Blackcurrant juice
Morse is one of the oldest drinks in Rus'. In those distant times, it was prepared from wild berries. It was a drink filled with an inimitable forest smell and famous for its medicinal qualities.
Dietstol now gives you 2 methods for making this healthy drink. Using this method, you can prepare blackcurrant juice, both from new and frozen berries.
Recommendation: when making fruit drinks, it is better not to use iron utensils, because vitamin C (a low molecular weight organic compound of relatively simple structure, necessary for all living things) C begins to deteriorate upon contact with the alloy.
What to prepare:
- Fresh or frozen dark currant berries 12 tbsp. l.;
- Sweet sand 9 tbsp. l. ;
- Water 10 glasses.
blackcurrant juice
Making blackcurrant juice:
1. Wash the blackcurrant berries. Place 10 glasses of cool water on heat and bring it to a boil.
2. When the water boils, add 9 level tablespoons of sugar, stir and cover with a lid.
3. When the water boils again, add 10 tablespoons of berries, stir, close the lid and let the water boil at the highest heat. Note: Bring the berries to a boil, but do not boil, so as not to damage the vitamins (a group of low molecular weight organic compounds of relatively simple structure and varied chemical nature) . This especially applies to vitamin C (ascorbic acid), which is more sensitive to heat treatment. This vitamin (a low molecular weight organic compound of relatively simple structure, essential for all living things) is destroyed by boiling.
4. And as soon as the drink boils, turn off the heat, let it brew under the lid for about 30 minutes. Then cool and pour into glasses. Morse is ready to drink.
You can use another method for making blackcurrant juice
We keep the proportions of goods for production the same as in the first recipe.
1. Wash the berries, then mash them with a masher.
2. Pour the purchased juice into a separate container (for example, a glass) and place it in a cool space.
3. Put a saucepan with 10 glasses of water on the fire, add 10 tablespoons of sand and berry cake. Mix everything well, cover with a lid and bring to a boil, but do not boil. Turn off the heat and cool the mixture.
4. When the fruit drink has cooled, filter it through cheesecloth, and add the squeezed and already cooled juice from the berries to the purchased solution, mix everything well again. Now our fruit drink is one hundred percent ready for consumption. You can use similar manufacturing methods to make fruit drink from reddish currants.

Step-by-step recipe with photos
You can prepare a fruit drink from frozen black currants at any time of the year, if you have such berries in the freezer. I try to stock up on currants during the harvest season, so that at any opportune moment I can prepare a tasty and fragrant fruit drink for my family. At the same time, the fruit drink will contain vitamin C (a low-molecular organic compound of relatively simple structure, necessary for all living things) C, even in small quantities, which means that winter colds and acute respiratory viral infections actually do not threaten my family.
It also amuses me that when preparing drinks or dishes from black currants, you don’t have to add citric acid or lemon juice, because the berry itself is sour. Therefore, only sweet sand or honey to neutralize its sour taste.
Making fruit drinks is a pleasure, especially in the morning - I prefer them to morning tea or coffee.
So, let's prepare the necessary ingredients and start cooking!
The currants can be left unfrozen or defrosted for 20 minutes at room temperature. Pour it into a saucepan or saucepan.
If you washed the currants before freezing, you can skip this step. If not, then be sure to wash the berries and remove the branches.
Add sweet sand. This ingredient can be added at any step in the preparation of fruit juice: first or at the end. You can replace it with honey, but honey is added to the liquid at a temperature of no more than 35 C.
Remember the contents of the container with a boiled potato press so that the berries burst. Stir everything.
Fill with hot water and place on the stove.
Bring to a boil, but do not boil! Remove the pan with fruit juice from the stove as soon as the liquid in it starts to boil.
Strain the juice from the cake and seeds through a strainer. You can replace the strainer with a double layer of gauze lined in a colander.
Pour into a jug or immediately pour into glasses. Frozen blackcurrant juice can be served either hot or chilled.
