Traditional milk sugar recipe
- 1 glass of cow's milk;
- 3.5 cups sugar;
- 1 tbsp. spoon of butter.

Before you start making sweets, be patient, as sugar takes quite a long time to cook.
It will take 25 to 40 minutes, although 35 minutes is usually enough. Choose deep dishes - when heated, the size of goods increases 4-5 times. A saucepan with a volume of 3.5 - 4.0 liters is perfect. It's better to have a small supply. Fill the pan with milk and add sugar. Place the dishes on the fire. Wait for the water to boil. Then reduce the heat and cook the sugar, stirring occasionally with a spoon. Watch closely so that the mixture does not escape. After about half an hour, the color of the sugar will become creamy, and later - brown. After half an hour, start stirring the mixture constantly, as production will soon be completed. When a layer of boiled sugar begins to appear on the surface of the walls, add 1 tablespoon of butter. Continue cooking for about 3 – 5 minutes.
Grease flat plates prepared in advance with butter and add boiled sugar. If you plan to prepare a delicacy with the addition of walnuts, first place the kernels on the surface of the plates. Pour sugar over the nuts. Leave the treat to cool at room temperature. Cut the frozen mass with a knife so that several portions come out. Or just break it with your hands. Homemade milk sugar will be a beautiful addition to tea drinking, as its taste properties are similar to precious factory-made sweets.
How to cook milk sugar with cream
If you need to get a thick consistency that will spread well, it is recommended to use cream during production. The finished consistency can be used to decorate various confectionery products.
- 300 ml cream with fat content from 33%;
- 2.5 cups sugar;
- 1 spoon of bee honey;
- 50 g butter.
Manufacturing:
- First make the sorbet. Fill a deep bowl with cream. Add sweet sand. Place the dishes on a slow fire and start stirring constantly. Bring the sweet liquid to a boil.
- Add a spoonful of honey and continue cooking for about 20 minutes.
- Meanwhile, prepare the molds. Grease the walls with butter to prevent sticking. Fill the molds to the brim with sweet syrup. After hardening, cut the mixture into small cubes with a knife.
If you are going to make sherbet for a cake, leave the mixture until it hardens. To secure the decoration on the surface of the confectionery product, cut out a figure using a mold. Then slightly heat the edges so that they fit tightly to the baking surface.
How to cook milk sugar with sour cream
If you add a little sour cream, the delicacy will turn out unusually fragrant. Its taste will be reminiscent of the confectionery products from your youth. It is often called milk fudge. If necessary, you can slightly change the list of goods at your own discretion. For example, add a little seeds, cocoa, nuts.
- 500 g sweet sand;
- 1 glass of sour cream with the highest fat content;
- 50 g butter;
- 1 tbsp. a spoonful of cocoa (optional).
Manufacturing:
- To make sweets, cookware with a non-stick layer is useful. If you are going to cook sugar without modern innovations according to your “grandmother’s” recipe, an enamel bowl of a suitable size will do.
- Place the container on a slow fire. Pour out all the sweet sand, add sour cream and additional ingredients - if you are going to create a treat with nuts or seeds. Start slowly stirring the contents of the container until it boils. Then reduce the heat and cook the syrup for about half an hour.
- After half an hour, the sweet mixture will have a wonderful caramel color. The thickness will resemble sour cream. Thanks to constant stirring, the formation of hard inclusions will be avoided. It is not recommended to cook the delicacy for a very long time, as it will curdle and become tough.
- Stir the contents of the container well. Add butter (50 g) and wait until it dissolves. Turn off the fire. Pour the finished mixture into molds (do not forget to grease the walls with butter in advance). Place the sweet mixture in a cold space to cool. After a few hours, cut the sorbet with a knife.
Lenten version of boiled sugar in water
If you suddenly run out of milk, try making boiled sugar using drinking water. Naturally, the delicacy will lose its own caramel smell. But it will be a good addition to tea. It will be useful to take two ingredients that can be found in any kitchen:
- 1 glass of water;
- 3 cups sugar.
Manufacturing:
- Fill the bowl with water. Warm slightly over medium heat. Then pour out the sweet sand. It was found that it is better to use a gas stove - the sweet syrup comes out the most homogeneous. It is recommended to use cookware with a non-stick layer to prevent the products from sticking.
- Wait for the sweetened water to boil. Reduce heat to low. Cook for about half an hour. Don’t forget to constantly stir with a spoon.
- The old “grandmother’s” method will help you find the readiness of the sweets. Place a drop of sweet syrup on a plate and observe. If a drop spills over the surface, cook for a couple more minutes. If not, you can fill the molds with syrup. Be sure to grease each mold with butter, otherwise the sugar will stick.

Milk sugar is one of the most common desserts that can be prepared at home with a minimum of ingredients. Almost everyone is familiar with this delicacy from their youth, but not everyone can cook. In our step-by-step recipe, unlike the traditional version of milk sugar, butter is used. Thanks to him, the dessert comes out very tender, almost melting in your mouth. Below we will carefully tell you how to boil sugar in milk at home so that it comes out soft.
Ingredients:
- milk (fat content from 3.2%) – 200 ml;
- sweet sand – 315 g;
- butter – 50 g;
- walnuts or peanuts – 50 g (optional).
How to cook milk sugar
Pour the milk into a saucepan with a thick bottom. The fattier the milk, the softer the dessert will be. You can use homemade milk or mix store-bought milk with cream in random proportions. Add sugar to the pan, adding about a quarter cup of the total amount. The poured sweet sand will be needed later. Place the pan on the stove over low heat and, stirring the sugar and milk with a wooden spatula, begin to boil the mass. During the cooking process, the milk will foam and its size will increase significantly, so it is important to choose a spacious container.
The reserved sugar is needed to give the dessert the richest caramel color. It must be poured into a frying pan or saucepan.
And cook the caramel over moderate heat. There is no need to stir the sugar during the manufacturing process; you can gently rock the pan so that the grains begin to melt faster.
Add caramel to milk-sugar mixture. Stir until the caramel has dissolved.
Boil the milk for another 20-25 minutes, stirring constantly.
Check the readiness of the dessert by dropping a small amount of milk sugar onto a saucer. If the drop does not spill, you can turn off the heat.
Add a piece of butter and mix the mixture well.
Chop the nuts coarsely and dry them in a frying pan. It’s not absolutely necessary to use them in a recipe, but they make the dessert tastier and more exciting.
Mix nuts with milk mixture.
