The recipe for bread pudding is especially important when you have a stale loaf or already hard buns lying around. You can use any unsalted baked goods made from wheat flour as a base for bread pudding. The filling for this ordinary and very tasty homemade casserole can be not only raisins, but also other dried fruits, nuts, and slices of new fruits. The cognac in which we soak the raisins can be replaced with any other strong and certainly fragrant alcohol (rum, brandy, liqueur). If you do not accept alcohol, steam the dried berries with boiling water or add orange juice.

For filling, use milk of any fat content (I use 2.5%), and feel free to reduce the amount of sugar if you don’t like it very sweet (this recipe makes the bread pudding especially sweet). Chicken eggs need to be large enough (50-60 grams each). Substituting margarine or spread for butter (at least 72% fat content) is unacceptable!

Making a dish step by step:

To make homemade bread pudding, we will need the following ingredients: loaf, milk, sweet sand and vanilla sugar, chicken eggs, butter, seedless raisins, cognac.

We wash 100 grams of raisins, put them in a sieve and pour 30 milliliters of cognac. If the dried grapes are soft, they don’t need to swell for a long time, but if they are overdried, let them sit in water.

Next, let's create a fill. To do this, break 3 chicken eggs into a large bowl, add 200 grams (remember that the amount can be safely reduced?) and a tablespoon of vanilla sugar (you can replace it with a pinch of vanillin).

Beat the eggs with sugar using a mixer, a whisk, or just a fork until the sweet crystals dissolve.

Add 500 ml of milk of any fat content.

In the end, pour in 100 grams of melted butter.

Mix everything thoroughly. There is one important, but not critical point here: I took the milk and eggs straight from the refrigerator, so after adding warm melted butter, the filling became uneven. In other words, the butter in the cool environment instantly took on grains when I was whipping everything. This is not important, because during the baking process the butter will still completely melt.

We break the whole loaf (weighing 500 grams) with our hands so that these not very large and not very small slices come out. Alternatively, you can use a knife and cut the loaf into cubes, but I prefer this forming.

Add soaked raisins to the pieces of loaf along with cognac, which should have already been absorbed. Mix with your hands.

Take a baking dish of suitable size and generously grease it with soft butter (30 grams). I have an oval clay mold (30x23 cm) with high sides.

Place pieces of loaf mixed with raisins into the mold.

Moderately pour the mixture with milk-egg-butter mixture so that it gets onto all the slices.

With our hands, without much effort, we press on the pieces of loaf so that they moderately absorb the filling. At this step, the form can be covered with cling film or foil and sent to the refrigerator overnight (that is, in the dark) so that you can serve freshly prepared hot pudding for breakfast in the morning. If you bake right away, you still need to let the workpiece sit on the table for about an hour so that the pieces of the loaf absorb the filling.

After this, put the future bread pudding in a preheated oven and bake at 190 degrees for about 30-40 minutes. I have a gas oven, bottom heat, no convection. The pudding will be ready when it is covered with a delicious golden brown crust.

Serve the bread pudding warm (after the oven, let it sit for 10 minutes and cool), simply spooning it into serving bowls. With a scoop of ice cream and a cup of tea - unearthly pleasure. Cook for your health and bon appetit, friends!

  • Loaf – 120 g (can be replaced with “yesterday’s” buns or leftover Easter cakes);
  • Sugar – 80 g;
  • Milk – 0.5 l;
  • Jam (any kind) – 6 tablespoons;
  • One large chicken egg;
  • Vanilla sugar – 10 g;
  • Three egg yolks.
  • A pinch of salt;
  • Sugar – 130 g;
  • Egg whites – 3 pcs.

  1. Grind the loaf into coarse crumbs using a blender;
  2. Separate three yolks from the whites. Place the last ones in the refrigerator for a while. Mix the yolks with milk, 2 types of sugar and a whole egg. Beat all ingredients lightly;
  3. Pour the acquired consistency over the ground bread and mix well. The result should be a very watery mass;
