Almost all people do not eat meat for various reasons. But just as in America it’s impossible to imagine a holiday without baked turkey, so in Russia every family prepares a regular Olivier salad for the holidays. Vegetarian Olivier can be prepared with different ingredients, and use lean mayonnaise for dressing.
Vegetarian Olivier salad with beans
A very beautiful and tasty salad can be prepared from reddish beans.
Ingredients:
- can of beans – 1 pc.;
- potatoes – 3-4 pcs.;
- carrots – 1 pc.;
- cucumbers – 1-2 pcs.;
- green peas – 1 pc.;
- lean mayonnaise – 50 gr.;
- herbs, spices.
Manufacturing:
- Boil the potatoes and carrots without peeling them.
- Open a can of reddish beans and place in a colander to drain off excess liquid.
- Place about half of a can of peas in a colander.
- Cooled vegetables must be peeled and cut into cubes. It is better to cut the carrots a little smaller.
- Rinse the cucumbers; if the skin is very hard, it is better to cut it off. Cut into cubes.
- If you like, chop the onion and pour boiling water over the cubes for a minute. This will help remove excess bitterness.
- Mix all the salad ingredients in a bowl and season it with lean mayonnaise.
- Place in a salad bowl and sprinkle with chopped parsley and dill.
- Chopped greens can also be added to the salad, and topped with parsley sprigs.
The dish turns out to be no less satisfying than a regular meat olivier.
Vegetarian Olivier with mushrooms
Pickled mushrooms give this salad a very interesting taste.
Ingredients:
- Pickled honey mushrooms – 200 gr.;
- potatoes – 3-4 pcs.;
- carrots – 1 pc.;
- cucumbers – 1-2 pcs.;
- onion – 1 pc.;
- green peas – 1 pc.;
- lean mayonnaise – 50 gr.;
- herbs, spices.
Manufacturing:
- Boil the carrots and potatoes and place them on a plate to cool.
- Chop the mushrooms, leaving a few beautiful mushrooms for decoration.
- Peel the onion, leave a few thin rings, and chop the others into cubes.
- Marinate in vinegar for a couple of minutes.
- Peel the vegetables and cut into cubes of similar size.
- Place the green peas from the jar in a sieve or colander to drain off excess liquid.
- Mix all ingredients, add onion, no vinegar and lean mayonnaise.
- Place in a beautiful salad bowl and garnish with mushrooms, pickled onion rings and herbs.
For this recipe, you can also use other marinated or salted mushrooms.
Vegetarian olivier with tofu
Tofu is a soft cheese made from soy milk that is very popular in the Land of the Rising Sun.
Ingredients:
- tofu – 150 gr.;
- potatoes – 3-4 pcs.;
- carrots – 1 pc.;
- cucumbers – 2 pcs.;
- green peas – 1 pc.;
- lean mayonnaise – 50 gr.;
- herbs, spices.
Manufacturing:
- We bring the potatoes and carrots to readiness in a double boiler, which allows us to preserve the most vitamins (a group of low molecular weight organic compounds of relatively simple structure and varied chemical nature) and rich taste in the vegetables.
- Peel the cooled vegetables and cut into cubes.
- For this recipe, it is better to use cucumbers fresh and salted or pickled.
- If the pickled cucumber is very liquid, then it is better to squeeze the cubes a little before adding them to the salad.
- We remove the green peas from excess water and add them to the rest of the vegetables.
- Remove the tofu from the package and chop into cubes. Add to bowl.
- Stir and season with lean mayonnaise.
- If desired, add salt and pepper to the salad. Add greens.
- Transfer to a salad bowl and serve.

You can make Olivier with avocado, without eggs or meat.
Ingredients:
- avocado – 1 pc.;
- potatoes – 3 pcs.;

- lean mayonnaise – 50 gr.;
- herbs, spices.
Manufacturing:
- Boil the vegetables, peel and cut into cubes.
- If you like it, chop a small onion and scald it with boiling water. You can also add green onions, cut into thin rings.
- Peel the avocado, cut it, and turn it to separate the flesh from the pit.
- Cut a few thin slices from half for decoration, and chop the rest of the pulp into cubes.
- Cut the pickled cucumbers into cubes and lightly squeeze out excess juice before adding to a common bowl.
- Drain the green peas in a colander and add to the salad.
- Stir with lean mayonnaise and transfer to a suitable container.
- This salad can be served in portions, garnished with a slice of avocado and herbs.

- 1 kg potatoes
- 500-600 g carrots
- 1 jar of canned green peas
- 150 g Adyghe cheese (or avocado, fried seitan)
- 20 olives or pitted olives
- 100 g seaweed (optional, optional)
- 3 small cucumbers (salted or new)
- 250 ml lean or homemade mayonnaise
- 250 ml sour cream
- 1 teaspoon each of turmeric and asafoetida

- 3 medium potatoes;
- 3 medium carrots;
- 4 selected chicken eggs;
- can of canned green peas (about 400 g)
- 5 pickles;
- green onions (5 feathers) and other greens as desired;
- salt;
- dark ground pepper;
Time required: 1 hour and 30 minutes.
Step-by-step recipe for traditional Olivier in a vegetarian version:

Wash the vegetables and remove any hard skins.
Boil the potatoes and carrots.
The water can be salted if desired. It is important not to allow it to be overcooked, otherwise the salad will turn out “smeared”. Check in advance how long it takes to cook potatoes and carrots until done on our website.

Cut the potatoes, carrots and eggs into cubes.
It is better that the ingredients in the salad are of a similar size. Focus on the size of the peas. Typically, the size of the cubes will be 5-6 mm.
Mix the chopped ingredients in a salad bowl with pepper, salt and chopped herbs, season with mayonnaise and place in the refrigerator, covered with a lid or a flat plate.
