  • Chicken egg – 1 pc.

Manufacturing process:

  1. Wash the rice and cook until half cooked in salted water.
  2. You can either take ready-made minced meat or create it yourself. For this recipe, moderately fatty minced meat (pork + beef or pork + chicken) is ideal; rice perfectly absorbs excess fat.
  3. Wash the onion, peel and chop finely. Divide into 2 parts.
  4. Peel the garlic, chop finely.
  5. In a bowl, mix minced meat, boiled and cooled rice, egg, half of the chopped onion and garlic, salt and pepper. The minced meat must be thoroughly mixed and beaten into the bottom of the bowl.
  6. Let the minced meat sit for 20-30 minutes.
  7. Make small meatballs. To prevent the minced meat from sticking, make the meatballs with wet hands.
  8. Fry the meatballs in a frying pan until lightly browned over medium heat (no need to bread).
  9. Saute the second part of the chopped onion in the resulting fat, add sour cream and a little chopped garlic, mix everything. You will get sour cream sauce.
  10. Place all the meatballs in the sauce and simmer for 15-20 minutes until fully cooked, covered over low heat.
  11. Eat the dish hot with any side dish, for example, vegetable salad, buckwheat porridge or mashed potatoes.

Swedish meatballs

Small meat balls Köttbullar (shöttbullar) is a national Swedish dish. Instead of rice, they add breadcrumbs or crumbs left over from stale bread. For contrast, let's also prepare small Swedish Köttbullar, especially since this is a very common dish. They are served with mashed potatoes and sweet lingonberry jam.

Ingredients:

  • Minced pork + beef – 0.5 kg.
  • Flour – 5-6 tbsp.
  • Chicken egg – 1 pc.
  • Milk – 1 tbsp.
  • Rusks or bread crumbs - 2/3 tbsp.
  • Onions – 1-2 pcs.
  • Salt - to taste.
  • Ground dark pepper - to taste.
  • Spices for minced meat - to taste.
  • Vegetable oil - as much as you need.

Manufacturing process:

  1. Pour a glass of milk over breadcrumbs or bread crumbs.
  2. Finely chop the peeled onion and sauté in vegetable oil until transparent.
  3. Add onion to minced meat.
  4. Add well-soaked crackers to the minced meat along with milk.
  5. Add the egg, salt, pepper and any desired spices to the minced meat and mix well. If the minced meat seems too dense for you, add a little milk and knead.
  6. Let the minced meat sit for half an hour so that the bread crumbs are thoroughly scattered.
  7. Form small meatballs with wet hands.
  8. Fry the meatballs in vegetable oil until half cooked. Do not skimp on the oil - the meatballs should be perfectly fried.
  9. When you have fried all the meatballs, add a little boiling water to the pan and simmer them covered for 10 minutes over low heat.
  10. Ready-made Swedish meatballs can be eaten simply fried, or you can stew them in a creamy sauce, adding garlic if desired.

Meatballs in tomato-sour cream sauce with wild mushrooms

Mushrooms are a beautiful addition to homemade meatballs. We invite you to prepare juicy and fragrant meatballs with mushrooms and cheese. We will bake them in the oven in a tomato and sour cream sauce.

Ingredients:

  • Minced pork + beef – 0.5 kg.
  • Mushrooms – 300 gr.
  • Rice – 2/3 tbsp.
  • Garlic – 3-4 cloves.
  • Chicken egg – 1 pc.
  • Hard cheese – 100 gr.
  • Onions – 1-2 pcs.
  • Salt - to taste.
  • Ground dark pepper - to taste.
  • Spices for minced meat - to taste.
  • Dill - a bunch.
  • Vegetable oil - as much as you need.
  • Water – 2/3 tbsp.
  • Sugar – 1 tsp.
  • Sour cream – 5 tbsp.
  • Tomato sauce – 0.5 tbsp.
  • Flour – 3 tbsp.
  • Salt - to taste.

Manufacturing process:

  1. Cook the rice in advance until half cooked and let it cool.
  2. Chop the cooked wild mushrooms (or fried champignons) very finely with a knife or grind in a blender.
  3. Grind the onion and garlic together with the mushrooms in a blender or finely chop.
  4. Salt the minced meat, season to your taste, knead and beat on the bottom of the bowl.
  5. Finely grate the cheese.
  6. Finely chop the fresh dill (you can also use dried dill).
  7. Add rice, egg, mushrooms and onions with garlic and dill to the minced meat, knead, add salt if necessary.
  8. Form small round meatballs with wet hands.
  9. The form in which we will prepare the meatballs is well coated with vegetable oil.
  10. Place the meatballs.
  11. Stir sour cream with water and flour until the mixture is even, add tomato sauce (paste) and salt until desired taste. Pour sauce over meatballs.
  12. Cover the pan with meatballs with foil.
  13. Bake under foil in the oven for 40 minutes (180-200 degrees). Remove the foil and bake the meatballs until done without it for another 10-15 minutes.
  14. Serve hot.
