press the edges with the tips of your finger. Place the pie in the preheated oven and bake it at 200 degrees for 20 minutes.

Thursday, May 19, 2016 06:31 + to quote book

Now I would like to offer you my signature cabbage pie, the softest dough and cabbage inside, mmmm. My family and friends absolutely adore it, it always comes out delicious. Many years ago, as a girl, for the first time I tried cabbage pie made by my friend’s grandmother, and I had never eaten anything like it anywhere else. I kept finding this taste, experimenting with the dough, but all the tests were in vain. And so I read a dough recipe in a magazine, and it turned out to be wonderful, previously I could not find the dough for this pie, but this wonderful recipe gave me the opportunity to return to childhood, the dough seemed to be fluffy, tender and the taste was simply unforgettable, Now I bake pies to a greater extent only on it. I propose to create this wonderful pie for you too.

Mix everything and knead well, leave to rise for 30 minutes (during this period of time the dough will rise perfectly)

Beat 2 eggs with half a teaspoon of salt, prepare 130 ml. cups vegetable oil

While the dough is fermenting, sift 3 cups of flour (do not add all the flour to the dough at once, you may need more or less of it, I used 430 grams.

Let the dough rest in the bowl for 30 minutes.

Then divide it approximately into pieces, rolling them into balls, let them stand for 5-10 minutes and begin to form a pie.

Any ball, roll out into an oval shape

lay out a lot of the inside, and roll it up into a roll, pinch the ends, and put it in the mold, and so on for all the balls.
