  • 1 PC. – fish carcass king clip
  • Half a lemon
  • Salt, any fish spices, vegetable oil
  • 2 tbsp. spoons - flour or breadcrumbs

1. We cut the prepared carcass into small pieces (you can take fillets), sprinkle with lemon juice, sprinkle with a set of fish spices and salt, and leave for 10-15 minutes to marinate.

2. Pour flour into a separate plate and heat a frying pan with oil.

3. Roll any piece in flour on all sides, fry until golden brown, 3-4 minutes on each side.

  • 1 kg. – fillet
  • 2 pcs. – carrots and onions
  • 100 gr. – salty-tasting hard cheese
  • 2 tbsp. spoons - mayonnaise and flour
  • 1 tbsp. spoon – ketchup or tomato paste
  • 2 pcs. – small cloves of garlic
  • 100 gr. – sour cream
  • Salt, pepper, no matter what fresh herbs - to taste

1. We cut the fillet into portions, add salt and pepper, roll in flour, fry slightly in vegetable oil (almost a minute on each side), just so that the flour sticks.

2. Cut the peeled onion into half rings, fry in vegetable oil until transparent, then add grated carrots, fry the vegetables together for almost 5 minutes.

3. Place the fried fillet in an even layer in a baking dish, distribute the roasted vegetables on top, and sprinkle with more grated cheese.

4. In a large cup, mix sour cream, mayonnaise, tomato paste, chopped garlic, add a little water, mix everything. Pour the purchased sauce over the fish.

5. Bake in the oven for about 30 minutes at t=200C.

6. Sprinkle the finished fish with fresh chopped herbs and serve.

Shrimp fish with tomatoes and potatoes

  • 1 PC. – congrio carcass
  • 1 PC. – large head of onion
  • 3-4 pcs. – potatoes
  • 2-3 pcs. – ripe tomatoes
  • 50 ml. - at least some snow-white dry wine
  • 150 gr. – salty-tasting hard cheese
  • 100 gr. – sour cream
  • Spices, salt, fresh herbs

1. We cut the cooked carcass into small pieces (you can take fillets), sprinkle with salt and any spices for fish dishes.

2. Cut the onion into large half rings, saute until golden brown, transfer to a separate bowl, and in the same frying pan fry the fish pieces on both sides, pour in snow-white wine and simmer for another 5-7 minutes.

3. Cut the peeled potatoes into thin slices and tomatoes into slices.

4. Grease a baking dish with olive oil, lay out the first layer of potato slices, then fried onions, then fish pieces, followed by tomatoes and potatoes again on top.

5. Mix grated cheese with sour cream, grease the top layer of potatoes, cover the baking dish with foil and place in the oven for 30 minutes, then remove the foil and leave for another 10-15 minutes at t=200 C.

  • 2 pcs. – huge portioned pieces of fillet
  • 1 piece each – large bell pepper and red onion
  • 4-5 tbsp. spoons - snow-white dry wine
  • Table salt, pepper, spices

1. Sprinkle the fillet with salt, pepper, and any fish spices, and leave to marinate for 10-15 minutes.

2. Cut the pepper into two halves, remove the seeds and bake in the oven for about 30 minutes at t=180 degrees.

3. Cut the peeled onion into thin half rings and fry until soft.

4. Prepare two small pieces of foil. In any one we put fried onion, then a piece of fish fillet, then baked pepper, pour everything with snow-white wine.

5. Close the foil tightly and bake in the oven for 25-30 minutes.

Let's cook salmon steak with shrimp sauce. And so that the dish reaches the stated level, we serve it with blanched young asparagus, a sprig of dill and a slice of lemon.

Half an hour is just enough for you to have time to prepare everything and enjoy it. And as a prize, I’ll tell you about a cool method of making salmon: impeccable frying, indescribable tenderness, juiciness and not a gram of oil.

Watch your hands

  • 2 salmon steaks
  • 150 g peeled shrimp
  • half an onion
  • 1 clove of garlic
  • olive oil
  • 500 g young greenish asparagus
  • 150 ml cream
  • salt, freshly ground dark pepper (to taste)
  • 1 tsp. Sahara
  • lemon
  • dill for serving

Place a saucepan of water on the fire (perfect if it is narrow and tall). Bring water to a boil, add a teaspoon of sugar, two teaspoons of salt, and the juice of half a lemon. Place the asparagus shoots vertically so that the tops protrude 2-3 centimeters above the water. This way, the thick parts of the stems will be cooked in boiling water, and the tender ends will be cooked under the action of steam. Do not keep asparagus in boiling water for more than 3-5 minutes; it is quite easy to overcook it. Throw the trunks into a colander and let the water drain.

Now the sauce. Finely chop half an onion and a clove of garlic. Fry them in heated olive oil until soft and translucent, add peeled shrimp, fry everything together over medium heat, then pour in the cream, season with salt and freshly ground black pepper. Reduce heat and cook the sauce, stirring, until slightly thick. Transfer the mixture to a blender and puree.

It's the fish's turn. Wash the steaks and dry. Heat the grill pan well. Take a roll of baking paper and cut two sheets. Place the steak on the edge of each steak and cover with the other half. Place the steaks in a cardboard “cover” on a preheated frying pan, fry for approximately 5 minutes on each side. Turn off the heat and let the fish sit for a while. The “cover” works wonders on the fish. It seems to seal all the juices inside, and in the end you get something indescribable in tenderness and juiciness. And if one can argue about the advantages of the film, any discrepancies are out of place here: fish prepared using this method is absolutely, undeniably magnificent.

Congrio is a conger eel, a very close relative of the moray eel.
Congrio comes in Reddish, Black and Golden colours. It reaches a length of ninety cm. It lives in two regions of the World Ocean, in the Australian-New Zealand and American
Congrio's main food is crustaceans and mollusks, a very valuable commercial fish.

1. Because Congrio is a shrimp fish, I decided to make a shrimp sauce to match it.
2. Wash the fish, dry it, cut into portions.
3. Sprinkle with lemon juice, salt and pepper, leave to soak for 15 minutes.
4. Prepare the sauce.

Wash and clean the shrimp fish.

Cut the fish product into portions.
