Everyone loves homemade baked goods, and I don’t understand a single person who would be quiet and indifferent to pies, pizzas and, of course, various pies with different insides.

But what is the most important thing in baking, and specifically in pies? Right! Dough. And in this article we will talk about yeast dough, which, unfortunately, not everyone succeeds in making.

Every experienced housewife has her own secret, and maybe more than one, of making dough for pies with yeast. I also have my favorite recipes for kneading dough, which I will gladly share with you.

For successful baking, we first need a little free time and the desire to amuse everyone in the household with delicious, tender pies, the indescribable smell of which will fill your home, creating a cozy, homely atmosphere.

Now I will tell you about the main recipes for yeast dough, which turns out very soft and flexible, and the baked goods are tasty and airy.

The interior for the pies can be of any kind, depending on your taste preferences: both sweet (with jam, with berries, etc.), and savory (with potatoes, cabbage, etc.), the main thing is that The dough is universal, suitable for any kind of baking.

Very tasty yeast dough for milk pies, like fluff

This recipe for butter dough with dry yeast and milk is certainly one of the main ones, and deserves to be in your personal cookbook. The dough comes out very soft, it does not stick to your hands, and it is very pleasant to work with.

  • milk – 300 ml;
  • flour – 400 g;
  • dry yeast – 11 g;
  • testicle – 1 piece;
  • butter – 30 g;
  • vegetable oil – 20 ml;
  • salt – 1 teaspoon;
  • sugar – 1 tbsp.
  1. Lightly heat 150 ml of milk in a microwave oven or on the stove.

The main thing is that the milk is not too hot.

  1. Mix 3 tablespoons of flour with yeast and salt.
  2. Pour warm milk over the mixed dry ingredients and mix everything thoroughly with a fork. Cover the container with a plastic bag or cling film and a towel. Place the dough in a warm space for 30 minutes.
  3. After half an hour, pour the mixture into the remaining flour.
  4. We also pour in the rest of the milk, after heating it earlier, melted butter and vegetable oil.
  5. Break the egg and start stirring everything with a fork or spoon.
  6. When the dough becomes difficult to stir with a fork, start kneading with your hands. Knead thoroughly for about 10 minutes.
  7. Cover the finished dough with cellophane and a towel and put it in a warm space for an hour and a half.

During this period of time, the dough should double in volume.

  1. After this time, we take it out, knead it and again set it to rest, covering it with a towel.
  2. Our fluffy, tender pie dough is ready!

How to prepare yeast dough with kefir quickly and deliciously?

Like any other yeast dough, this can be kneaded with dry or {live} yeast. The main thing is that the yeast is fresh, then it will rise perfectly, be soft and shaggy.

  • drink – 1 glass;
  • live (wet) yeast - 20 g (or 2 teaspoons of dry);
  • flour - 4 cups;
  • sunflower oil – 0.5 cups;
  • sugar – 2 tablespoons;
  • salt – 0.5 tsp.

  1. Mix the drink in a bowl with sunflower oil and heat the resulting mixture in the microwave until it is warm.
  2. Add sugar and salt to the kefir mixture and mix everything.
  3. Crumble live yeast into the same bowl (or pour dry yeast) and mix thoroughly.
  4. Now it’s the turn of the flour, which is better to sift ahead of time. Mix first with a fork, then with your hands. Knead vigorously so that the dough is homogeneous.

The dough should not stick to your hands, so you can add a little more flour as needed.

  1. Grease a bowl with vegetable oil and place our dough into it. Cover with cling film and place in a warm space to proof for an hour.
  2. In an hour everything is ready, you can start making the most delicious pies!

Lenten dough for pies with dry yeast and water without eggs

This is an all-purpose yeast dough recipe, perfectly suitable for pies, pies and other baked goods. As a result, we get the most delicious dough, kneaded with water, which is excellent in those cases when there is no milk or kefir at home.

  • flour – 800 g;
  • water – 0.5 l;
  • dry yeast – 11 g;
  • vegetable oil – 5 tablespoons;
  • sugar – 3 tablespoons;
  • salt – 1 teaspoon.

  1. Pour the yeast into a bowl, fill it with warm water, add salt, sugar and sunflower oil, mix everything and set aside for 20 minutes.
  1. At the end of the day, our dough should look like this.
  2. We begin to introduce flour into the dough in parts and knead the dough with our hands.
  3. After kneading, remove the dough into the bowl, covering it with a clean towel. Let it sit for one hour.
  4. In an hour we can start making homemade pies.

Frisky, savory pie dough with sour milk

If you, like me, often have sour milk, then this recipe is literally for you! And you won’t have to throw away the milk, and you’ll spoil your family with pies!

  • sour milk – 0.5 l;
  • fresh yeast – 30 g;
  • flour – 1 kg;
  • eggs – 2 pcs;
  • vegetable oil – 5 tablespoons;
  • sugar – 5 tablespoons;
  • salt – 1 teaspoon;
  • 1 teaspoon of baking soda, slaked with vinegar.

  1. Crumble the yeast and add a small amount of warm water and stir.
  2. Pour the yeast into a bowl with sour milk, add sugar, salt and break the eggs, mix everything thoroughly.
  3. Then add soda slaked with vinegar into the milk mixture.

Soda is added so that the dough does not turn out sour due to milk.

  1. Add vegetable oil and some flour here, knead the dough with a whisk or fork. The mixture should resemble pancake batter. Remove for 30 minutes.
  2. After this time, the dough should have doubled in volume. Now you can add the remaining flour into it.
  3. Knead with your hands, then cover with a towel and put in a warm space for an hour and a half.
  4. Let's start making the most delicious pies!

Ingredients:
4 cups.
flour, 2 tbsp.
sugar, ½ tsp.
salt, 2 tbsp.
vegetable oil, 500 ml milk,

Preparation:
Mix all ingredients, place in a plastic bag and refrigerate for 2 hours.
In general, that's all. After the allotted time, the dough must be removed from the refrigerator, lightly kneaded and cut into pies with any inside. Bake as usual. The following recipe allows you to get a particularly soft dough. It's all about the potato broth.

Yeast dough with potato broth

Ingredients:
1 cup.
potato broth, 1 packet of dry yeast,
1 tbsp.
sugar, 1 tbsp.
mayonnaise, 3 tbsp.
vegetable oil, 400-450 g flour.

Production:
You will have to tinker with this dough a little longer, but the result is worth it! The pies turn out fluffy and soft and remain so the next day. There is no need to add salt to the dough, because the broth is already salty. Dissolve sugar and yeast in 100 ml of warm potato broth, stir and leave for 15 minutes until the dough bubbles. Add the other ingredients, stir in the flour evenly and knead into a dough. Roll the dough into a ball, cover with a bowl and leave to rise for an hour. Divide the dough into pieces, make pies and fry them in well-heated vegetable oil over medium heat.

Place the finished pies on paper towels to absorb excess oil.

Yeast dough with kefir

Ingredients:
200 ml kefir,
100 ml vegetable oil,
1 tbsp.
sugar, 1 tsp.
salt, 1 packet of dry yeast,
1.5 cups. flour.

Production:
Dissolve the yeast in warm water and let it stand in a warm place so that the yeast “awakens”. Add all ingredients except flour and stir. Add flour evenly, knead the dough, let it rise for an hour and start making pies.

The pies should be baked in the oven at medium heat so that the dough does not become dry. If such an embarrassment does occur, place all the pies in a pan and cover with a damp towel. And the burnt bottom can be wiped off with a grater.

Yeast-free dough for pies

Ingredients:
500 g flour,
200 g butter,
100 ml milk (kefir, fermented baked milk),
1 tbsp.
sugar, ½ tsp. salt.

Production:
Sift the flour, pour it onto the table in a heap, make a depression and pour liquid into it. Add salt and sugar and knead the dough. Place in the refrigerator for 20 minutes. Pies made from this type of dough can be baked or fried.

The inside of pies made from fried dough must be half-cooked or one hundred percent ready, because such pies bake very quickly.

Sour cream dough for pies

Ingredients:
400 ml sour cream,
800 g flour,
3 eggs,
1/3 cup.
water, 1 packet of dry yeast,
3 tbsp.
sugar, a pinch of salt.

Preparation:
Mix water with yeast and leave to rise for about 15 minutes. Beat eggs with sugar and mix with sour cream. Combine the dough and sour cream mixture, add flour evenly and knead into a soft dough. Leave the dough in a warm place for an hour until it rises perfectly.

Before putting the pies in the oven, let them sit on a baking sheet on the counter for a couple of minutes. Let them come. Then put the baking sheet in the oven, and when the pies are almost ready, brush their surface with the egg scrambled with milk.

Sour cream dough without yeast

Ingredients:
1 cup.
sour cream, 2 cups.
flour, 100 ml milk,
50 g melted margarine,
2 tbsp.
with a heap of sugar, 1 tsp.
salt, 1 tsp.
soda, 1 egg.

Preparation:
Dissolve salt and sugar in warm milk. Mix sour cream with eggs, melted margarine, then pour in milk. Mix flour with soda and add evenly to sour cream mixture. After kneading the dough, immediately begin making pies.

Kefir dough in 5 minutes

Ingredients:
200 ml kefir,
2 eggs,
1 cup.
flour, 1 tsp.
soda, ½ tsp. salt.

Production:
Mix flour with soda and salt. Combine the drink with the eggs. Mix dry and watery ingredients and knead into a dough. There is no fat at all in this type of dough. The inside of pies made from this dough does not have to be very moist.

Pie dough with mayonnaise

Ingredients:
150 ml mayonnaise,
1 tbsp.
sugar, ½ tsp.
salt, 25 g of new compressed yeast,
1 cup.
water, 3.5-4 cups. flour.

Production:
Dissolve yeast in warm water, add salt, sugar and mayonnaise. Add flour evenly and knead into elastic dough. Leave it to rise for an hour and a half, knead it down and start making pies with at least some inside.

And for real virtuosos, we have prepared a wonderful recipe for choux yeast dough. Pies made from this dough are guaranteed to be fluffy.

Choux yeast dough for pies

Ingredients:
For the custard part:
3 tbsp.
flour, 3 tbsp.
vegetable oil, 1 tbsp.
sugar, 1 tsp.
salt, 1 cup.
boiling water. For the yeast part:
500 g flour,
1 cup.
warm water, 50 g new yeast.

Production:
Combine flour, vegetable oil, sugar and salt from the first list of goods, stir well and brew with a glass of boiling water, without ceasing to stir. You can use a mixer. When the dough has cooled to the temperature of fresh milk, add water and yeast to the mixture and knead the dough evenly, adding flour evenly. Immediately cut the dough into pies, let them rise and fry in hot vegetable oil.
