Pancakes with meat and rice - how to amuse your family with hearty baked goods

Would you like to cook something very tasty and satisfying to take with you on the road, for your spouse at work, or for your child at school? Then prepare pancakes with meat and rice. They are easy to eat and transport, they don’t crumble like pizza and don’t get soggy from the sauce like shawarma. Stuffed with nutritious interior, pancakes will forever fill you up and energize you. True, you will have to work a little.

In recent articles, we demonstrated step by step how to prepare batter with milk; we also prepared it with kefir and even with water with eggs. In this recipe, I propose to skip this moment, having a ready-made base. Let's focus on the inside, making about 15 pancakes.

Useful tips

  1. The inside is suitable from any kind of meat. It’s especially delicious if you combine the two types. For example, beef with pork or chicken.
  2. Try the filling so that the mixture is juicy and soft. If you like the inside, then the pancakes will be excellent.
  3. If I cook pancakes with minced meat, I add a little sour cream during the frying process. This makes the filling the most tender and sweet.
  4. A little about cooking rice: I cook it in a large amount of water with the addition of salt and 1 teaspoon of sunflower or butter.
  5. Take round-grain steamed rice of the “Pearl” or “Krasnodar” variety. What I like about it is that it always comes out crumbly and never gets soggy.
  6. We served the dish with sour cream, but mustard or horseradish sauce would also go well with it. In a word, a man's snack.
  7. For the inside, you can fry raw minced meat in a frying pan along with onions. But the inside of boiled meat, in my opinion, is easier on the stomach and more tender in taste. Fried minced meat requires an additional amount of fat, which means the calorie content of the dish will increase.

The benefits and harms of the dish

Now let's find out whether pancakes with meat and rice are healthy, apart from the fact that they are filling and nutritious.

Dough

Wheat flour is rich in vitamins (B, E), microelements (sodium, potassium). It has a positive effect on the immune system, the reproductive system, strengthens the gastrointestinal tract (the gastrointestinal tract is the digestive system of the organs of real multicellular animals, designed for processing and extracting nutrients from food) and the heart muscle (Designed to perform various actions: body movements, contraction of the vocal cords , breathing) .

But if you make pancakes from oatmeal, buckwheat or rice flour, the nutritional value will certainly be higher.

Interior

Minced meat with rice provides the body with the necessary proteins, fats and carbohydrates. This means that you will feel more energetic and cheerful. The minced meat contains useful microelements: copper, zinc, iron, sodium, magnesium, calcium, manganese.

Vitamins (a group of low-molecular organic compounds of relatively simple structure and varied chemical nature) of groups B, E, K, which have a beneficial effect on the condition of nails, skin and hair, strengthen cartilage and connective tissue (The structure of tissues of living organisms is studied by the science of histology) .

Contraindications

Nutritionists and doctors do not recommend people with the following traits to indulge in pancakes:

  • personal intolerance;
  • tendency to allergies;
  • excess weight;
  • gastrohepatic diseases (disturbances in normal functioning, performance) ;
  • high cholesterol (an organic compound, a natural fatty, lipophilic alcohol contained in the cell membranes of all living organisms with the exception of nuclear-free ones) .

Other options

  • Traditional with meat

The traditional version of the entrails is unblemished meat, fried as minced meat in a frying pan, or boiled in one piece and twisted in a meat grinder. For those who do not accept rice, this dish will be very appropriate. It can also be served on a festive table.

And this is the most economical option. Try grinding boiled beef or pork liver in a meat grinder, adding sautéed carrots and onions. Delicate pate rolled into soft pancake dough is also a hearty and nutritious dish. The main thing is that the inside should not be dry, but juicy and soft.

  • With liver

Anything is suitable for pancakes: chicken liver, hearts, stomachs, beef lung. All this is called liver. Each type of meat has its own cooking time. Find out what offal is and whether you can eat it in our article.

  • With cheese and herbs

Let's make pancakes with cheese and herbs. I love them with milk, sour cream, tea or coffee. It doesn’t matter what greens are suitable: dill or parsley. The melted cheese inside the dough combines perfectly with the smell of herbs, which can be added directly to the dough or to the filling.

  • With mushrooms

If you knead the dough not with eggs, but with water and create a filling of fried mushrooms, then the dish will be completely suitable for vegetable eaters. The main thing is to cook the mushrooms correctly: oyster mushrooms or champignons. By the way, do you understand how champignons are useful or harmful for the human body?

Conclusion

Now we have prepared mind-bogglingly delicious pancakes with meat and rice. Don't forget to take them with you on the road when you see off your loved ones. Let them remind them of your caring hands and comfortable home.

Pancakes with meat and rice - the most delicious recipe

Ordinary pancakes, which almost all of us love to enjoy, can be eaten with butter, sour cream, honey and jam. You can make cakes and rolls from them. There are even salad recipes where they are added in chopped pieces. They can be stuffed with cottage cheese, eggs, etc. And now I suggest making pancakes with meat and rice.

I am sure that everyone will like this dish. It turns out not only tasty, but also satisfying, because the calorie content of 100 g of the finished product (which is approximately 2-3 pieces) is almost 300 kcal. Having eaten a portion, you can be completely satisfied and work relaxed until the next meal.

It’s not difficult to cook, just first bake the pancakes (I’ll tell you how to bake them a little later), fill them and lightly fry them in a frying pan in a small amount of oil. And you can already serve them on the table.

Milk pancakes stuffed with meat and rice

If you decide to use minced meat as the entrails, the best way to prepare it is to use boiled meat, minced through a meat grinder. It can be anything: pork, beef, chicken.

It is better to use long-grain rice, but if you don’t have it, then you can use short-grain and even crushed rice.

Ingredients for the inside:

  • Minced boiled meat – 250 g,
  • Rice – 0.5 cups,
  • One onion
  • Vegetable oil – 2 tbsp. l.,
  • Vegeta seasoning – 0.5 tsp.

  • Milk – 300 ml,
  • Water - 250 ml,
  • Wheat flour – 300 g,
  • Chicken eggs – 2 pcs.,
  • Vegetable oil – 2 tbsp. l.,
  • Sweet sand – 1 tbsp. l. with a slide,
  • Salt – 0.5 tsp,
  • Ground dark pepper - optional.

Recipe for making pancakes with minced meat

First, let the rice cook. We wash it in several waters, pour it into a pan and fill it with water. For 0.5 cups of cereal we take 1.5–2 liters of water. Salt it and put it on the fire to cook. Cook until the cereal becomes soft. When the rice is cooked, drain the water through a colander.

We grind the meat boiled in advance through a meat grinder. My minced meat was prepared in advance, I took it out of the freezer in the evening and put it in the refrigerator overnight (that is, in the dark) . By morning it had already thawed.

Peel the onion and cut into small pieces. Lightly fry the onion in a frying pan with a small amount of vegetable oil.

Add the ground minced meat to the onion, stir, cover the pan with a lid, reduce the heat slightly and let it simmer slightly.

Meanwhile, the cereal is cooked, drain the water from it and add it to the minced meat in the frying pan. Let’s also add Vegeta seasoning for taste and mix everything well. Taste for salt, adjusting as needed.

To the fried minced meat add boiled rice, from which the water has been drained through a colander.

Mix the contents in the pan well.

The inside is ready, leave it aside for now, at this point you need to bake the pancakes.

To make the dough, pour warm milk and water into a deep bowl or small saucepan, add eggs, salt and sugar. Mix well with a whisk or beat with a mixer.

Add vegetable oil to the water and mix again.

Then add flour in batches, mixing or whisking well each time.

The finished dough should be without lumps, a homogeneous mixture and similar to watery sour cream.

We pour a little dough into the frying pan, and by tilting the frying pan in different directions, we ensure that the dough completely covers the bottom.

Bake the pancake on one side for 2-3 minutes. It will be baked on one side, when all the dough has set, this will be noticeable by the change in color of the dough. Then we turn it over to the other side and bake for another 2-3 minutes.

How to wrap empanadas with meat and rice

I’ll tell you a secret that I found out in one of the TV shows. If you are going to stuff pancakes, it is not necessary to bake it on both sides. Just bake it on one side, and then, after removing it from the pan, transfer it to a cutting board, baked side down, then add the filling and wrap it in an envelope. How to create this, look at the photo.

[message]Why don't you bake the other side? The fact is that in the future we will fry ready-made pancakes in oil, which means they will also undergo heat treatment.[/message]

Place 1-1.5 tbsp on one side. l. entrails (the amount of entrails depends on the size of the pancake - everyone’s pan is different).

We bend one edge, covering the filling.

We bend the left edge, and then the right edge of the pancake.

And we wrap it again, trying to close the side folds.

The most delicious pancakes with meat and rice in a frying pan

Pour a little oil into the pan and place the pancakes with the outermost fold down.

First fry on one side until golden brown, then on the other side.

We put the finished food on a dish, serve it on the table and treat our own household. Bon appetit!

Recipe for “Pancakes with meat and rice”:

In a deep bowl, mix milk, water, eggs, vegetable oil, sugar, salt, soda and flour, beat well so that there are no lumps.
Place the dough in the refrigerator for at least 1 hour. Boil the meat, adding bay leaf, aromatic pepper and dark peppercorns to the water; do not pour out the broth from the meat, we will need it later.
Then grind the meat into a meat grinder, add rice, salt and ground pepper to taste, then add a little meat broth so that the inside is not dry (approximately 50 ml), but you shouldn’t pour too much.

Beat the dough well again, bake thin, tender pancakes, frying until golden brown on one side, frying the other slightly. Grease the finished pancakes lightly with butter on the fried side.

Then fill the pancakes with the inside (approximately 1 tablespoon each) and wrap it in an envelope.

I put the pancakes in a saucepan, store them in the refrigerator, and fry them in vegetable oil until golden brown if necessary.
This way you can prepare pancakes for future use and you will always have breakfast or dinner ready.
Bon appetit!
