In the summer, ordinary vegetable dishes are especially popular. That’s why I decided to share with you a new recipe – we cook fried zucchini with mayonnaise and garlic. They turn out golden brown, with a crispy crust, tender and juicy center, and what a smell!

For this recipe, I advise you to choose young zucchini, small in size (I have 350 grams of each), with narrow skin and unformed seeds. Large fruits are also completely suitable, but then you should remove their thick skin, remove the seeds along with the fibrous inner part, and then cut the pulp into rings, half rings, or thin random pieces.

You can choose the amount of garlic for this simple and frisky recipe according to your own taste, as well as the options for the freshest herbs. I advise you to prepare mayonnaise on your own - it is done in a matter of minutes. Luckily, I have plenty of recipes for this cool sauce on my website:

Making a dish step by step:

To make this simple and tasty dish, we need zucchini, refined vegetable (I use sunflower) oil, wheat flour of any grade (in my case premium), mayonnaise, fresh garlic, dill (or any other herbs), salt and ground pepper .

First, let's prepare the zucchini (I have 2 fruits, each 350 grams each) - they need to be salted and excess water removed because of this. Wash the fruits, dry them, cut off the ends on both sides. We cut the zucchini itself into circles, approximately 1-1.5 centimeters wide.

Place the vegetable pieces in a bowl and add salt (I use 0.5 teaspoon). Leave the zucchini to salt for 15 minutes at room temperature. I recommend keeping old zucchini for about half an hour.

During this period of time, we will prepare garlic mayonnaise: simply peel a couple of medium cloves of garlic and pass them through a garlic press (you can chop them on a small grater). Add garlic to mayonnaise. Pepper to taste.

Mix everything thoroughly. If you wish, you can add chopped fresh herbs to the sauce right at this step.

When the zucchini sits, they release quite a decent amount of juice - pour it out.

Sift wheat flour into a plate and bread the zucchini slices on all sides.

For frying, take a suitable dish (I have a deep frying pan with a diameter of 26 cm) and immediately pour all the vegetable oil without aroma into it. Place floured zucchini in hot oil and fry over medium heat until the underside is browned.

When the underside of the zucchini becomes a pleasant golden color, carefully turn them over and continue frying in oil. Personally, during the frying process, I turn the rounds over a couple of times so that they are moderately covered with a golden brown crust and do not burn.

Place the finished fried zucchini on a flat dish, which I recommend covering with cardboard napkins (they will absorb excess oil). Similarly, fry other vegetables breaded in flour.

Spread garlic mayonnaise on warm zucchini.

We decorate with sprigs of fresh herbs - I especially like dill.

Serve warm, tender, rosy and very fragrant fried zucchini with garlic and mayonnaise. By the way, they are not bad even when cool, they will only barely survive until they cool down. Cook for your health, friends, and bon appetit!

Before hot, roll the zucchini in flour, then dip it in the egg and again in the flour. Fry in a frying pan over medium heat. If desired, also grease with mayonnaise and garlic.

If you don't use mayonnaise, you can simply cut the garlic into thin slices and place it between the fried pieces of zucchini. The finished dish will turn out to be the least caloric, but just as tasty and fragrant.

You can preserve your favorite dish for the winter. To do this, you need to fry the zucchini in flour. Finely chop the garlic and herbs and put them in a jar. Then add oil and vinegar there.

Place the zucchini very tightly into the jar, adding a little garlic after each layer. Close the jar with a lid and boil (this can be created using a water bath).
