- Mix the drink, soda, sugar, salt and eggs with a whisk. Add flour and cocoa evenly. The dough is thick, like pancakes.
- Boil the milk. Stirring the dough constantly, pour in the boiled milk.
- Our dough became the most liquid, the mixture was slightly thicker than ordinary pancake dough with milk. Add vegetable oil.
- That's it, the preparation of future pancakes is ready. The dough must stand for 30 minutes.
- Bake in a frying pan, perfectly heated and greased with vegetable oil. Before baking your new pancake, go over the pan with a silicone brush dipped in vegetable oil.

These were such delicious, soft, fragrant pancakes, and every single one of them was successful – from the first to the last! The main thing is to follow all the instructions and everything will certainly work out. In almost an hour you will have a stack of pancakes that you can serve for breakfast or make a delicious chocolate pancake cake with them. The drink must be warm, I heated it to 45 degrees. Yield: 15 pancakes with a diameter of 16 cm.
Pancake ingredients:
- Drink (40-45°C) – 250 ml
- Testicle (C0) – 1 pc.
- Sugar – 25 g
- Salt – 1 pinch
- Flour – 135 g
- Cocoa powder (I have alkalized) – 15 g
- Soda – 0.5 tsp.
- Vegetable oil – 1.5 tbsp. l.
- Milk – 135 ml
For the ganache:
- Dark chocolate – 100 g
- Butter – 50 g
Or:
- Dark chocolate – 70 g
- Heavy cream from 25% – 70 g
Making pancakes:
- Break the egg into a deep bowl, add a pinch of salt and stir with a whisk until smooth. Add sugar and pour in the warm drink. Mix well until smooth.
- Add soda and cocoa powder to the flour and mix.
- Sift the dry ingredients into the previously prepared mixture and mix thoroughly. A homogeneous dough without lumps comes out.
- Bring the milk to a boil. If you have fatty milk, then dilute it with water 1:1.
- Stirring the dough constantly, pour in the boiled milk.
- At the very end, add vegetable oil and stir it so that it is not visible on the surface. The dough for future pancakes is ready. The mixture is slightly thicker than ordinary pancake batter with milk.
- Now we definitely let the dough stand on the table for 20-30 minutes.
- Heat the frying pan thoroughly and grease it with a silicone brush dipped in vegetable oil.
- Pour out the first portion of the dough and, carefully lifting it, turn it in different directions, allowing the dough to spill.
- When there is no raw dough left on the surface of the pancake, you can roll it. It takes about 30 seconds to fry each side.
- When the second side is baked, transfer the pancake to the prepared plate. So fry all the pancakes and stack them.
- If necessary, before baking each new pancake, you can grease the pan with a small amount of vegetable oil.

I found out several new aspects and methods, I have already tried them and I want to share with you my recipe for pancakes with kefir with boiling water, some features and subtleties - the key to successful savory pancakes. I will outline the entire manufacturing process carefully step by step, I also have the latest recipes for you - chocolate kefir pancakes and striped pancakes.
How to cook delicious thin pancakes with kefir
I like to make pancakes with kefir and eat them more thinly, like other types of pancakes. These pancakes should be fluffy and thick, in my opinion, and pancakes should be thin and lacy according to their ability.
Previously, I constantly did them on the water. I understand that traditional pancakes are baked with milk, but they have never worked out for me. If you already used milk, then always mix it with water, so the pancakes are better baked and removed from the pan.
But from the time I tried to create pancakes with kefir and boiling water, I fell in love with this pancake recipe. They turn out very tasty. Don’t think that thick pancakes can be made with kefir. My results are quite thin, you just need to know the recipe and some rules.
Let's look at the main rules for making pancakes absolutely successful, whether made with milk, kefir or water.
1. Choosing a frying pan. Not every frying pan makes pancakes. Most often they use a cast iron frying pan or a special one, which is currently sold for baking pancakes.
It is better to use the frying pan only for its intended purpose and not cook anything else with it.
But the metal one didn’t work for me. I bake pancakes in an old duralumin frying pan, so old that it already looks like cast iron, so I don’t clean it on purpose. It's just perfect for pancakes.
2. The 2nd rule says: you need to bake pancakes in a perfectly hot frying pan, not just hot, but actually hot, then even the first pancake will be successful and not lumpy.
3. The pancake dough must be warm, so milk, water or a drink must be heated.
4. Another secret. So that the pancakes simply lag behind the pan and turn over, you can add a couple of tablespoons of butter to the dough. Previously, I used refined sunflower oil, but at the moment I have not bought it for a long time, therefore, at the suggestion of Ira Rybchanskaya, whose advice I read on her delightful blog, I now add ghee. And I want to say that because of it, the pancakes became even tastier, in addition, the color on the back side improved, which was not previously observed.
5. In order for the pancakes to come out thin, the dough must be liquid. Its thickness must be felt; this comes with experience.
Recipe for pancakes on kefir with boiling water
Pancake dough with kefir
To make pancake dough, we will need the following products:
- 1 testicle;
- 1 glass of kefir;
- 1 cup flour;
- 1 cup boiling water (or very hot boiled water);
- 1/3 teaspoon of soda;
- 1/3 teaspoon salt;
- 2 teaspoons sugar;
- 2 tablespoons ghee.
Step 1. First, I take the drink out of the refrigerator and leave it on the table for some time. The drink can be consumed either fresh or not, but the main thing is that it is warm. You can also heat it a little over the fire with continuous stirring.
Step 2. Set the water to boil.
Step 3. Place the frying pan on the fire (see rule number two).
Step 4. I immediately put the butter in the frying pan to melt it, and then pour it into a small bowl.
Step 5. To prepare the dough, pour the drink into a saucepan, add soda, salt, sugar, and egg. Mix everything thoroughly, add melted butter. In principle, it is possible without it, only in this case, before baking any pancake, the frying pan will need to be greased with this very oil, poured almost at the tip of a teaspoon, so that the oil does not float around the frying pan, but only that the frying pan is lubricated with it.
Step 6. Pour flour into the dough. It definitely needs to be sifted so that it is enriched with oxygen.
Knead the dough well with a wooden spatula so that there are no lumps.
Step 7. Now slowly pour half a glass of boiling water into it, constantly stirring the dough. Make sure there are no lumps.
Add more water so that the mass is not thick. One stated glass of water is conditional; more water may be required. The dough for pancakes made with kefir must be runny; only under this condition will the pancakes turn out thin.
