Cakes are delicious desserts that are traditionally baked for birthdays and other holidays. But you don’t always have enough time or enough ability to bake a treat with an abundance of cakes that need to be rolled out and baked separately.

That’s why I offer recipes for ordinary cakes, which require a minimum of time and effort to make. Despite the simplicity of the recipes, these desserts turn out to be very tasty, this has already been proven.

If you want the most frisky option, then look at my website for recipes for no-bake cakes. To make them, you take a ready-made base (usually cookies), which is smeared with cream. Also common recipes include “Prague” made from chocolate sponge cake and “Zebra” made with sour cream.

I baked this cake for my wife's birthday. I didn’t have the ability to bake our family’s favorite Honey Cake, which takes me about 3 hours. I found this quick recipe, cooked it and was pleasantly surprised. The dessert came out very tasty, it just melts in your mouth.

Ingredients:

The list is given for a shape with a diameter of 20-24 cm. For a larger shape, increase the number of goods proportionally. They should be at room temperature.

  • eggs - 2 pcs.
  • butter - 60 gr.
  • vegetable oil - 60 ml
  • milk - 280 ml
  • vinegar 6-9% - 1 tbsp.
  • flour - 250 gr.
  • soda - 1.5 tsp.
  • salt - 1/3 tsp.
  • sugar - 300 gr.
  • cocoa - 50 gr.
  • vanillin - 1 gr.

For cream:

  • butter - 180 gr.
  • condensed milk - 380 gr. (1 jar)
  • thick, fatty sour cream 30% - 350 gr.
  • sweet powder - 80 gr.
  • vanillin - 0.5 g.

For impregnation (optional):

  • water - 50 ml
  • sugar - 50 ml
  • any berries - 100 gr.

1. The cake dough is prepared quickly. Therefore, immediately turn on the oven to warm up to 170 degrees. Products for the dough should be at room temperature; try to remove eggs, milk, and butter from the refrigerator in advance (1 hour). If you cook right away (like me), then you will need to heat the milk and butter a little so that they become slightly warm. No need to heat the oil!

2. Sift all the flour (250 g) into a deep bowl. It is better to use a kitchen scale for accuracy. With scales you will be able to keep all proportions most literally. If there is no such assistant, use this table of weights and measures. Sift cocoa powder (50 g) into the flour. Take regular cocoa, without additives or sugar. And put the other dry ingredients in a bowl: 300g. sugar, a bag of vanillin, a little salt, and one and a half teaspoons of soda (no need to extinguish it, it dissipates at the end).

Soda can be replaced with baking powder, then vinegar is not needed. If you make syrup for impregnation, use 50 grams of sugar. less.

3. Stir all dry ingredients until smooth.

4. Beat two eggs into the dough, add 60 g. butter and 60 ml of vegetable oil without aroma. Also pour milk (not cool, and not hot).

5. Stir all products with a mixer. At first, work at a low speed so that the flour does not fly to the sides. Next, turn the mixer on high and beat for 1-2 minutes until the dough becomes smooth and shiny.

6. Now add 1 tablespoon of vinegar and mix well.

7. Cover the baking pan with parchment and grease with a little vegetable oil.

8. Pour the dough into the mold, roll in a circle so that it is moderately distributed and the top is even. You can only pour the dough up to half of the mold, because it rises very well during baking and becomes porous.

9. Bake the sponge cake in an oven preheated to 170-180 degrees for 50-60 minutes. Check readiness with a wood stick, which should come out dry. For the first 20 minutes, do not open the oven door so that the cake does not crumble.

If you wish, the shortbread can be baked on a rectangular baking sheet. If the layer of dough is small, the sponge cake will bake faster (approximately 30 minutes).

10. Remove the finished crust from the oven, remove it from the pan along with the parchment and let cool.

11. Meanwhile, prepare the cream. To do this, first beat the butter a little with a mixer. Add condensed milk to the butter and beat the cream until fluffy.

You can also create sour cream for this cake. You just need to use fatty and thick sour cream, otherwise the cream will be very watery. If you only have 20% sour cream, you can use it to create weighed sour cream.

To do this, put the sour cream in cheesecloth, put the cheesecloth in a sieve, and place the sieve on a bowl. Place this system in the refrigerator overnight (that is, during the dark) . In the morning the sour cream will be thick, the excess whey will drain off. If you do this, use 100 grams of sour cream. more.

Add sweet powder to the sour cream and beat the cream with a mixer for about 2 minutes. It is not permissible to whip sour cream for too long, otherwise it will separate.

12. When the sponge cake has cooled, cut off the top, which will later be used as crumbs for sprinkling the cake. Using a thick thread, cut the biscuit into 3-4 shortcakes.

13. The finished cake comes out moderately wet; it does not need to be soaked in syrup. But you can soak it if you wish. I made the impregnation with frozen berries (blackberries and currants) to give the sweet cake some sourness. To soak, pour water into a saucepan, add a little sugar, and boil. Place the berries in boiling water and cook for 3-5 minutes.

14. Now assemble the cake. Place the first shortbread on the dish, soak it in a little syrup, and lay out the berries. Alternatively, you can coat it with a thin layer of sour jam. Grease the crust with cream. Cover with the second crust and repeat the function.

15. Also grease the top crust and sides with cream. Make crumbs from the cut top (the fastest way to do this is in a blender). Sprinkle the top and sides of the cake with crumbs. You can also sprinkle part of the top with coconut flakes. In general, you can decorate it to your own taste: with nuts, marmalade, and candies.

If you have time, put the cake in the refrigerator for 2 hours to soak. If you don’t have this ability, serve it to the table right away. This is a very tasty treat!

Homemade condensed milk cake with sour cream

For cream:

  • sour cream - 200 gr.
  • sugar - 100 gr.

1. Melt the butter using any convenient method, let it cool to room temperature. Add condensed milk to the butter and stir with a whisk or mixer until smooth.

2. Beat two eggs and mix again.

3. Sift the flour and stir again. At the end, add soda, quenched with vinegar or lemon juice. Mix everything until smooth. If you work with a mixer and not by hand, the dough is kneaded very quickly, in 5 minutes.

4. Line a baking sheet with parchment paper. Pour 2/3 of the dough onto it and level it with a silicone spatula over 2/3 of the baking sheet area. Add cocoa to the remaining dough and stir. Pour the chocolate batter into the empty space and smooth it out.

5. Place in an oven preheated to 180 degrees to bake for 10 minutes (if the baking sheet is large and the dough lies in a narrow layer). If the dough layer is large, bake longer until done (check with a match).

6. For the cream, mix full-fat sour cream with sugar. You can beat with a mixer, only briefly, so that the sour cream does not begin to transform into oil, no longer than 2 minutes.

7. When the shortcakes have cooled, cut them into 3 equal parts. You will get 2 light shortcakes and one brown one. Trim off any excess edges.
