Botanical description
The leaves are three times and four times pinnately dissected, ovate in outline; basal and lower stem ones - on long petioles, large; the upper stem leaves are the smallest and least dissected. Basal leaves make up a significant portion of the weight of the entire plant. The rhizomes are thick and branched.
When sown with seeds in the first year of life, carrots form a rosette of leaves, and in the 2nd (from time to time in the 3rd) - flower-bearing trunks 140-160 cm high. In the 5-6th year of life, plants have from 10 to 22 stems , bearing 20-24 inflorescences of each.
The flowers are small, pale yellow. Blooms in June-July; general flowering - in the first and second ten days of July. Fruits in August. The fruits are 4-5 mm long, flat, 2.0-2.5 mm wide.
Ecology
The common carrot is not picky about soil and moisture. It grows well even on saline soils and saline marshes in dry steppe conditions. Plants are resistant to low temperatures and dry winds. Seeds, however, germinate better and produce friendly sprouts in conditions of sufficient soil moisture and at relatively high temperatures. They tolerate spring frosts well, and the rhizomes of adult plants overwinter well in the soil.
Application
To obtain essential oil, carrots are harvested in the flowering phase of plants or in the phase of milky-waxy ripeness of seeds in the central umbel of the inflorescences. When harvesting raw materials in the flowering phase, the plants grow back well after cutting and in the 3rd decade of September they produce the second harvest. With continuous cultivation to great depths, plants are perfectly regenerated from the rhizomes remaining in the soil.
The oil, obtained from the above-ground parts of plants, has a herbaceous-spicy aroma with pine-carrot and floral tones. It is recommended for use in the perfume and cosmetics industry.
The herbal mass of flowering plants and essential oil can be used in the production of canned vegetables and sausages, as well as in other branches of the food industry. In cooking, carrot, beet and potato salads, vegetable and meat soups are flavored with the spice.
