Beat heavy cream with a mixer until thick for 9-13 minutes.

For cream ice cream you need:

  • cream 35-38% fat - 600 ml;
  • eggs - 3 pcs.;
  • sugar - 100 g;
  • vanilla on the tip of a knife.

How to cook:

  1. Separate the yolks from the whites; the outer ones can be used for a whitening mask.
  2. Beat the whites with sugar. It is better to use a finely dispersed product or grind ordinary granulated sugar into powder.
  3. Separate 200 ml from the taken amount of cream and heat to 80 - 85 degrees, add vanilla.
  4. Remove the cream from the heat and pour in the yolks and sugar in a thin stream, without ceasing to stir.
  5. Heat the cream and yolks again to + 85, stirring the mixture without ceasing.
  6. Cool the creamy mixture on the counter to room temperature, and then keep it in the refrigerator for at least 1 hour.
  7. Beat the remaining portion of the cream until fluffy; this is best done with an electronic mixer. The speed of the device is average.
  8. Transfer the mixture from the refrigerator to the whipped cream.
  9. Beat the mixture with a mixer for 2-3 minutes.
  10. Place the future ice cream in a suitable container.
  11. Keep it in the refrigerator for about half an hour. After that, carefully stir the contents from the walls to the middle.
  12. Repeat the operation 2-3 more times after any half hour.
  13. After this, leave the dessert until it hardens.

How to create a chocolate popsicle

A true popsicle must be on a stick and covered with chocolate icing. For a homemade version of this sweet, you can purchase special molds, or you can take small yogurt cups.

For the popsicle you need:

  • milk 4-6% fat - 300 ml;
  • powdered milk - 40 g;
  • sugar - 100 g;
  • cream - 250 ml;
  • vanilla sugar - to taste;
  • corn starch - 20 g;
  • dark chocolate - 180 g;
  • butter - 180 g;
  • molds - 5-6 pcs.;
  • sticks.

Action plan:

  1. Mix milk powder and sugar.
  2. Pour 250 ml of milk into the dry mixture, stir until smooth.
  3. Add starch to the remaining 50 ml of milk and stir.
  4. Heat the milk and sugar until boiling and pour in the mixture with starch while stirring.
  5. Strain the mixture through a sieve. Cover the top of the dish with film and cool first to room temperature, then transfer to the refrigerator for 1 hour.
  6. Whip the chilled cream to soft peaks and pour in the milk and sugar. Beat for another 2 minutes.
  7. Pour the mixture into a container and place it in the freezer.
  8. After 30 minutes, stir the contents. Repeat the function 3 times.
  9. After this, keep the mixture until almost completely hardened.
  10. Fill the molds with ice cream, and to make sure it fits tightly, tap them on the table. Stick in the sticks and freeze completely.

Some time ago, I would never have cooked this dessert at home, thinking that it was some kind of super complicated process. Ingredients:

  • cream (fat content 33%) - 200 ml
  • condensed milk – 200 gr
  • strawberries (fresh or frozen) – 500 g

There are very few ingredients, you see. In principle, even from cream and condensed milk you can make good-tasting ice cream. But with the addition of berries, it comes out even fresher and indescribably delicious. Well, excess vitamins (a group of low-molecular organic compounds of relatively simple structure and varied chemical nature) from berries have never harmed anyone.

You can take any berries: the freshest seasonal or frozen, it will be equally tasty and tasteful!

Manufacturing stages:

1. If you take the freshest berries, you need to wash them thoroughly. I now have the freshest strawberries and they need to be freed from the stalks.

If the berry is large, it is better to cut it into the smallest pieces. In this case, it will be crushed easier and faster. If it’s small, skip this step and just put the berries in a blender container.

2. Grind. I do this with an immersion blender. Add condensed milk to the berry puree immediately and continue whisking. Add milk evenly. It is quite heavy and immediately “sinks to the bottom.” We try to avoid this.

As a result, we need to get a homogeneous berry-milk mixture. Set it aside for now and get on with the cream.

3. It is imperative to take cream that is full fat, at least 33%, and of proven quality. It is they who make this unique and creamy taste beloved since youth.

The cream must be thoroughly cooled before whipping. Whip the chilled cream until it forms a stable, thick mixture.

4. Now we need to combine both consistencies together. Add cream evenly to the berry-milk mixture and mix gently. At this step we don’t need mixers and blenders. We do this with an ordinary spoon and leisurely smooth movements so as not to knock off the creamy foam; there is no need to rush here.

We achieve uniform texture and color. The result is a soft pink mixture with a wonderful taste. You will be able to experience... and even now you can imagine the taste of the sweetness that will come out after freezing. Well, isn't it delicious?

5. The most important step is to freeze the ice cream properly. For freezing, it doesn’t matter what kind of capacious container is suitable, in which it will be comfortable to stir the dessert at the freezing stage.

This needs to be done every hour, at least 3-4 times, in order to avoid the formation of ice crystals inside the dessert. This procedure also allows you to saturate the product with air. Then we are guaranteed tender and airy ice cream!

Transfer the resulting berry-cream mass into the mold. We cover it with a lid or cover it with film so that the ice cream does not absorb foreign odors. Place the form in the freezer.

6. After an hour, take it out and carefully mix it with smooth movements. You can also create this using a mixer. Well, I work with an ordinary spoon. Cover again with a lid or cover with film and put in the freezer for another hour.

We do this at least 3-4 times if we want to get the most tender taste and soft consistency. The first time I made this recipe, I stirred the frozen ice cream only once. As a result, ice crystals were felt. By the way, this did not affect the taste; it even added some “raisins.”

But it turned out that ice cream with crystals is quite difficult to put into beautiful balls in a bowl. Even the fact that the spoon for this dessert was constantly immersed in hot water did not help. Before use, it was necessary to keep the form with the dessert in the refrigerator for some time, which was not entirely comfortable.

Therefore, I recommend mixing it 3-4 times, it will be easier to apply. You don’t have to do this right in an hour, you can do it in 40 minutes, or you can do it in an hour and a half. There are no serious rules here.

After 6-7 hours everything will completely harden. Dessert is ready! You can serve yourself a generous portion and enjoy the luxurious taste of your beloved sweetness!

Excellent taste that will not leave anyone indifferent! I would love to eat this kind of ice cream again and again, but forget about store-bought ice cream. The prepared delicacy cannot be compared in any way with what store shelves are currently littered with. It is worth experiencing and it needs to be experienced, especially if you, Dear Reader, have children.
